    什么是“banh hoi long heo”,为什么要在 Mui Ne 吃?

    Banh Hoi 88(Rach Dua 街,靠近 Phan Boi Chau)

    Banh Hoi Trang(Tran Hung Dao 街,靠近渔港)

    Banh Hoi Hoa(Hung Vuong 街,靠近市场入口)

    Banh Hoi Phuc(Phan Thiet 海滩长廊,靠近旧码头)

    如果你想一边吃一边欣赏海景,Phuc 的推车是唯一能看到海水的“banh hoi long heo”摊位。这是一个流动摊位——他每天早上出摊,上午 11 点前收摊——所以如果你不是早起的人,能不能吃到全凭运气。这里的米粉糕更薄,几乎是半透明的,这意味着它能煎得极其酥脆。烤猪肠烤得更焦,几乎到了烧焦的程度;这是一种两极分化的风格,但从小吃这种口味长大的当地人却对此情有独钟。

    Banh Hoi Thu(Ham Tien 区,居民区内,无招牌)

    时间安排与注意事项

    最佳时间段是早上 5:30 到上午 10:30——在白天的酷热到来之前,而且摊贩们还有第一批新鲜烤制的猪肠。第二个时间段是中午 12 点到下午 1:30 左右,迎合午餐人群,但到那时,一些摊位可能已经售罄,或者卖的是放了半天的“banh hoi”。

    晚餐时段(下午 5 点以后)很少营业。大多数摊贩在下午三四点前就关门了。

    如何点餐

    大多数摊位会问“ot khong?”(要不要辣椒?)。简单回答“co”(要)或“khong”(不要)就可以了。

    离开时付款,而不是点餐时付款——所有地方都首选现金。

    Mui Ne 版本的独特之处

    将 Mui Ne 与 Hanoi (하노이 / 河内 / ハノイ) 或 Thai Nguyen 相比,有三个显著的区别:

    1. 烤制强度:Mui Ne 的摊贩烤猪肠的温度更高、时间更长,追求更深色的脆壳。这改变了口感——外皮更脆,焦糖味更浓——而北方的烤制方式则更为温和。

    2. 更新鲜的“banh hoi”:大多数 Mui Ne 的制作者每天会多次烹制米粉糕。在北方,你通常吃到的是工厂制作的粉皮,点单后再加热。在这里,新鲜度至关重要。

    3. 搭配当地佐料:Mui Ne 会加入 nem chua (넴쭈어 / 酸肉肠 / ネムチュア)(酸肉卷)或腌鹌鹑蛋作为配菜。这在其他地区不太常见,赋予了这顿饭不同的风味层次。

    费用与预算
