    什么是Banh Ep?

    Dong Ba市场后方 — 放学后的聚集地

    如果你沿着Dong Ba Market正后方通往河堤的狭窄小巷走,会发现从下午3:30左右开始,有两家相互竞争的banh ep摊位。这里确实是放学后的热门地点——附近中学的学生们成群结队而来,一买就是五六片。这些摊位比较随意,有时甚至轮流使用同一个铁压板。品质每天略有波动,但价格保持在5,000 VND,那种热闹的氛围本身就值得一去。工作日去最能感受地道的市井气息。

    Nguyen Truong To街,靠近教堂一端

    在Nguyen Truong To街较安静的南端,一位小贩每天下午4:00后会将摩托车推到一座天主教堂的矮墙边摆摊。这一摊的时间比较难把握——下雨天或节假日她有时不出摊——但这里的木薯饼比一般的稍厚,中心更有嚼劲。她在压制前会抹上一层薄薄的Maggi调味汁,听起来很奇怪,但味道却出奇地好。价格:每片7,000 VND,她会像老派做法那样用一小块报纸包裹每一片。

    关于寻味之旅的几点诚恳建议

    Banh ep小贩营业时间短是有原因的:如果空气太潮湿,木薯饼会变软并粘在一起;而好的压制需要滚烫的铁板,这意味着需要木炭或强力的燃气火源。下雨通常会让大多数摊位直接收摊。最好的策略是在下午3:30到5:30之间前往,保持灵活,并接受这份清单上的某些摊位在你去的那天可能没开的事实。

    这种小吃非常适合搭配Hue(顺化)的其他午后仪式——在路边摊喝一杯“ca phe sua da”,或者在天黑前穿过Imperial Citadel附近的街道兜一圈。这并非什么高端餐厅体验,但这就是它的精髓所在。
