    西贡版本与其他地方有何不同

    Bo Ne 在 Saigon 之外也存在——你在 Da Lat、Da Nang,甚至在 Hanoi 的个别地方也能找到它——但随着向北移动,这道菜的特质也发生了变化。

    在 Da Lat,Bo Ne 之所以受欢迎,部分原因是这座高地城市拥有自己独特的法属殖民地饮食文化,以及来自附近农场的牛肉供应。那里的版本通常使用较厚的牛肉,并加入当地黄油,口感更浓郁、更厚重。一些 Da Lat 的餐馆还会额外配上肉松或炸春卷。这很好吃,但比起通勤早餐,它更像是一顿正餐。

    在 Da Nang 和 Hue,Bo Ne 多出现在面向游客的咖啡馆里,很少成为当地人的主食。法棍面包的质量往往会下降——更软、表皮不够酥脆——而且肉酱更多是罐装的。滋滋作响的声音是一样的,但那种由常客组成的氛围、早上 6 点的开门时间、挤满人的盛况:这些在 Saigon 之外都不复存在。

    在 Hanoi,Bo Ne 更多是一种新鲜事物而非传统。北方的早餐体系围绕着“Pho”、“Bun Thang”和“Banh Cuon”——即以米食为主、强调汤底的菜肴。带有黄油和肉酱的铸铁锅与这种逻辑格格不入。如果你刻意寻找,可以在 Hanoi 找到 Bo Ne,但它是外来的,而非根植于此的。

    Saigon 的 Bo Ne 之所以独特,不在于某一种配料,而在于围绕它建立的整个生态系统:专门经营单一菜品的店铺、仅限清晨的营业时间、赶在通勤前匆忙用餐的上班族,以及几十年来在细微变量上的不断打磨。牛肉切得薄是有原因的——它在滚烫的铁板上两分钟内就能熟透。肉酱是为了在肉熟透时抹在面包上吃的。美极鲜酱油是为了中和油腻感。这是一个系统,而不仅仅是一道菜。
