    这道菜的起源

    Mekong Delta (메콩 델타 / 湄公河三角洲 / メコンデルタ) 每年 7 月至 11 月都会泛滥。当水位上涨时,蛇头鱼——ca loc——就会游出运河,进入稻田。在田间劳作的农民会徒手或用手抄网将它们抓住,然后就地取材进行烹饪:用收割后留下的干稻草。这种烹饪技巧并不精致。你只需把稻草堆起来点燃,将鱼架在火焰上,让猛烈且快速燃烧的高温来完成剩下的工作。稻草火短暂而凶猛——它不会闷烧,而是猛烈地燃烧。这正是关键所在。鱼皮变黑并锁住水分;里面的鱼肉则保持紧实,甚至带着一丝鲜甜。

    这道菜从田间走进了家庭厨房,随后又登上了餐厅的餐桌。但最棒的做法依然保留着最初的味道——简单、带有烟熏香,以及焦皮带来的一丝微苦。

    烹饪技巧:为什么必须用稻草

    稻草燃烧温度高且速度快。木炭提供的是缓慢、稳定的热量。而稻草带来的则是猛烈、短暂的爆发。这种差异至关重要。用木炭烤的 ca loc 味道尚可。但正宗的、用稻草烤制的 ca loc nuong trui 拥有独特的质感:一层薄如纸、焦黑且能干净剥离的鱼皮,以及因为烹饪时间极短而毫不干柴的鱼肉。

    所用的鱼必须是整条的——去内脏,但保留头尾,通常在 600g 到 1kg 之间。太小的鱼熟得太快容易烤老;太大的鱼中心受热不足。熟练的厨师会不断转动竹签并观察火候,在稻草火势过旺时将鱼拉回。这里不需要温度计。这是一种看似简单,却需要大量练习才能掌握的技巧。

    烤好上桌后,人们会刮去焦黑的鱼皮。展现在眼前的是洁白、略带烟熏味的鱼肉,你可以直接用筷子将其夹开。

    如何享用

    这不是一道用叉子吃的菜。Ca loc nuong trui 是一顿“banh trang”大餐——你需要用米纸把所有食材卷起来吃。餐桌上会摆着:盘子里的一整条烤鱼、一盘新鲜香草(紫苏、薄荷、豆芽、香蕉花丝、黄瓜、青香蕉)、圆形的干米纸,以及一碗“nuoc mam”——确切地说,是南部风味的 nuoc mam cham,由鱼露、青柠、糖、大蒜和辣椒调制而成。

    正确的吃法是,将一张干米纸在蒸汽上稍微熏软,或者迅速在水中蘸一下,然后放上一块鱼肉、几片香草叶、一些豆芽,轻轻卷起来。蘸上 nuoc mam。焦皮的微苦、鱼肉的肥美、香草的翠绿清新,再加上蘸酱咸酸交织的冲击力——这一口的味道层次丰富圆满,看似偶然,实则绝妙。

    在三角洲去哪里品尝

    在 Can Tho,沿着 Hai Ba Trung 的河畔地带,有几家餐厅能做出正宗的 ca loc nuong trui。位于 Ninh Kieu 码头以南约 3km 处的 Quan Ut Dzach 在当地颇有名气,因为他们使用的是早市采购的野生鱼,而不是养殖鱼——两者在风味上的差异显而易见。根据鱼的大小和季节,一整条鱼的价格大约在 120,000–180,000 VND 之间。

    在 An Giang 省,特别是在 Chau Doc 周边以及 Sam Mountain 附近的河段,这道菜更为常见——该地区更深入泛滥平原腹地,ca loc 是当地的主食。在 Chau Doc 和 Long Xuyen 之间公路旁的小型家庭餐厅里,大多数晚上的菜单上都会有这道菜。这里的价格更便宜:每条鱼 90,000–130,000 VND。

    寻找那些真正用稻草而不是木炭烤鱼的地方。如果你在坐下之前就能闻到稻草的烟熏味,那你就找对地方了。在 Can Tho (껀터 / 芹苴 / カントー),一些面向游客的餐厅使用木炭,却依然称之为 nuong trui——这完全是两码事,当地人对此心知肚明。
