    Phu Quoc 的 Ham Bao 故事

    “Ham bao”——外皮蓬松柔软、内馅咸香可口的猪肉蒸包——并不是 Phu Quoc 的招牌。这座岛屿的主打特色是海鲜、胡椒和鱼露。但如果你在这里多待些时日,就会发现当地人早晨会在特定的摊位前排队,手里提着装满这种包子的塑料袋。这是因为 Phu Quoc 的 ham bao 正好处于一种交汇点:越南北方的传统与海岛的实用主义在这里碰撞。它的面皮通常比 Hanoi 的版本更松软透气,而馅料中经常会将猪肉与虾肉或鱿鱼碎混合——这是一种微妙的海岛风味。

    当地人真正常去的地方

    Banh Bao An Phu(市中心,靠近 Dinh Cau 市场)

    这是 Phu Quoc (푸꾸옥 / 富国岛 / フーコック) 镇上最接近“网红”级别的 ham bao 店。这家店距离 Dinh Cau 约 500 米,早上 6:30 营业,周末通常在上午 10 点前就会售罄。老板是一位 60 多岁的女士,做包子已经有 15 年了。这里的包子明显比北方的版本大——直径将近 8 厘米——面皮更厚,带着一丝甜味。馅料是纯猪肉(没有混入虾肉),但肉绞得比较粗,肥瘦相间,口感恰到好处。每个包子价格在 15,000–18,000 VND 左右,买五个一袋是 80,000 VND。这家店没有英文招牌;认准黄色的塑料凳和排队的人群就行了。

    Banh Bao Thanh(Nguyen Hue 街,Phu Quoc 镇中心)

    这家店规模较小,由一位名叫 Thanh 的男子经营。他从 Ho Chi Minh City 的母亲那里学到了这门手艺,并在 8 年前南下搬到了岛上。这里的包子更偏向 Saigon (사이공 / 西贡 / サイゴン) 风格——面皮没那么蓬松,馅料的味道更浓郁,能看到明显的五花肉块。早上 6 点营业,通常在上午 9:30 就卖光了。每个包子 16,000 VND。这家店夹在一个摩托车修理摊和一个彩票摊之间;如果不仔细找,很容易错过。你可以向当地人打听“banh bao Thanh”在哪里,或者留意门口挂着的印有“Bánh Bao”字样的塑料横幅。

    如果你住在中心海滩区附近,又不想费力去寻找,这家店会更容易到达。这是一家正规的店面,有招牌、空调和展示柜。包子的质量很稳定,但稍微有些标准化——比起早市的小推车少了几分个性,但胜在可靠。早上 6 点营业。每个包子 18,000–20,000 VND。他们的 ham bao 比市场上的版本稍甜一些,脂肪也较少,一些游客更喜欢这种口味,但当地人觉得它太“中规中矩”了。

    夜市的 Banh Bao(季节性)

    在 Tet 和夏季,镇中心附近会设立夜市(通常在周五至周日的晚上)。许多摊贩都会卖 ham bao,但质量参差不齐。价格也会虚高到 20,000–25,000 VND。如果你感到好奇,可以去看看;但真正的手艺还是藏在早晨的那些摊位里。

    为什么 Phu Quoc 的 Ham Bao 味道与众不同

    原因有三:首先,这里的面粉来源与北方不同。许多 Phu Quoc 的面点师从 Can Tho 或 Ho Chi Minh City (호치민시 / 胡志明市 / ホーチミン市) 购买预先磨好的面粉,这些面粉的蛋白质含量略有不同,会影响面筋的形成。其次是湿度。Phu Quoc 的热带气候意味着面团发酵更快,有时也更难控制,从而做出了那些更蓬松、更柔软的包子。第三,馅料体现了海岛食材的特色——当然有当地的猪肉,但也更容易获得海鲜干货,一些制作者会将其磨碎并混合在馅料中。

    如何点单及何时前往

    价格范围:每个包子 14,000–20,000 VND,或者五到六个 75,000–80,000 VND。一顿包含两个包子加一杯 Vietnamese coffee 的丰盛早餐,花费大约在 60,000–80,000 VND 左右。

    实用提示

    Ham bao 并不是 Phu Quoc 的旅游景点,所以别指望在网上或 Instagram 上看到什么评价。这也是它味道更好的部分原因——不需要迎合游客的期望。记得带现金;大多数小推车和小店都不接受刷卡。如果你在 11 月至 1 月期间来这里,能吃到最新鲜的包子;而在 4 月至 9 月,一些摊贩会因为天气炎热或处于淡季而歇业。
