    Banh Cong for First-Timers in Can Tho: How to Order Without Panic

    单个 "banh cong"——一种塞满了绿豆泥、虾干,顶部放有一整只鲜虾的油炸米粉杯——价格约为 8,000 至 12,000 VND。这虽然算不上一顿正餐,但只要搭配得当,它就能成为你在 Can Tho 能吃到的最令人满足的午餐之一,且总花费不到 80,000 VND。

    Banh Cong 到底是什么

    它的名字来源于一种小勺状的铁模具,面糊倒入其中后再放入热油中炸制。成品是一个致密、酥脆的外壳——介于油炸饼和塔饼之间——内部则是松软且带有淡淡甜味的绿豆和猪油,顶部的一只鲜虾在油炸后变得酥脆。它起源于 Soc Trang 省的高棉族社区,沿着湄公河向北传播,最终在 Can Tho 的街头小吃中占据了一席之地。

    油炸饼本身的味道比较中性,需要一些配料来提升口感。这就要靠包裹它的食材了:一张新鲜的米纸、一片生菜或芥菜叶、新鲜黄瓜条、豆芽,以及一把香草——紫苏、薄荷、鱼腥草。将所有食材卷在一起,蘸上用少许椰子水稀释的 nuoc cham(鱼露蘸水),或者有时蘸一种味道更浓郁、更具发酵风味的虾酱(mam tom pha)。

    如果没有这些包裹和蘸料,你吃的只是零食。有了它们,你就完成了一半的餐点。

    在 Can Tho 去哪里吃

    当地人最推荐的可靠地点是位于 Ninh Kieu 区 Dien Bien Phu 街上的 Banh Cong Co Ut。它大约在早上 7:00 开门,通常在中午前就卖光了——油炸饼是按批次现点现做的,你可以看到它们从油锅里捞出来时还在冒泡。一份四个配上满满一篮香草和蘸料的价格约为 45,000–55,000 VND。

    另一个值得了解的选择是靠近 Cai Rang 市场区域的 Ha Huy Giap 街沿线的小摊贩。这些摊位主要服务于刚结束早班的市场工人,这意味着食物出餐快、价格便宜,且不是专门为游客准备的。价格徘徊在每个 8,000 VND 左右。质量虽不尽相同,但偶尔会有惊喜。

    如果你计划清晨前往 Cai Rang 水上市场——这意味着要在早上 5:30 坐上船——那么当你回到岸上时,这些 Ha Huy Giap 摊位中已有不少在早上 6:30 左右营业了。

    打造一顿丰盛的餐点

    Banh cong 最适合作为咸味的主角。油炸饼本身很扎实,分量很足——每人两到三个通常就足够了,然后再搭配其他食物。

    从油炸饼和香草开始

    每人点三到四个,并配上完整的香草盘。先吃一个或两个原味的来品尝油炸饼本身的味道,然后再开始包裹食用。这是当地人遵循的实际进食顺序;香草盘可不是装饰品。

    加一碗 bun rieu 或 hu tieu

    Can Tho 的大多数 banh cong 摊位都位于汤粉店附近或共享空间。一小碗 "hu tieu"——这种带有猪骨、虾干和鹌鹑蛋的南方风味汤粉,在 Can Tho 非常受欢迎——与油炸饼搭配非常清爽。汤底可以化解油腻感。一小碗的价格通常在 30,000–45,000 VND。

    "Bun rieu" 带有番茄味的蟹膏汤底,是一种味道更强烈的搭配,如果你喜欢酸味胜过浓郁口感,可以选择它。有些摊位两者都有,可以询问一下。

    以冷饮收尾

    标准的收尾是 "ca phe sua da"——加炼乳的冰咖啡——在距离你座位 50 米以内的任何摊位都能买到。在 Can Tho 的这个区域,一杯大约 15,000–20,000 VND。甘蔗汁 (nuoc mia) 是更清淡的选择,价格也差不多。

    关于点餐的几点实用建议

    Banh cong 是现点现炸的。不要着急。如果你到达时发现有小排队,请加入其中——等待时间绝不会超过五六分钟,而且刚出锅的口感与放在盘子里放凉的口感差别很大。

    有些摊主会预先调好 nuoc cham,有些则让你自己调。如果桌上有小瓶的新鲜辣椒和青柠角,一定要用上。在繁忙的摊位,从公共罐子里倒出来的蘸料往往在营业三小时后味道会变淡。

    也有素食版本——只有绿豆,没有虾,没有猪肉——少数摊位可以按要求制作。不要指望有单独的菜单,直接询问即可。

    实用小贴士

    在 Can Tho,Banh cong 属于早晨到中午的食物。到了下午早些时候,大多数摊位要么关门,要么只剩下残羹冷炙。计划在上午 11:30 之前去吃。这里描述的完整餐点——油炸饼、一小碗汤和一杯冰咖啡——每人花费 65,000–80,000 VND 左右,非常划算。
