    为什么河内的版本与众不同

    Banh cuon 在越南北部随处可见,但河内的做法更偏向精致细腻。粉皮应该近乎透明且略带粘性——既不能软烂,也不能僵硬。馅料的分量适中:一勺调味猪肉和木耳,不会塞得太满。蘸料(nuoc cham pha)带有糖带来的淡淡甜味和青柠带来的清爽酸味,并用鱼露提鲜。有些店会在盘子里加几片“cha lua”(越南猪肉香肠);更好的店会自制香肠。如果粉皮厚实且像面团,馅料调味过重,或者鱼露的味道刺鼻且不平衡,那就换一家吧。

    Banh Cuon Gia Truyen — 14 Hang Ga

    Dong Xuan Market 南门附近的 banh cuon 小推车吸引了大量游客,他们认为靠近地标就意味着质量。但那里的粉皮是提前几小时做好的,放在托盘里,端上桌时已经变得厚实且微凉。鱼露尝起来像是瓶装的。这倒不是难吃,但 60,000 VND 的价格——几乎是当地价格的两倍——实在不值得。建议往北走十分钟去 Hang Ga。
