    "Banh cuon"——蒸米皮卷——可能是Hanoi最低调的早餐。没有汤头,没有繁文缛节,就是猪肉、虾仁和香菇裹在薄而有嚼劲的米皮里。但如果你问任何一个河内人去哪里吃,他们都会斩钉截铁地推荐某一家特定的摊位或餐馆。原因很简单:这里的品质高下立判。有的摊子做出来的米卷恰到好处——软糯而不黏糊;走两条街,另一家卖的可能就像橡皮。

    Hanoi的"banh cuon"之所以与众不同,在于米皮比Saigon的更新鲜、更薄,馅料以猪肉和木耳为主,不像南方版本那样以虾为核心。一卷正宗的banh cuon入口应该像温热的丝绸,而不是耐嚼的橡皮球。最好的店家都是现点现蒸,所以早上九点前就卖完了。

    Banh Cuon Thanh Huong(老城区)

    在Hang Ga街上,距离鸡肉市场几步之遥,Thanh Huong自1980年代起就在这里手工卷米皮。老板在大理石操作台前现场手卷,全程可以看到。每份都是现做的——你只需等大约90秒,米卷就从蒸笼上下来了。

    这里只卖三样东西:猪肉香菇卷、虾肉卷和蟹肉卷。推荐猪肉卷。搭配的一小碗nuoc mam cham(鱼露蘸汁)咸、酸、辣比例恰当。三卷售价35,000越南盾。没有座位——所有人都站着吃或打包带走。

    早上八点半之前去。过了这个时间,节奏变慢,品质也会稍微下滑。来这里的顾客大多是建筑工人、三轮车夫和顺路买早餐的上班族。

    Banh Cuon Gia Truyen(还剑区)

    在Nguyen Huu Huan街上,距还剑湖以南约500米,这家摊位拥有一批死忠食客。这里的米卷略厚,口感更为丰腴——馅料中猪油比例更高,听起来似乎不健康,但正是这一点让整体风味不落俗套。

    这里还有一款虾酱馅的版本,较为少见,值得一试。蘸汁里加了剁碎的辣椒和炒花生,口感有层次。价格相近:三卷35,000至40,000越南盾,配炸红葱头和一小碗蘸汤(有人喜欢用汤蘸着吃,纯粹主义者则跳过这步)。

    老板对熟客态度友善,你若有问题,他不会催你。高峰时段是早上六点半至七点半。

    Banh Cuon Hoa(Dong Da区)

    位于Hang Bac街附近,Hoa算得上是一家正经的餐馆——四张小桌,比路边摊稍微正式一些,但价格依然实惠(每份预计40,000至50,000越南盾)。这里的米卷比上述几家更宽,没那么精致,但馅料分量足,米皮带着米粉特有的淡淡甜味。

    米卷搭配一杯温热的咸汤(canh)和一小碟腌芥菜,能解猪肉的油腻。有些本地人会把米卷和汤分开点,这样可以一卷一卷地蘸着吃。

    如果你想坐下来慢慢享用,而不是站在摊前匆匆解决,这里是最好的选择。早上的出品质量不错,而且他们一直营业到午饭时间(上午11点至下午2点),这在banh cuon店家中实属少见。

    Banh Cuon Hanoi(Ba Trieu街)

    Ba Trieu街上(靠近Dong Xuan Market)有一家没有招牌的小摊,摊主是一位做了二十多年的女士。没有任何标识,只有一口蒸笼和一张大理石操作台。你可以靠早上六点半至七点半那排停在外面的摩托车来认路。

    这家的招牌是米卷更宽、更脆薄——稍不注意就会破,但这恰恰说明它够新鲜。馅料里带着淡淡的肉桂香气,若有若无。本地人对这家摊子推崇备至。价格:三卷30,000越南盾,是几家里面最便宜的。

    早点去,不会说越南语就指着别人点的东西示意。这家不特别迁就陌生人,但也不会对你不友好。

    Dong Xuan Market里的Banh Cuon

    在这个有顶棚的市场内部,至少有两家摊位从早上六点卖到九点。品质参差不齐——有时好有时差——但如果你本来就在市场里且肚子饿了,不妨试试。米卷加一杯热"nuoc mam"(清汤)售价25,000至30,000越南盾。嘈杂的市场氛围本身也是体验的一部分。

    如何点餐及注意事项

    大多数摊位没有菜单。比手势或直接说你要几卷("ba"=三、"sau"=六、"chin"=九)。如果有选择,说明你要的蛋白质:"thit"(猪肉)、"tom"(虾)、"cua"(蟹)。

    你会得到米卷、一小碗蘸汁,有时还附上腌蔬菜或热汤。把蘸汁倒入小碟,撕下一段米卷,蘸着吃。有人喜欢把蘸汁直接淋在整卷上,两种吃法都没问题。

    米卷不会是烫的——温热才是正确状态。它凉得很快,所以拿到手就赶紧吃。

    时间与费用一览

    Banh cuon是早餐和早午餐食物。大多数摊位在早上六点至八点半全速运转,许多在九点或十点就收摊了。部分店家营业到午饭时间(如上文提到的Gia Truyen和Hoa),但过了上午高峰期,出品质量会有所下滑。

    每份三卷预算30,000至50,000越南盾,这是一个人的分量(有人会吃六卷)。如果在有座位的店里加了汤和其他配料,每人预算40,000至60,000越南盾。

    Hanoi的banh cuon与其他城市版本的差异,归根结底在于米粉——河内的店家从红河三角洲特定的磨坊取粉,水质也影响着米皮的口感。这究竟是真的还是只是当地人的说法,无从考证,但河内的米卷的确比Saigon或Da Nang的版本吃起来更轻盈、不那么黏稠。

    最受欢迎的几家卖完或放慢节奏的速度都很快。Hang Ga街的Thanh Huong最好在早上八点半前去,Nguyen Huu Huan街的Banh Cuon Gia Truyen高峰在早上六点半至七点半。Ba Trieu街那家无招牌小摊同样从六点半开始聚集人气。如果你想吃到现点现蒸的新鲜米卷,早上八点前到是基本要求。

    河内街头摊位的Banh Cuon一般多少钱?

    大多数摊位三卷收费35,000至40,000越南盾。Hang Ga街的Thanh Huong收费35,000越南盾,Nguyen Huu Huan街的Gia Truyen收费35,000至40,000越南盾,Dong Da区的Banh Cuon Hoa略贵,每份40,000至50,000越南盾,因为它有四张桌子可以坐下来吃,不像其他几家只能站着或在操作台前就餐。

    什么情况下选Banh Cuon Hoa比老城区的摊位更合适?

    Dong Da区Hang Bac街附近的Banh Cuon Hoa一直营业到午饭时间,上午11点至下午2点,这在banh cuon店家中实属难得。如果你错过了Thanh Huong或Gia Truyen的早市,Hoa是个实际的备选。这里还有四张小桌,适合想坐下来慢慢吃的食客,不必像在街边摊那样站着解决。

    早上去。不要想太多——找一家排队的摊位。如果拿不定主意,向旁边的食客问问推荐。Hanoi最好的banh cuon不在什么知名餐厅,而是在某个摊主已经卷了二十年米皮、根本不在乎你是不是游客的小摊上。
