    什么是 Ca Loc Nuong Trui?

    “Ca loc nuong trui”是用新鲜香草(薄荷、香菜、莳萝,有时还有香茅)包裹或填塞的烤黑鱼(蛇头鱼)。将鱼纵向剖开,抹上盐和少许姜黄,然后在炭火上一整条烤制,直到鱼皮焦脆,而内部的鱼肉依然保持水润。上菜时,你只需拨开香草,撕下鱼肉,蘸上“nuoc cham”(鱼露+青柠+辣椒),配着米饭一起吃。

    这道菜并不花哨。它不像在 Mekong 地区那样,会出现在 Hanoi 或 Saigon 的菜单上。但在 Can Tho,它是市场工人、摩托车司机以及那些熟知门道的上班族们工作日午餐的主食。

    为什么 Can Tho 的 Ca Loc 味道与众不同

    Mekong delta (메콩 델타 / 湄公河三角洲 / メコンデルタ) 供应了越南几乎所有的养殖黑鱼。Can Tho 正好位于其中心地带——这里的鱼比其他任何地方都要新鲜,通常是当天早上捕捞的,而不是隔夜货。炭烤的烹饪方式意味着你能品尝到鱼肉本身的鲜美,而不是被酱汁掩盖的味道。此外,包裹的香草绝非装饰,而是不可或缺的精髓。炭火的热气和香草的精油会在你品尝时渗入鱼肉之中。

    在这些地方,你找不到精致的摆盘或英文菜单。你只需走过去,指着鱼点单,吃完,付 40,000–80,000 VND(约合 2–3.50 美元),然后离开。这就是完整的体验。

    地点 1:Phu Uyen 市场区域(环境随意,适合早餐/早午餐)

    Phu Uyen 市场位于第一郡 Vo Van Kiet 和 Ly Tu Trong 的交叉口附近。在市场的边缘以及正北面的街区,小摊贩们从早上 5:30 到上午 11 点左右就会架起炭烤炉。大多数摊位没有名字;你可以通过袅袅的炊烟和门前装鱼的冷藏箱来认出它们。

    如果想挑到最好的鱼,请在早上 7 点前到达。一整条 ca loc 的价格在 50,000–70,000 VND 之间,具体取决于大小。点一份“ca loc nuong trui”——他们会在你面前烤制,大约需要 8–10 分钟。坐在塑料凳上,配着保温桶里的热米饭吃,喝点热茶或保温瓶里的冷罗望子汁。香草会放在你盘子的香蕉叶上;你需要自己动手包。

    地点 2:Ninh Kieu 码头(游客较多,适合午餐)

    第一郡 Hai Ba Trung 沿线的海滨长廊有几家提供堂食的餐厅,设有面向 Hau River 的露天座位。“Quay 79”和“Saigon (사이공 / 西贡 / サイゴン) Mekong”是常见的店名。这些地方更热闹,价格也更高(70,000–100,000 VND),并且提供英文菜单,但这里的 ca loc nuong trui 依然正宗——采用同样的剖开炭烤方法。

    最佳时间:上午 11:30 到下午 1:30。如果你想在码头漫步游览的同时享用美食,这里的风景会为你加分。在午餐高峰期,预计需要等待 10–15 分钟。如果你想换换口味,这些地方还供应米纸卷和烤虾。

    地点 3:Can Tho 市场(Ben Binh Dong)

    第一郡 Phan Boi Chau 上的主要室内市场楼上有一个美食广场,那里有几个烤鱼摊位。这里比 Phu Uyen 更嘈杂、更混乱,但鱼的质量不相上下。这里的摊贩提供午餐和晚餐(上午 11 点至下午 2 点,下午 5 点至晚上 8 点)。一整条 ca loc 的价格为 45,000–60,000 VND。

    诀窍是:不要在市场里面直接点餐。问问摊位是否烤 ca loc,拿到鱼后,把它带到楼上的空桌子上。你可以从附近的摊贩那里买米饭和茶,然后在那儿吃。这是自助式的,吃得满手是油也没关系——没人会介意。

    地点 4:Tran Phu 街(傍晚休闲)

    第一郡的 Tran Phu 街(尤其是 Phan Boi Chau 和 Ly Tu Trong 之间的街区)有一些小型的临街餐厅和“com tam”(碎米饭)店,它们在晚餐时间也会烤 ca loc,通常从下午 5 点开始。这里比午餐地点人少,更安静,适合想和街坊邻居一起用餐的情侣或独行旅客。

    价格范围:50,000–80,000 VND。这些地方灯光昏暗,只收现金,而且可能不会说英语——如果有需要,带上你的手机,给他们看一张 ca loc nuong trui 的照片。他们会明白的。

    如何点餐及用餐体验

    指着冷藏箱里的鱼,或者说“ca loc nuong trui”。通过重量确认大小(大多数是 300–400 克,一人份)或者问“mot ca?”(一条鱼?)。他们会问你想要怎么做——“trui”(用香草包裹)是默认做法;你可以选择不要香草,但强烈建议保留。对于熟度没有特殊要求;外皮烤焦,内里鲜嫩。

    当鱼端上盘子时,是一整条鱼——鱼骨、鱼头、鱼尾都在。用手指或叉子将鱼肉从骨头上撕下来。蘸上 nuoc cham。吃掉鱼肉,留下骨架。酥脆的鱼皮是最美味的部分;千万别错过。

    你可以自带饮料,或者向摊贩点单:热茉莉花茶(免费或 5,000 VND)、罗望子汁(10,000 VND)或 [bia hoi](/posts/bia-hoi-hanoi (하노이 / 河内 / ハノイ)-street-beer)(15,000–20,000 VND)。冰镇香茅汁也很常见。

    最佳前往时间

    早餐(早上 6–8 点):鱼最新鲜,人最少,Phu Uyen 是最好的选择。计划在 20 分钟内吃完离开。许多摊贩在上午 11 点前就会收摊。

    午餐(上午 11:30–下午 1:30):比较忙碌,但依然是个好选择。所有地点都营业。如果你要吃一顿正餐(鱼+米饭+蔬菜+饮料),请预留 45 分钟。

    晚餐(下午 5:30–晚上 7:30):比午餐时间安静,更具当地氛围。如果摊贩在下午补了货,鱼依然会非常新鲜。有些地方在晚上 8 点前就会卖光。

    实用提示

    请携带小面额现金。大多数地方不接受刷卡。用手抓着吃——纸巾很少;当地人并不介意手上有油。一整条 ca loc 是一人份;如果你有同伴,请点两条。自来水不安全;一定要喝摊贩出售的饮料。如果你对新鲜度不确定,可以问鱼是什么时候进的(“May bay?” = 今天?)。当地人知道哪里好吃,回头客会得到优待,所以成为常客是值得的——多去同一个地方几次,他们就会记住你。
