    北宁距离Hanoi东北约30公里,车程仅需一个上午。这座城市历史悠久,在越南首都建立之前,它就已经在塑造越南的饮食文化了。红河三角洲省份——北宁、兴安、河南、太平——有时被称为越南文明的摇篮,它们的婚宴美食正是这一地位的写照:保守、讲究技艺且极具地方特色。

    三角洲婚宴餐桌背后的逻辑

    越南北部的婚礼绝非儿戏。在北宁及周边三角洲省份,一场正式的“dam cuoi”(婚宴)通常持续多日,涉及双方的大家族,并遵循一套记忆中几乎从未改变的菜肴上菜顺序。这里的食物不仅仅是装饰——它象征着家庭的庄重、对客人的尊重以及与当地传统的联系。

    北宁乡村婚礼的标准餐桌以“gio cha”为核心:这是越南各种冷切肉和香肠的总称,由捣碎的瘦猪肉制成。“Gio lua”——口感细腻,用香蕉叶包裹蒸熟,切成淡色的圆片——是餐桌上的主角。“Cha que”加入了肉桂调味,带来一丝辛辣。“Gio thu”则是类似肉冻的品种,里面塞满了蘑菇和木耳,增加了口感。这些都不是从商店买来的现成食品。在老派的北宁家庭中,gio至今仍是在婚礼前几天在家中亲手制作的,捣肉的节奏声在巷子里清晰可闻。

    这种gio cha传统是典型的北部特色。跨入越南中部,饮食习惯就会发生变化。来到南部,词汇更是完全不同。但在红河三角洲,没有它,婚宴餐桌就不完整。

    Banh Phu The —— 分量最重的甜点

    “Banh phu the”——有时也被拼写为banh xu xe——是北宁最出名并走向全国的特产,它在婚礼上承载着丰富的象征意义。其名称大致可译为“夫妻饼”,且总是成对出现:两份一模一样的翡翠色包裹,绿豆和椰子馅料被封在由木薯淀粉和新鲜柚子汁或斑兰叶汁制成的半透明外皮中。

    这种口感在越南糕点中独树一帜。外皮柔软,几乎呈胶状;馅料浓郁、香甜,带有淡淡的花香。每个饼都放在一个小藤编托盘里,用红绳系着。在北宁婚礼上,送单数或不成对的饼是严重的社交失礼。

    北宁省最好的banh phu the来自Dinh Bang公社——这个村庄制作该糕点已有数代历史,并对其工艺极其重视,以至于其配方被视为当地的知识产权。如果你沿着1A国道经过北宁,Dinh Bang路边的商店以每对约5,000–8,000 VND的价格出售。它们保质期不到一天,这也是它们保持地方特色的原因之一。

    餐桌上的其他菜肴

    除了banh phu the和gio cha,北宁婚宴餐桌通常还包括:

    Xoi gac —— 用木鳖果(一种带刺、色素浓郁的葫芦科果实)染成深红色的糯米饭。红色代表好运,在整个北部三角洲,婚礼上必须要有xoi gac。

    Mien ga —— 土鸡粉丝汤,汤底清澈鲜美。它通常作为热菜之间的过渡菜肴,让客人在更多gio上桌前稍作休息。

    Cha gio —— 北部风味,比南部的同类产品更小、更脆,用猪肉末和木耳包裹在米纸中炸至酥脆。它们冷却得很快,最好在端上桌时立即食用。

    Rau song —— 生菜拼盘。紫苏、越南香菜、切片的香蕉花、豆芽。它是餐桌上的基石,能化解油腻,并从视觉上填满餐桌。

    米酒 —— ruou can 或更常见的ruou de(由糯米制成)—— 会不断地斟满。拒绝饮酒需要讲究外交辞令。

    为什么红河三角洲保留了这些传统

    三角洲省份人口稠密,村庄认同感强,且基于宗族的社会结构在历史上抵御了饮食习俗的变迁。城市化的Hanoi吸收了法国殖民时期的影响、1975年后的南方移民潮以及过去十年的连锁餐厅浪潮。而北宁的乡村婚宴餐桌几乎没有受到这些影响。今天在Dinh Bang举办的dam cuoi上供应的菜肴,五十年前参加过同样活动的人依然会感到熟悉。

    这里也是“quan ho”民歌的中心——北宁闻名全国的呼应式歌唱传统。Quan ho与塑造婚礼本身的社区仪式密不可分。音乐和食物相互强化:两者都正式、古老,且都需要特定的社交场合才能体现其意义。

    如何前往并像当地人一样用餐

    北宁距离Hanoi的Long Bien汽车站30公里,乘坐204路公交车约45分钟(票价约9,000 VND)。Dinh Bang地区距离北宁市区还有10公里——乘坐xe om(摩托出租车)或从镇上包车是比较实际的选择。

    如果你没有机会参加真正的婚礼,最接近这种全套宴席的地方是Dinh Bang市场周围的家庭经营式“com binh dan”(平价米饭餐厅),特别是在周末早晨,摊位上会有新鲜的banh phu the和整块切割的gio lua。

    实用贴士

    Dinh Bang的banh phu the在室温下的保质期约为24小时——请在计划食用的当天早上购买,不要提前一天购买。来自北宁知名生产商的gio lua在冷藏条件下可保存几天,如果你要回Hanoi,这是一种不错的伴手礼。
