    “Thit lon den”(腌猪蹄)在整个越南(베트남 / 越南 / ベトナム)随处可见,但 Ha Giang 却有着自己独特的风味。这里的肉通常在醋和香料中浸泡的时间更长,比南方的版本带有更尖锐、更独特的发酵酸味。它的颜色更深,味道更浓烈,当地人会坚持认为这才是吃它的唯一正确方式。

    Ha Giang 的 thit lon den 有何不同

    Cho Ha Giang(中心市场)的 Thit Lon Den

    最好的入门去处是 Ha Giang 中心市场(Ha Giang Central Market),位于市中心以南约 1 km 处。趁早(上午 6:30–7:30)走进去,找到西侧的那群摊位。一位从 1990 年代就开始经营同一个小推车的老妇人,把 thit lon den 装在塑料袋里卖,每份 70,000 VND。肉质鲜嫩,卤汁酸爽但不刺喉,她还会随手抓一把生洋葱和香菜放进去。这里经常排长队。你甚至看不出那是个“摊位”——只有一个小塑料桌和一个冷藏箱。点单时说“thit lon den nau”(熟猪蹄)并用手指一下就行。

    一定要早去。大多数日子里,她到早上 8 点就卖光了。

    Hang Buom 街的摊贩

    Hang Buom 是一条售卖香料和腌制品的古老街巷,这里有两个非正式的 thit lon den 摊位,大约在早上 6 点出摊,9:30 左右收摊。其中一个摊位由一位 60 多岁的男子经营,他亲自煮肉;与市场里的版本相比,他家的醋味较淡,红辣椒的辛辣味更重。这里的价格是每份 65,000–80,000 VND。这道肉通常搭配糯米饭或烤饼(“banh trang nuong”)一起吃。当地人会在上班路上顺道来这里。环境很简陋——只有塑料凳,没有菜单——但这正是它能保持地道风味的原因。

    怎么吃

    Thit lon den 总是冷吃或在室温下食用。你可以用手或筷子吃,如果带骨头的话,就把肉从骨头上撕下来。肉皮应该是充满胶质且容易咬断的;底下的肉则很嫩。卤汁紧紧包裹着肉块。可以搭配蒸好的糯米饭、新鲜香草(罗勒、香菜、薄荷)一起吃,或者挤一点青柠汁。

    许多当地人把它当早餐吃,配上一杯热茶或“ca phe sua da(연유커피 / 越南冰咖啡 / ベトナムアイスコーヒー)”(越南冰咖啡)。有些人会点一份包含它的冷切和腌肉拼盘——里面还有腌香肠、火腿和白煮蛋。
