    Ha Long 的美食声誉通常被简化为“一边看风景一边吃海鲜”,这种说法实在太小看它了。Quang Ninh 省拥有独特的饮食文化,围绕着几种极具地方特色的食材构建而成——其中一些你在越南其他地方根本找不到。懂得点什么菜,是区分普通一餐和顶级美味的关键。

    Cha Muc —— Ha Long 真正出名的招牌菜

    “Cha muc”是 Ha Long 对越南美食最标志性的贡献。这是一种鱿鱼饼——将新鲜鱿鱼捣碎(传统上用手工,现在越来越多地使用机器)成紧实、有弹性的肉饼,然后油炸至外皮酥脆,内部保持鲜嫩多汁。这种口感是切片或烤鱿鱼无法比拟的。

    最好的版本使用当天捕获的鱿鱼。你立刻就能尝出区别:肉质鲜甜而不是咸腥,完全没有陈年海鲜那种氨水的味道。搭配鱼露、青柠、辣椒和大蒜制成的蘸酱,如果喜欢的话还可以用生菜包裹——不过当地人通常直接吃。

    在 Bai Chay 周围的市场摊位和小型餐馆,或者远离度假区、Ha Long 的老居民区里寻找它。在街头摊位,三到四块钱的份量大约在 30,000–50,000 VND。游客码头附近的餐馆收费更高,而且往往使用冷冻鱿鱼,口感会明显松散。

    点餐时要注意什么

    询问鱿鱼是“tuoi”(新鲜的)还是“dong lanh”(冷冻的)。好的摊位会毫不犹豫地回答。肉饼应该是灰白色到浅象牙色——任何发灰或有刺鼻气味的东西都说明存放时间太长了。

    Sa Sung —— 让初次尝试者困惑的食材

    “Sa sung”是沙虫——一种看起来像粗短蚯蚓的海洋无脊椎动物,生活在 Quang Ninh 的潮间带。干沙虫是越南北部最珍贵的烹饪食材之一,用于熬制汤底,能带来一种难以用其他食材复制的深厚、纯净的鲜味(umami)。

    新鲜的 Sa Sung 用大蒜和少许盐翻炒,作为零食或配菜食用。新鲜时的口感紧实且略带滑腻——并不是每个人都能接受,但如果你不去纠结它到底是什么,而是去感受它的风味,会发现它真的很棒。干沙虫很贵:在 Quang Ninh 的市场上,每 100 克大约需要 500,000–800,000 VND,因为捕捞过程非常耗时,且产季很短。

    你可以在 Ha Long 的 Cai Dam 市场和 Bai Chay 附近的干货特产店买到它。如果你想带一些回家,干沙虫非常易于携带,是制作“pho”或米粥的绝佳汤底。

    海滨的活海鲜池

    Ha Long 的浮动渔村——Cua Van 是游客最多的一个——多年来已经部分搬迁,但它们催生的活海鲜餐馆文化依然存在于 Ha Long 的海滨,以及一些仍在 Tuan Chau 运营的作业船上。在这些地方,你的晚餐在端上桌前的二十分钟前还在水里游。

    皮皮虾(根据你问的对象不同,被称为“bong cong”或“tom tich”)是这里的明星。用香茅和姜蒸熟,它们的鲜甜和紧实感是普通虾类无法比拟的。在朴实的海滨小店,预计每公斤花费 150,000–250,000 VND。

    Quang Ninh 水产养殖筏上的牡蛎也值得一尝。它们比大多数游客心目中的法国品种要小,但海湾水的盐度赋予了它们纯净、鲜明的风味。用葱油和碎花生烤制——这是你随处可见的烹饪方式——非常受欢迎。

    Nem Chua 与腌制零食文化

    并非所有 Quang Ninh 的特产都是活海鲜。“Nem chua”——发酵猪肉卷——在 Ha Long 和附近的 Cam Pha 制作,具有独特的当地特色,比 Thanh Hoa 版本更瘦、口感更尖锐。它们用 dong 叶包裹,成串地在市场摊位和前往 Mong Cai 的巴士上出售。是很好的公路旅行零食。

    如何在不被“宰”的情况下用餐

    Bai Chay 码头周围的旅游区餐馆里,菜单都是塑封的,价格也是为跟团游客量身定制的。有些食物尚可,但没有一个是真正有趣的。

    更好的做法是前往 Ha Long city 的工作市场区域——比如 Cho Ha Long 或 Cai Dam 市场——那里的顾客都是当地人,价格也公道。两人份的午餐,包含 Cha Muc、一盘空心菜和米饭,价格约为 80,000–120,000 VND。加上皮皮虾,人均消费依然不到 200,000 VND。

    如果你正在乘坐游船,船上提供的海鲜餐质量因运营商而异。经济型过夜游船往往供应批量烹制的解冻海鲜。中高端及以上的游船通常强调新鲜捕获,专门为了美食而多花点钱是值得的。

    实用建议

    在 Ha Long 吃新鲜海鲜的最佳时间大约是 4 月到 10 月,此时水温较低,渔获最干净。夏季会出现水母爆发和恶劣天气,这可能会影响供应和质量。Sa Sung 的产季在冬季达到高峰,所以如果干沙虫在你的购物清单上,11 月到次年 2 月是你在 Quang Ninh 市场找到最新鲜货源的时候。
