    话虽如此:请降低预期。服务比较冷淡,座位拥挤,高峰时段游客众多,意味着你可能要和六个陌生人共用一张桌子,他们都在忙着拍杯子而不是喝咖啡。建议在上午9点前或下午3点后前往。热饮版本(ca phe trung nong)盛在放在温水碗中的小陶瓷杯里,记得点这个——它能让你在慢慢品尝时保持最佳温度。

    Giang的巷内分店 — 配方相同,空间稍大

    这是同一家族经营,配方也一样,通过一个低矮的门洞进入,沿着楼梯上去,感觉像进入了一个私人空间。楼上的房间有可以俯瞰小巷的窗边座位。这里也会坐满,但节奏较慢。如果一楼的店面挤满了人,这里是个不错的选择。

    Cafe Dinh — 景观最佳,品质如一

    地址:13 Dinh Tien Hoang, Hoan Kiem(3楼) 营业时间:每天上午7点 – 晚上11点 价格:35,000–50,000 VND

    如果Giang让你感到压抑,那就来Dinh吧。这家咖啡馆位于还剑湖东南角的一栋建筑的高层,窗边座位可以让你不受遮挡地欣赏湖景和龟塔。蛋咖啡本身很棒——比Giang的稍微稀一点,甜一点——冰镇版本(ca phe trung da)在这里表现更好,因为环境让人很容易放松下来。建议在傍晚时分前往,此时湖面光线平缓金黄,下方步道上的行人也变得有趣起来。

    Loft Cafe — 老城区最佳座位

    地址:4F, 8 Bao Khanh, Hoan Kiem 营业时间:每天上午8点 – 晚上11点 价格:45,000–65,000 VND

    Loft的价格稍高,但其屋顶露台座位可以直接俯瞰Bao Khanh街直达湖边,绝对物有所值。泡沫制作精良——搅打时间足够长,能够保持形状——而且他们会用正规的陶瓷杯而不是塑料外带杯盛装。这里的客群偏年轻,Wi-Fi信号稳定,如果你打算度过一个漫长的上午,这很重要。虽然不是传统体验,但非常舒适。

    Gam Cafe — 当地人的私藏小店

    地址:58 Hang Bong, Hoan Kiem 营业时间:每天上午7:30 – 晚上9点 价格:30,000–40,000 VND

    这是一家规模较小的店,没有英文招牌,店内的装修风格显示出老板把钱都花在了咖啡上,而不是装饰上。Gam制作的版本明显比游客店不那么甜——蛋黄泡沫更轻盈,几乎像慕斯一样,底部的罗布斯塔咖啡味道更浓郁。如果你觉得大多数蛋咖啡太腻,先试试这一家。如果店内坐满了(工作日上午8点通常就会满座),店外还有几个塑料凳。

    注意 — 跳过酒店大堂的版本

    老城区的一些中档酒店现在在早餐时提供蛋咖啡。泡沫通常是预先制作的,往往是用粉末冲调,底下的咖啡也很淡。拍照看起来不错,但喝起来没什么味道。不如花40,000 VND去街边的咖啡馆喝一杯。

    为什么河内的版本与众不同

    关键变量是罗布斯塔咖啡基底。北方的 越南咖啡 文化默认使用罗布斯塔——比 Da Lat 或 Saigon 常用的阿拉比卡拼配豆更深、更苦、咖啡因含量更高——正是这种苦味让蛋咖啡不至于变成奶昔。蛋黄和炼乳泡沫非常甜,需要一种强烈的基底来平衡。当咖啡馆使用较浅的烘焙或稀释咖啡时,整杯饮品就会沦为单纯的甜腻,没有任何味道来反击。

    温度也很重要。传统的热饮版本盛在放在浅碗热水中的杯子里,这听起来很讲究,但确实能让咖啡从第一口到最后一口都保持在合适的温度。除非天气太热,否则请点热的(nong)。

    实用贴士

    这些咖啡馆大多位于还剑湖半径600米范围内,因此你无需规划路线,一下午就能打卡两三家。过去两年,游客聚集区的价格有所上涨,但本文列出的所有店铺价格均低于65,000 VND。Giang和Gam只收现金;Loft和Dinh接受银行卡。
