    Cai Be水上市场已不再是二十年前那般壮观的景象,在租船前往之前,了解这一点很有必要。如今这里保留下来的是真实的批发贸易——农民们在黎明前顺流而下,船上载满了西瓜、柚子和火龙果;此外,运河沿岸还有一系列真正值得你在清晨一探究竟的家庭作坊。

    从Can Tho或Saigon出发

    从Can Tho出发,Cai Be位于其东北方向约50公里处——车程约90分钟,或者你可以通过旅馆安排船只,将渡河与市场游览结合起来。从Saigon出发,经由Cao Lanh高速公路向西南行驶约90公里,乘汽车或小型货车仅需两个多小时。大多数游客会将Cai Be与包含Vinh Long或My Tho在内的更广泛的湄公河环线结合起来游览。如果你是自由行,Cai Be镇本身就是出发点;请在天主教堂附近的河边主路上寻找船家——那座法式哥特式尖塔非常显眼,是很好的地标。

    拼船游览两小时的费用约为每人150,000–250,000 VND,包下一艘小船的费用约为400,000–600,000 VND。价格可以协商,并随季节波动。

    市场本身:这里正在发生什么

    水上市场的繁忙时段在凌晨5点到上午8点之间。批发是这里的主要业务——停泊在河中央的大船会在船头挂上竹竿,上面悬挂着所售的商品,这种被称为“beo hang”的系统向买家展示每艘船的货物。买家驾驶小船靠拢,交易迅速完成,大多发生在彼此熟悉的商贩之间。

    对于游客来说,这种体验与其说是购物,不如说是观察水上供应链的运作。你会看到来自Binh Minh的柚子、红毛丹、像小孩一样大的菠萝蜜,以及堆叠得极其精准、令人惊叹的青皮橙。还有少数几艘水上摊位为工人们售卖“hu tieu”和米粥——在清晨6点的河上吃上一碗,是那种会让你印象深刻的细节。

    到了上午9点,市场会明显冷清下来。如果你10点才到,基本上就错过了。

    椰子糖与作坊巡礼

    在Cai Be花时间的更好理由是运河沿岸的一系列小型家庭作坊,大多数距离市场仅需短途船程或步行即可到达。这些地方生产“keo dua”(椰子糖),以及米纸、米酒和爆米花。

    制作椰子糖的过程缓慢且充满手工感:新鲜椰奶与糖在文火上慢熬,倒入平盘冷却,然后手工切块并用可食用的米纸包裹。榴莲味、斑斓叶味和原味椰子糖最为常见。工人们动作娴熟,焦糖椰子的香气令人垂涎。你可以直接从大多数作坊购买——一袋混合口味的价格在30,000–50,000 VND之间,味道与你在Ben Thanh Market买到的包装版本完全不同。

    米纸作坊同样值得一去。圆形的“banh trang”被压制、在覆盖着布的锅上蒸熟,然后在竹架上晒干。从事这些工序的妇女们已经做了几十年,她们对向游客表演制作过程并不太感兴趣,这反而让观看过程显得更加真实。你可以当场购买新鲜的米纸。

    水果、果园与当地特产

    前江省(Tien Giang)盛产各种热带水果——龙眼、芒果、红毛丹、星苹果——一些船家会将参观果园作为晨间行程的一部分。在那些面向大型旅游团的果园里,参观可能会显得有些刻意,但如果是那些你可以按市场价格购买水果、而不是支付“入场费”的小型家庭果园,情况就不同了。请明确要求船家带你去工作中的果园,而不是旅游果园。两者的区别通常在于入口处是否有纪念品商店。

    星苹果(“vu sua”)在11月至次年2月成熟,如果你在这个季节来,非常值得一尝。果肉奶香甜美,与你在Saigon市场上买到的经过几天运输的水果完全不同。

    地面上的美食

    Cai Be镇在市场附近的主街上有一小片com binh dan(平民快餐)餐馆,从清晨6点左右开始营业,为工人和船夫提供餐食。一份包含两到三道菜(如红烧肉、炒空心菜、炸鱼)的餐盘价格约为40,000–60,000 VND。这里没有菜单,看中什么就指什么。

    如果你想吃得更丰盛,河边的一些旅馆和小餐馆提供湄公河风味套餐——用米纸包裹的象耳鱼(“ca tai tuong”),配上草药,整条鱼竖立在铁架上上桌。这是南方的经典菜肴,在这里做得非常地道。

    实用贴士

    市场在周一至周六最为活跃;周日的贸易量会明显下降。请准备好小面额钞票——10,000和20,000 VND的纸币——用于在作坊购物和购买运河边的小吃。即使在旱季,也建议带一件轻便的雨衣,因为河上的清晨比较潮湿,而且船篷的遮挡效果参差不齐。
