    什么是 Lau Ca Duoi?

    “Lau ca duoi”是一种用鲶鱼尾制作的火锅——特别是“duoi”(尾巴)部分,因其鲜甜的味道和柔软的口感而备受青睐。在肉汤中慢炖后,鱼肉口感几乎像黄油般顺滑,而且比其他部位的骨头更少。在 Vung Tau,这道菜有着深厚的历史渊源:这座港口城市靠近 Saigon 河(野生和养殖的鲶鱼都在这里新鲜捕捞),使其自然而然地成为当地的特色美食。汤底通常是清淡的猪肉或鸡肉高汤,有时也会加入海鲜高汤。你可以直接在锅里煮鱼,配上绿叶蔬菜、蘑菇和米粉。它比牛肉火锅更清淡、更精致——尾部肉质很容易剥落,不需要过多的调料。

    Nha Hang Lau Ca Duoi Tuoi Xanh

    这家店稍微高档一些(但依然是休闲的塑料椅风格),位于向东 2 km 的 Hoang Hoa Tham 街上,更靠近 Bai Sau 海滩。这里的汤底比较清淡——有人说太清淡了——但鱼尾的质量非常出色。他们的食材来自北部 40 km 外的一家特定养鱼场,每两天进一次货。价格比 68 Tran Hung Dao 高出 5,000–10,000 VND。鱼尾的分量更大,修剪得也更整齐。老板 Hai 以前是个鱼贩;如果你问起,他会和你聊聊鱼的知识。如果你不介意坐上 90 分钟,这里很适合享用一顿轻松的饭菜。营业时间为上午 10 点至晚上 10 点;这里的午餐比晚餐人少。

    Lau Ca Duoi Hang Dao(夜市摊位)

    这不是一家餐厅——它是 Vung Tau 夜市(Cho Dem)里的一个手推车摊位,靠近 Tran Phu 和 Tran Huu Tho 的交汇处。营业时间仅为下午 5 点至午夜。老板 Duc 用一个小炉子加热火锅,然后用塑料碗盛上新鲜舀出的肉汤端给你。没有桌椅;你只能站着吃。一整份(小鱼尾、蔬菜、面条)的价格是 150,000 VND。质量很好——Duc 是由他母亲培训出来的,他母亲经营“lau ca duoi”摊位已经 20 年了。这里环境嘈杂,吃得大汗淋漓,但绝对地道。周末(周五至周日)人山人海。

    Quan Lau Ca Duoi Gia Dinh

    这是一家家庭经营的餐厅,位于海滨内陆 Phan Chu Trinh 街的一栋低矮房屋内。这家店有真正的桌椅、空调,还有印在过塑纸上的菜单。少了几分“街头感”,多了一些“社区餐厅”的氛围。鱼尾价格为 200,000–280,000 VND。这里的汤底更浓郁——他们在高汤中加入了鱿鱼干和虾干——所以如果你喜欢层次丰富的口感,这里就是你的不二之选。午餐时间上午 11 点至下午 2 点;晚餐时间下午 5 点至晚上 9 点。周一休息。除了 Tet 假期外,直接进店通常能在 15 分钟内入座。

    Lau Ca Duoi Sinh Vien(学生食堂)

    这是一个由三姐妹经营的小摊位,位于 Truong Chinh 街的 Vung Tau 学院附近。当地人对这里的鱼尾赞不绝口;肉质始终保持柔嫩。价格是全城最便宜的:饱餐一顿只需 120,000–150,000 VND。缺点是什么?没有座位。只能外带或站着吃。营业时间为上午 10:30 至下午 1:30(午餐)和下午 5 点至晚上 7 点(晚餐)。学生们会排队购买;很快就会卖光。如果你的时间比较灵活,为了它的性价比和品质,这里绝对值得一去。

    走上前说“Cho toi mot phan lau ca duoi vua”(“给我来一份中份的 lau ca duoi”),或者直接指着水箱里的鱼尾。如果摊位有菜单,尺寸通常标为“nho”(小)、“vua”(中)或“lon”(大)。要求肉汤的温度——大多数情况下端上来都是沸腾的;如果你想吃温热的,可以说“vui long, nem duong an”(“麻烦温一点,方便我吃”)。从旁边的桌子添加配菜:“Thêm rau lang, mì, tau huu”(“加空心菜、面条、豆腐”)。吃完后付款——大多数摊位只收现金,没有刷卡机。

    什么时候去

    午餐时间(上午 11 点至下午 1:30)是鱼类供应最新鲜、摊位最繁忙的时候——这也是味道好的标志。晚餐时间(下午 5 点至晚上 8 点)节奏较慢,所以你能享受到更周到的服务。工作日的早上(周一至周五,上午 10 点至 11 点)最安静;你可以慢慢品尝。周末中午过后很快就会客满。除非你喜欢凑热闹,否则请避开节假日(Tet (뗏 (베트남 설날) / 越南春节 / テト (ベトナム旧正月))、7 月至 8 月的夏季周末)。最好的时间是安静的周二或周三午餐——鱼很新鲜,等待时间短,也没有人催促你。

    实用提示

    带上现金——即使是较高档的地方也不一定能刷卡。肉汤端上来时非常烫;让它凉一下,或者让老板帮忙降温。包含饮料和配菜的一顿饱餐,每人花费 200,000–350,000 VND,具体取决于你去哪里。大多数摊位只收现金;两家比较高级的餐厅(Tuoi Xanh、Gia Dinh)如果你提前询问,可能会接受 Vietcombank 卡。
