    什么是Bo Ne?

    “Bo ne”这个名字源于法语单词“boeuf”(牛肉)和越南语动词“ne”(躲避、闪避,意指:要躲避滚烫铁锅中溅出的油花)。这是一种在Saigon独有的早餐,在越南其他地区很难找到同类。当你点餐后,一只还在滋滋作响的铸铁锅会被端上桌。锅里装着薄牛肉片、一到两个煎蛋、一抹猪肝酱、一截越南香肠,有时还有半个番茄。你需要搭配法棍食用——好的法棍外皮酥脆,绝非超市里那种软塌塌的面包——旁边还会配上一小碟调味酱。

    在一些菜单上,当地人称之为“bo ne kieu Phap”(法式牛肉),尽管这道菜早已演变出超越法式料理的独特风味。本质上,它是上班族的早餐:快捷、管饱,大多数地方的价格都在50,000 VND以下,从出锅到上桌不到三分钟。

    Bo Ne Thanh Xuan — 第3郡

    地址: 96 Dinh Tien Hoang, Ward 3, District 3
    营业时间: 6:00am – 10:30am
    价格: 35,000–45,000 VND

    这是标杆之作。Thanh Xuan在这里经营路边摊已经超过20年了。工作日的清晨,不到7点,塑料凳上就坐满了熟客,他们甚至不需要看菜单就能点餐。这里的牛肉切得很薄,边缘略带焦香——既不干硬,也不生涩——肉酱的比例也给得很足。法棍是附近现烤的,端上来时还带着余温。如果你想多吃一个,可以单独再点一份*banh mi*,绝对物有所值。只收现金,无英文菜单,无WiFi。

    Bo Ne 3 Nguyen Trung Truc — 第1郡

    营业时间: 6:30am – 11:00am
    价格: 40,000–55,000 VND

    第1郡的Bo Ne通常更精致一些,价格也因为周边的办公楼人群而稍高。但这家街角小店是个例外,它保留了最地道的风味。鸡蛋有两种做法:太阳蛋或半炒进牛肉里。番茄会经过轻微炙烤。这里的蘸酱比大多数店的酸度更清爽。由于靠近Ben Thanh Market,偶尔会有游客光顾,但客源绝大多数仍是本地人。别点他们推荐的冰茶,这里的Vietnamese coffee更好喝。

    Quan Bo Ne Co Tam — Go Vap郡

    地址: 142 Nguyen Oanh, Ward 7, Go Vap
    营业时间: 5:30am – 10:00am
    价格: 30,000–40,000 VND

    Go Vap郡不在大多数游客的行程单上,这正是这家店能保持高水准的原因。Co Tam(Tam阿姨)每天清晨都亲自掌勺。牛肉用加入了香茅的秘制酱料腌制过夜——这在Bo Ne中并不常见,风味非常独特。肉酱是自家制作的,比其他地方用的工业包装品牌少了些肝脏的腥味。这是清单中价格最亲民的一家。如果你在Saigon(西贡)停留超过两三天,花点时间坐车跑这8公里绝对值得。

    Bo Ne Bui Thi Xuan — Tan Binh郡

    地址: 217 Bui Thi Xuan, Ward 2, Tan Binh
    营业时间: 6:00am – 11:30am
    价格: 38,000–48,000 VND

    Tan Binh郡的Bui Thi Xuan街上聚集了许多Bo Ne摊位,而这家店凭借稳定的出品赢得了口碑。这里的滋滋声比别处更响亮——锅烧得更热——这意味着蛋白边缘更酥脆,牛肉的焦壳也更完美。面包配送时间是早上6:15,想吃最新鲜法棍的请早点来。他们还提供加了越南香肠(“lap xuong”)的升级版,只需多加8,000 VND,非常划算。

    Phuong Bo Ne — Binh Thanh郡

    地址: 8 Nguyen Xien, Ward 12, Binh Thanh
    营业时间: 6:00am – 10:00am
    价格: 35,000–45,000 VND

    这是一家水平高于平均水准的社区小店,蘸酱尤其出色。老板可以根据要求调整咸度——如果你在意钠摄入量的话非常有用。这里也是少数几家可以根据要求制作“准素食版”(去掉鸡蛋、番茄和肉酱)的地方,不过那样的话你其实就是在吃抹了酱的面包,所以请降低预期。

    为什么Saigon的Bo Ne与众不同

    简而言之:肉酱和锅的温度。越南北部的早餐倾向于“pho”或“banh cuon”;而Bo Ne完全是南方的产物,深受法国殖民时期食材(法棍、肉酱)的影响,并经过几代人的改良融入了当地习惯。Bo Ne中使用的肉酱通常比法式肉酱(rillettes)更粗糙——口感更丰富,油脂更多,有时还带有一丝辣椒味。锅具必须是铸铁锅而非不粘锅,这就是为什么它会有标志性的滋滋声和焦香。用不粘锅做出来的结果会更软,大多数熟客是不会买账的。

    避雷指南

    Bui Vien和Pham Ngu Lao地区的一些网红“复古Saigon早餐”店开始以80,000–120,000 VND的价格向游客兜售Bo Ne,端上来的锅明显没有预热到位——滋滋声是演出来的,牛肉颜色苍白,法棍也是便利店买的。如果锅端上来时不够烫,直接退回去或者换一家。Bo Ne吃的时候就该带点“危险感”。


    实用贴士

    以上提到的所有店都在上午晚些时候打烊——Bo Ne是早餐,不是全天供应的菜品。请准备好小额钞票(20,000–50,000 VND面值);大多数小摊找不开500,000 VND的大钞。一个实用短语:“Cho toi mot phan bo ne, it muoi”——“给我一份Bo Ne,少放点盐。”
