    什么是 Xoi xeo,为什么 Hanoi 如此为之着迷

    Xoi Xeo Hang Hanh — 老城区的经典老店

    Xoi Ga Hang Ga — Hanoi 风味鸡肉糯米饭

    地点:Quan Ngon 美食广场,Hang Ga 街 18 号(从街道层内部进入)。

    如何点餐以及注意事项

    在所有这些地方,你其实不需要开口“点餐”。你只需走上前,指着 Xoi xeo,竖起手指表示你要几份(1 根手指 = 1 份),然后付现金。通常一份就是一个香蕉叶包。有些摊贩会问你是否需要多加红葱头或猪油——如果他们问了,点头表示需要,摇头表示不需要。

    价格与时间

    Hanoi 的 Xoi xeo 价格在 20,000 到 28,000 VND 之间(约合 0.85–1.20 美元)。这在街头小吃中不算便宜——它比一碗 Pho 还要稍微贵一点。但食材的质量绝对物有所值。新鲜玉米和熬制的猪油可不便宜。

    时间就是一切。Xoi xeo 纯粹就是一种早餐。早上 8 点前去,你能吃到热腾腾的米饭、新鲜的红葱头,而且摊位任你挑选。如果 9 点去,你可能就运气不佳了。大多数摊贩在上午 9:30 前就会关门,直到第二天早上才会重新备货。

    如果你因为倒时差在下午 2 点感到饥肠辘辘,Xoi xeo 可救不了你。请合理安排你的寻味时间。

    Hanoi 的 Xoi xeo 有何与众不同

    在 Vietnam 南部,Xoi xeo 通常更甜,有时会加一点椰奶同煮,或者在上面放一个煎蛋。在 Vietnam 中部,它更清淡,猪油较少。而在 Hanoi,它讲究的是平衡:微咸,葱油带来恰到好处的醇厚,但绝不腻人。玉米吃起来就应该是玉米的清甜,而不是油脂的载体。米饭必须保持完整——粒粒分明,而不是糊成一团。

    这反映了 Hanoi 更广泛的饮食理念:克制、风味纯粹、尊重食材。它不追求创新或时髦。恰恰相反,这是一道由每周吃好几次的人们经过数十年时间不断改良和沉淀下来的美食。

    实用提示

    请携带零钱(5,000 和 10,000 VND 的纸币)。大多数摊位不接受刷卡或大额钞票。如果你住在老城区,从大多数酒店步行到 Hang Hanh 都在 10 分钟以内。如果你在 Hanoi 的其他地方,从大多数地点搭乘 Grab(当地的打车软件)前往 Nguyen Trai 和 Hang Ga 的费用都不超过 30,000 VND。早点去,空着肚子去,带着对纯粹美味的期待去品尝吧。
