    大多数“banh cuon”(蒸米卷)在 Hanoi 都是早餐。厨师在早上 6 点前到达,在沸水锅上铺上一层薄布,倒入米浆,等待三十秒,揭开半透明的米皮,填入猪肉末和木耳。到了上午 11 点,米浆通常就用完了。中午时分,摊位也就打烊了。

    但这座城市节奏很慢,一些店家发现,在晚上 10 点甚至更晚的时候,人们对一碗丝滑的蒸米卷有着真正的需求。这些并不是为了延长营业时间而设立的旅游陷阱,而是单纯选择了不同工作时段的街坊小店。

    为什么值得在深夜寻找 Banh Cuon

    这道菜看起来简单:蒸米粉皮,松散地包裹着调味猪肉末和泡发的木耳,撒上酥脆的炸红葱头,再配上一碗用鱼露和青柠稀释过的 nuoc cham 蘸水。有些版本还会额外加入“cha lua”(越南猪肉卷)。口感是让人回味无穷的关键——米皮应该薄得近乎透明,柔软而不粘腻。

    三家值得一去的店

    Banh Cuon Ba Hanh — Hang Ga 街

    47 Hang Ga, Hoan Kiem。营业时间约为晚上 6 点至午夜,周末有时会更晚。

    这是一家位于老城区东缘的低矮板凳、塑料桌小店。Ba Hanh 经营这家店已经超过十年了——晚班时段她亲自操作蒸锅。一份标准份(hai cuon,两卷)配 cha lua 的价格约为 35,000–45,000 VND,具体取决于你添加的配料。这里的 nuoc cham 明显比一般的要清淡,甜味多于酸味,如果你在深夜进食且不想吃太刺激的口味,这非常合适。

    晚上 9 点左右,附近的啤酒角热闹起来,街道会变得嘈杂。如果你想观看揭米皮的过程,建议早点去占个座——这绝对值得一看,她揭开布并将馅料卷入的动作一气呵成,米皮却不会破。

    Quan Banh Cuon Dem — Bui Thi Xuan 街

    18 Bui Thi Xuan, Hai Ba Trung。营业时间:晚上 8 点至凌晨 1 点。

    距离 Hoan Kiem 以南约 2 km,这是一个专门为深夜用餐人群开设的安静去处——店名大致翻译为“夜间 banh cuon 摊”,这足以说明其经营模式。这里的份量很足:每份三卷,约 40,000 VND,配有切成薄片的“cha que”(肉桂猪肉香肠)。炸红葱头是每小时左右新鲜制作的,而不是放在罐子里存放,这带来了明显的口感差异。

    这是一家家庭经营的小店。丈夫负责米浆和蒸制,妻子负责接单和收银。座位位于狭窄的店屋内,配有两台吊扇。夏天会比较热,但如果你坐在门口附近,通常会有微风。

    Banh Cuon Nguyen Sinh Cung — 近 Dong Xuan 市场

    5 Nguyen Sinh Cung, Hoan Kiem。晚上 7 点开始营业,通常卖到米浆用完为止——大约晚上 11 点。

    这家店离 Dong Xuan Market 很近,周末能吸引不少夜市的人流。配置非常简单:一个蒸锅、一张折叠桌、大约六个凳子。价格是这三家中最低的——基础款每盘 30,000 VND。馅料中猪肉较少,木耳较多,有些人更偏爱这种口味。Nuoc cham 放在一个公共罐子里,你可以自行取用。

    如果你想确保还有米浆,请在晚上 10 点前到达。
