    当你第一次在路边摊打开一罐“mam tom”(发酵虾酱)时,你立刻就会明白为什么这道菜如此引人争议。它的味道就像大海出了什么差错。但只要给它三十秒,挤入一点青柠汁,你也会明白为什么河内人对它如此痴迷。

    “Bun dau mam tom”是一套完整的组合:常温米粉(bun)、炸豆腐块(dau)、白切肉片(通常是 cha com 炸猪肉饼或类似 tiet canh 的部位),以及那碟让整道菜升华的紫灰色虾酱。在河内老城区,这是白天的主食,但有几家摊位会一直营业到午夜之后。深夜时分,这道菜别有一番风味:空气更凉爽,游客更少,虾酱的味道在夜色中显得格外浓郁。

    为什么这道菜适合深夜享用

    Bun dau mam tom 不需要热汤,也不用担心酱汁因久置而变味。所有的配料要么本身就是常温的,要么就是现点现炸的。这使得它非常适合深夜模式,因为此时厨房已接近收尾,通常不会有太多花哨的捷径。在河内(Hanoi)营业至晚上10点以后的摊主,大多是经营了几十年的老手——他们在这个点位不会进行任何实验。

    虾酱本身就是一场表演。一份好的虾酱端上来时,已经用少许油调和过,上桌后再加上青柠汁、糖和辣椒片。你需要搅拌它,直到它从粘稠的紫色变成一种近乎蓬松、浅色且香气扑鼻的状态。趁着豆腐刚出锅还带着酥脆感时蘸着吃。那种对比——滚烫、酥脆、油润的豆腐与咸酸虾酱的碰撞——正是这道菜的精髓所在。

    晚上9点后去哪里吃

    Bun Dau Co Lan — Hang Khay 街

    这是市中心最稳定的深夜据点。Co Lan 位于 Hang Khay 街的一间临街铺位,距离还剑湖(Hoan Kiem Lake)约200米,大多数夜晚营业至晚上11:30左右。两人份的全套拼盘——米粉、四块豆腐、白切肉和虾酱——价格约为 80,000–100,000 VND。这里的豆腐切得很厚,外金黄内中空。虾酱是预先调配好的,但上桌前会根据你的要求进行最后调味。没有英文菜单,但你可以直接指着前台展示的食材点餐。

    Quan Bun Dau — Nguyen Sieu, 老城区

    Nguyen Sieu 是一条连接 Hang Buom 的狭窄小巷,这个摊位通常在晚上7点左右摆出折叠桌,一直营业到豆腐卖完为止,通常在晚上10点到11点之间。这里的价格稍便宜一些——每人约 60,000–70,000 VND——分量实诚。他们也提供“long”(猪肠),如果你想彻底体验这道菜的精髓,点这个准没错。这里的虾酱比平均水平更浓烈,虾味更重。

    Ma May 小巷摊位

    沿着 Ma May 街以及连接它与 Hang Buom 的小巷,晚上8点后会出现一排流动的 bun dau 摊位。这些摊位位置不固定——同一个摊主每周可能出现在稍微不同的位置——但品质都很稳定。寻找蓝色的塑料小板凳和那股独特的味道即可。价格在 50,000–65,000 VND 之间。这是最随性、也最具有地道混乱感的选择,根据你的接受程度,这既是推荐也是警告。

    关于虾酱的几句真心话

    Mam tom 并不适合所有人,对此不必感到难为情。那种发酵的“臭味”非常真实且强烈。如果你吃过配有调料的“banh cuon”,或者能毫无压力地接受浓郁的鱼露,那你大概率没问题。如果强烈的发酵气味确实让你倒胃口,那就跳过它吧——因为没有所谓的“清淡版”值得一试。

    此外:不要在开会、约会或任何空气不流通的地方吃 Bun Dau Mam Tom。虾酱的味道会在你的呼吸中停留数小时。深夜时分,反正你也要回家了,这确实是最佳的享用时机。

    还有一件事:这道菜与“bia hoi”(生啤)是绝配——许多摊位或附近都有售卖,按杯计价。每杯 7,000–10,000 VND,绝对是明智之选。

    实用小贴士

    以上三处地点均只收现金。老城区大多数深夜摊位在周日和周一会提早打烊——如果你想在晚上10点后享用,建议选择周四到周六。如果豆腐已经变软,不再是现点现炸,那说明厨房已经准备收工了;请换一家吧。
