    Ha Giang 的乌鸡

    在这里,“Ga den”(乌鸡)可不是什么忽悠游客的噱头——它是当地的主食,味道与你所熟知的家禽截然不同。它的肉质呈深色,略带野味,比普通鸡肉更紧实。经过数小时的慢火熬煮,正宗的 Ga den 炖汤会变得浓郁且带有药膳的香气。Ha Giang 位于极北地带,海拔超过1000米;凉爽的气候和当地的饲养方式孕育出了这种在其他地方(哪怕是附近的北方城市如 Hanoi 或 Sapa)难以复制的鸡种。

    这种黑羽、黑骨、黑肉的品种在 Ha Giang (하장 / 河江 / ハーザン) 的村庄里已经繁育了数代。在 Dong Van 和 Meo Vac 地区的院子里,你经常能看到它们在刨土觅食。大多数乌鸡都是散养的,以昆虫和高山灌木为食。这就是为什么它的味道如此醇厚。

    Ga Den Thanh Huong(2号公路,Dong Van 方向)

    这家店里摆着塑料凳,亮着荧光灯管,墙壁被几十年的蒸汽熏得斑驳。但这正是它的魅力所在。当地人来这里是为了解酒、为公路旅行补充能量,或者在下班后饱餐一顿。

    Com Ga Den Tung(Ngo Sy Lien 街,市中心)

    座位舒适度有所提升,但地道风味丝毫不减。Com Ga Den Tung 供应乌鸡盖饭——这是一种比整锅炖汤更清淡的吃法。一盘的价格是 35,000–45,000 VND。这里的鸡肉和路边摊来自同一批供应商,但分量是固定并装盘供应的。

    如果你是一个人或者只有两个人一起吃饭,这里是个不错的选择。每天上午 10 点至晚上 8 点营业。如果你想尝尝鲜又不想点一整锅,他们还提供“半只鸡”的选项。

    Ga Den Chinh Hang(Hoang Van Thu 街)

    规模较小的家庭经营餐馆。只有五张桌子,充满家常气息。老板娘在餐厅后面的鸡舍里自己养了一些鸡。这里的锅比较小(适合 2 人,200,000 VND),她会根据你的要求做成清淡或香辣口味。

    营业时间为上午 11 点至晚上 8 点,周一休息。去这家店需要打车或当地人指路——它不在主街上。但如果你解决了交通问题,绝对物超所值。

    Ga Den Tuan(Dara 区,城外)

    位于 Ha Giang 中心以南约 8 km 处,往 Dara 方向。规模较大——有 20 多张桌子和正规厨房——但仍是家庭经营。周末时,旅行团和当地人都会来这里。一锅的价格在 280,000–350,000 VND 之间。如果你要求,他们会在你面前烹制:将鸡肉放入砂锅中,加入高汤和香草,慢炖 45 分钟。

    午餐时间为上午 11 点至下午 2 点;晚餐时间为下午 5 点至晚上 9 点。最适合团队就餐。如果你们有 6 人以上,最好提前发短信或打电话预订(可以向酒店询问电话号码)。

    Ga Den Que Huong(市场区)

    位于 Ha Giang 夜市(Cho Dem)内或附近。这是一个摊位,不是餐厅。他们只在早晚时段(早上 6–8 点和晚上 5–7 点)售卖 Ga den。一小碗高汤配鸡丝,只需 30,000 VND。当地人会站着吃或者打包带回家。这是真正的果腹之食——快捷、热乎、便宜。

    是什么让 Ha Giang 的 Ga Den 如此与众不同

    高海拔和气候意味着这里的鸡生长得更慢,肌肉更发达。煮熟后肉质依然紧实。你还会发现 Ha Giang 的厨师使用当地的香草——高地出产的生姜更厚实,辛辣味更足。有些食谱会加入黄芪("huang qi"),这在 Hanoi (하노이 / 河内 / ハノイ) 的做法中并不常见。

    在 Ha Giang 之外的北方城市也能吃到 Ga den,但味道往往感觉被稀释了,或者鸡肉来自低地农场,缺乏真正 Ha Giang 乌鸡那种带有矿物质和微酸底味的独特口感。

    如何点餐

    走进去直接说“Mot chau ga den”(一锅乌鸡炖汤)或“Mot nua chau”(半锅)。如果不确定分量,可以指指其他桌子。大多数地方都会问你是否要加辣,并且会提供辣椒酱或新鲜辣椒供你随时调味。

    如果你是为多人点餐,告诉他们人数,他们会推荐合适的锅底大小。几乎所有地方都只收现金;没有刷卡机。

    最佳就餐时间

    早晨(早上 6–9 点): Ga den 是一种早餐/解酒食物。当地人吃得很早。新鲜度绝对有保证。摊位和小店的翻台率最高。如果想挑到最好的鸡肉、喝到最热的汤,一定要趁早去。

    午餐(上午 11 点–下午 2 点): 中午时分很忙碌,但节奏稳定。你将和当地人以及少数其他游客坐在一起。大多数炖锅在上午 11 点前就已经熬好,因此品质很稳定。

    晚餐(下午 5–8 点): 依然有售,但有些地方到晚上 7 点就会卖光,尤其是路边摊。像 Ga Den Tuan 这样的大餐厅还有存货,但汤底放置一段时间后,味道可能会稍微失去一些鲜活感。

    避免深夜(晚上 9 点以后)去吃,除非你正好赶上夜市摊位的晚间营业时段。

    实用建议

    可以从 Hanoi 乘坐巴士(6–7 小时)或 Sapa (사파 / 沙坝 / サパ)(4 小时)到达 Ha Giang。建议至少停留一整天,这样可以吃上两顿 Ga den,并探索附近的 Dong Van。记得带现金;大多数卖 Ga den 的地方都不接受刷卡。通往 Ha Giang 的山路风景优美但蜿蜒曲折——建议休息好之后再去吃 Ga den,不要一到就立刻去吃。
