    Can Tho 以很多东西闻名——水上市场、河边的“hu tieu”摊位,以及湄公河三角洲(Mekong Delta)在美食方面优于南部其他地区的普遍共识。但“banh cong”往往不在游客的必吃清单上,这很可惜,因为它是这里不到20,000 VND就能吃到的最令人满足的食物之一。

    你吃的到底是什么?

    Banh cong是一种源自Soc Trang的油炸饼,高棉与越南的饮食文化交融造就了三角洲地区最有趣的食物。面糊由米粉和椰奶制成,倒入一个小的勺状模具中——“cong”这个词指的就是这种圆形的金属模具。面糊里会放入一整只虾(带壳、带头)、一勺绿豆泥,有时还会加一点猪肉末或猪油。模具被放入热油中,面糊膨胀变脆,出锅后就是一个手掌大小的金色圆饼:外壳酥脆,内馅绿豆软糯,虾肉在饼内焖熟。

    你不能单独吃它。Banh cong总是配有一盘新鲜香草和嫩生菜叶——通常是rau song(越南香草拼盘)、黄瓜片,以及未成熟的青香蕉或杨桃。你用生菜叶包住炸饼和一些香草,整块蘸入nuoc cham(鱼露、青柠、辣椒、糖调制的蘸水),一两口吃掉。这可不是用刀叉吃的食物。

    在Can Tho哪里可以找到它?

    如果你知道去哪找,在Can Tho寻找Banh cong并不难。摊位最集中的地方是在Ninh Kieu区的Xom Chai Market (Cho Xom Chai),沿着Nguyen Van Cu街。摊位通常从下午2点左右营业到傍晚——这是下午的街头小吃,而不是早餐。如果你早上9点去想吃banh cong,那会让你失望的。

    一个当地人真正会去吃(而不是只针对Ninh Kieu码头附近游客)的可靠地点是Tran Phu街上的Banh Cong Co Ba,距离中心市场区步行不远。那里没有英文招牌。寻找那口油锅、一排金属模具,以及桌边堆放的生菜和香草。坐在塑料凳上吃,这就对了。

    价格为每块8,000–15,000 VND,具体取决于大小以及面糊里是整虾还是碎虾干。点三到四块配上一盘香草,总价通常在40,000–55,000 VND之间。如果有人给两人份的标准餐报价超过70,000 VND,那你就是在游客导向的摊位了。

    如何点餐而不尴尬

    大多数banh cong摊主几乎不会说英语,但这没关系。点餐过程比看起来简单。

    坐下时,伸出手指表示你要几个。摊主会现做——看着模具放入油锅即可。你会自动获得那盘香草;这是标配。蘸水装在一个小公用碗里。

    如果你想多要点nuoc cham:“Cho them nuoc cham” (choh tehm nwok chahm) ——“请多给点蘸水”。如果你想在点餐前确认价格:“Bao nhieu tien?” (bow nyew tyen) ——“多少钱?”这两句话足以应付Can Tho大多数banh cong的交易。

    有一点会让人们困惑:虾壳。直接吃掉。油炸使它变得很薄很脆,咬碎它也是口感的一部分。如果你试图把它从饼里剥出来,只会弄得一团糟,还损失了一半的馅料。

    一些值得知道的事情

    • 搭配得当。 Banh cong很适合搭配附近小推车的“ca phe sua da”,如果是在傍晚,也可以搭配一杯冰凉的“bia hoi”。它味道浓郁,所以你需要一些冷饮来搭配。
    • 不要把它和banh gio或banh xeo搞混了。 “Banh xeo”是你可能已经见过的巨大的滋滋作响的煎饼——banh cong更小、更圆,而且是完全浸入油中炸,而不是平底锅煎。
    • 趁热吃。 它不适合外带。外壳在十分钟内就会变软。请在摊位上吃。
    • 高峰时间是下午3–5点。 那时候去,你能吃到刚出锅的炸饼。周末晚上6:30去的话,可能需要排队。

    实用提示

    Can Tho的banh cong主要集中在Ninh Kieu区,都在距离中心河岸几公里的范围内。街头摊位只收现金——随身准备好小额钞票(5,000和10,000 VND面额)。如果你正在规划Can Tho的下午美食之旅,banh cong非常适合作为午餐和河畔晚餐之间的下午茶点。
