    “Bun cha”——炭烤猪肉饼和肥美的五花肉片,浸在温热酸甜的蘸汁中,搭配一盘凉爽的“bun”(米粉)和新鲜香草——是Hanoi最平民化的美食之一。你可以坐在路边小板凳上花30,000 VND解决一顿,也可以在装有空调、提供鸡尾酒单的游客餐厅花上十倍的价格。无论哪个档次,猪肉和蘸汁的核心理念都是一样的。真正改变的是炭火的烟熏味、焦香度以及制作的用心程度。

    30,000–45,000 VND档位:街坊邻里的首选

    这是大多数Hanoi本地人实际消费的档位。找那种店门口摆着炭火烤架的狭窄店面,通常营业时间为11:00–13:30,有时在炭火熄灭前会于17:00–19:00再次营业。

    标配:你会得到一碗温热的蘸汁,里面有两三块肉饼和几片烤五花肉,一篮bun,一盘rau song(生菜、紫苏、豆芽),如果需要的话,还可以点一份nem chua或cha gio。所有食物都会在两分钟内上齐。

    Bun Cha 34 Hang Than (34 Hang Than, Ba Dinh) 是一个可靠的选择——店面小,只收现金,没有英文菜单,一份35,000 VND。肉饼拌入了红葱头和鱼露,用真正的木炭烤制;隔着半条街就能闻到烟火气。蘸汁比游客店更清淡,甜度也更低。记得在13:00之前去,否则可能会卖光。

    Bun Cha Dac Kim (1 Hang Manh, Hoan Kiem) 稍微出名一些,位置靠近老城区,因此常有游客光顾,但价格一直维持在40,000–50,000 VND左右。猪肉品质稳定,但在高峰时段用餐可能会感到有些匆忙。

    在这个档位,不要指望有菜单、收据或Wi-Fi。期待的是浓郁的烟火气、快捷的服务,以及吃完后不必久留的自在。

    60,000–90,000 VND档位:中间地带

    舒适度有所提升——有正经的桌椅,有时还有风扇——但猪肉并不一定更好。这个价位段的许多餐厅更多是靠地理位置(Hoan Kiem的游客街)而非烹饪技术来经营。蘸汁往往更甜、更平淡,这是为了迎合那些觉得本地版本太浓烈、太酸的游客口味。

    诚恳建议:如果你打算避开最便宜的档位,那么也请避开这个中间地带,直接去最高档的餐厅。因为你多花的钱是买椅子,而不是买焦香。

    200,000–350,000 VND档位:Bun Cha Huong Lien及其同类

    2016年,Barack Obama和Anthony Bourdain在Bun Cha Huong Lien (24 Le Van Huu, Hai Ba Trung) 拍摄《Parts Unknown》节目时,一边吃着bun cha,一边喝着Hanoi的bia hoi。那一刻,这家体面的街坊餐厅变成了一个朝圣地。“奥巴马套餐”——包含bun cha、nem ran和一瓶Hanoi啤酒——现在售价约250,000 VND,套餐里还附带一张两人在桌边用餐的塑封照片。

    值得吗?Bun cha本身确实扎实:肉饼调味到位,焦香适中,蘸汁比例平衡。但你同时也为这个故事买了单。店里非常拥挤,员工习惯了接待外国游客,氛围更像是食堂式旅游,而不是本地午餐。如果你想打卡,去一次就好。不要指望在这里发现街头小店里没有的惊喜。

    同样预算下更好的选择:Bun Cha Hang Quat (74 Hang Quat, Hoan Kiem),价格在80,000–100,000 VND左右,烤架更干净,腌料中加入了一点南姜,风味更复杂。没那么出名,但更值得反复光顾。

    价格到底买到了什么

    在所有档位中,不可妥协的变量是一样的:肉下锅时炭火的温度、肉的静置时间,以及蘸汁中鱼露、糖和醋的比例。一位手艺精湛的阿婆在街头用35,000 VND做出的bun cha,永远胜过游客餐厅用燃气灶做出的300,000 VND版本。

    价格买到的是:座位的舒适度、英文菜单、刷卡支付的便利性,以及在最高档的餐厅里,你能吃到比普通空心菜和紫苏叶种类更丰富的香草拼盘。

    如果你在Hanoi(河内)只打算吃一次bun cha,那就选便宜的,午餐时间去,找那种能看到烟火气的地方。如果你想做对比,可以在早上去Hang Than,下午去Huong Lien。这两者之间的差距会让你受益匪浅。

    实用贴士

    Hanoi的大多数bun cha店只做午餐,或者午餐加早晚餐——最好在13:00之前到达以获得最佳选择。份量通常按个人计算(每人一碗蘸汁);你可以额外加点肉饼(them cha),价格为10,000–20,000 VND。吃完后,再从最近的街边摊买一杯ca phe sua da解腻,你就完整体验了Hanoi的午间精髓。
