    当河内人想要吃点比 pho 更重口味的食物时,他们会选择一碗 Bun Oc。酸味汤底、河蜗牛、番茄,再加上一勺发酵虾酱——这绝对是那些觉得早餐太“斯文”的人们的周日早晨首选。

    你到底在吃什么?

    这道菜的基础是米粉,搭配清淡的骨汤,酸味来源于番茄,有时还会加入少许醋或罗望子。蛋白质来源是淡水蜗牛——分为 oc nhoi(酿入猪肉碎和莳萝的蜗牛)或 oc luoc(需要你自己用牙签挑出来的白灼蜗牛)。大多数碗里还会配有炸豆腐、一把 rau muong(空心菜)以及放在旁边的各种新鲜香草。

    让游客感到纠结的是“mam tom”——即发酵虾酱。它通常放在旁边的一个小碟子里,呈紫灰色,气味非常浓烈。你不需要把整份都倒进去,只需加入一小勺搅拌到汤里,就能极大地提鲜。如果你完全不加,摊主也不会说什么,但汤底就会少了一份灵魂。

    去哪里吃?

    Hanoi 有几十家 Bun Oc 店,但在老城区(Old Quarter)有几家不仅方便,而且味道非常地道。

    Bun Oc Ba Duc — 34 Hang Chai, Hoan Kiem。早上 6:30 左右开门,10 点前通常就卖光了。路边摆着塑料凳,没有英文菜单。普通碗(bun oc thuong)价格在 35,000–45,000 VND 之间。这里的 oc nhoi 紧实且入味,汤底比大多数店更浓郁。

    Bun Oc Co Lan — 这是一位流动摊主,大部分时间在早上 7 点到 9 点之间出现在 Hang Bac 和 Ta Hien 的路口。没有固定地址,但她在那儿摆摊很久了,当地人都能为你指路。一碗起价 30,000 VND。如果你看到一位女士推着红色的篮子,装着两个大锅,周围围着一圈常客,那就是她了。

    Bun Oc 59 Dinh Tien Hoang — 因为位于还剑湖(Hoan Kiem)畔,游客稍多,但汤底很实在,营业到中午,时间安排更灵活。根据配料不同,价格在 40,000–50,000 VND 左右。

    如何从容点餐

    先找位子坐下。摊主会主动过来,或者与你进行眼神交流。你可以说:

    • "Mot bun oc" — 一碗 Bun Oc (发音:moh bun awk)
    • "Nhieu oc nhoi" — 多加酿蜗牛 (发音:nyew awk nyoy)
    • "Khong mam tom" — 不要虾酱(如果你想避开它)
    • "Them rau" — 多加香草

    如果你想要白灼蜗牛而不是酿蜗牛:"Oc luoc"。如果你想在一碗里两种都吃:"Ca hai"(两者都要)——大多数摊位只需多付几千越南盾即可。

    摊主会把碗放在你面前,旁边放上调料盘。调料盘里通常有 mam tom、新鲜青柠角、辣椒片,有时还有炸葱。先挤入青柠汁,加一小点 mam tom,搅拌,尝尝味道,然后再根据口味调整。

    挑蜗牛的技巧

    对于 oc luoc(白灼),你会得到一根小金属签或牙签。蜗牛壳口有一层薄膜——用签子挑开,然后转动一下,就能把肉完整地挑出来。如果肉断了,直接对着壳吸也是可以的,没人会觉得奇怪。

    对于 oc nhoi(酿蜗牛),猪肉馅被塞进壳里蒸熟。你可以用签子把它顶出来,或者直接咬着壳吃。猪肉里加入的莳萝是河内风味的精髓——这在越南南部并不常见。

    时间与建议

    Bun Oc 是早餐和早午餐食物。大多数好店在上午 10:30 左右就会卖完。如果你 11 点才去吃第一碗,很可能会吃到锅底加热后的残羹。尽量早点去,特别是周末,河内人外出用餐更多。

    还剑区(Hoan Kiem)是美食中心,但如果你住在西湖(West Lake)附近,可以问问民宿老板——Truc Bach 地区有几家 Bun Oc 摊位,当地人更喜欢去那里,因为游客还没怎么发现它们。

    路边摊只收现金。准备 50,000 VND 的零钱足够买一碗面,再配上一杯 tra da(冰茶,通常免费或 5,000 VND)。

    实用小贴士

    如果你已经习惯了 "ca phe sua da" 那种发酵的醇厚感,或者平时能接受鱼露的味道,那么 Bun Oc 对你来说完全没问题。如果你对强烈的鲜味(umami)比较敏感,点餐时说“khong mam tom”,喝汤时少加点虾酱即可。无论如何,请在上午 9 点前去——那时蜗牛最新鲜,汤底也不会因为加水稀释而变淡。
