    Dong Ba并不是那种为了迎合游客而开设的美食市场。这是一个真正的“工作市场”,顺化当地人在这里买菜、吃早餐,并为虾酱的价格讨价还价。而这里恰好也是品尝顺化美食的最佳去处,这一切倒显得顺理成章。

    地理位置与最佳造访时间

    Dong Ba位于香江(Huong River)北岸,距离Trang Tien桥仅几步之遥,距离顺化皇城约1.5公里。市场主体是一座两层高的混凝土建筑,周围环绕着向江边延伸并沿着Tran Hung Dao街分布的庞大露天摊位群。

    市场营业时间约为早上5点至下午6点,但如果你想吃得地道并感受这座城市的苏醒,请务必在早上8点前到达。到了上午中段,最好的“Bun bo Hue”摊位往往已经售罄,而且室内区域的光线——阳光穿过肉汤蒸汽形成的束状光影——是你在一天中其他时间无法看到的。

    Bun bo Hue:源头风味

    “Bun bo Hue”是顺化最负盛名的菜肴,在Dong Ba吃这碗面与在餐厅里坐着吃是完全不同的体验。这里的摊位几十年来一直坚持熬制同一种肉汤——浓郁的香茅味,因胭脂树红油而呈现砖红色,并以发酵虾酱作为底蕴,这种味道要么让你一见钟情,要么让你日久生情。一碗配有猪脚和猪血块的面大约需要35,000–45,000 VND。指着你想加的配料,坐在塑料凳上,趁热大快朵颐吧。

    Com hen:游客最容易错过的美味

    “Com hen”是配有小蛤蜊的米饭,蛤蜊采自香江上的Cu Lao Cho岛。这道菜通常冷食(或常温),配有一碗煮蛤蜊的汤,再加上丰富的配料:猪油渣、香蕉花丝、杨桃、花生、芝麻、辣椒和一勺mam ruoc(虾酱)。它价格便宜——约20,000–25,000 VND——是你在越南(Vietnam)能吃到的口感最独特的食物之一。蛤蜊非常细小,几乎与米饭融为一体。在靠近江边入口的室内底层区域寻找Com hen摊位。

    Banh nam与平民糕点

    “Banh nam”是一种用香蕉叶包裹的扁平蒸米糕,内馅为虾和猪肉。它比其他同类糕点更柔软细腻,并带有一丝香蕉叶的清香。在Dong Ba,你会发现摊位上除了Banh nam,还有“banh loc”(木薯粉饺)和“banh beo”(配干虾仁的蒸米糕)。花约30,000 VND买一份混合拼盘,蘸着鱼露和辣椒享用。这将是你在这座城市(顺化)花得最值的30,000 VND。

    伴手礼推荐

    Dong Ba的非食品区——斗笠、漆器、布料——虽然不错,但并不特别。食品区才是Dong Ba在任何严肃旅行清单中占有一席之地的原因。

    Mam ruoc Hue是定义这座城市美食的发酵虾酱。顺化版本的虾酱比南部的颜色更浅,味道更浓郁。你可以在市场各处找到密封罐装的虾酱,根据大小售价约为30,000–50,000 VND。只要密封得当,它非常易于携带,回家后加一勺在方便面里,那种提鲜效果难以言表,试过便知。

    顺化海盐产自城市东南部的Dam Cau Hai泻湖,在干货区有售。它比超市里的盐颗粒更粗,碘含量更低,当地厨师非常推崇用它来腌制和调味。一公斤价格极低——约10,000–15,000 VND——而且非常方便打包携带。

    芝麻糖及其他甜点——“me xung”(花生芝麻脆糖)和“mut gung”(糖渍姜片)——堆放在市场入口附近,是非常好的伴手礼,且不会在机场安检时被没收。

    如何逛市场而不迷路

    Dong Ba确实很大,且布局并非专门为游客设计。室内底层是生鲜市场:农产品、肉类、鱼类和美食摊位。二楼则倾向于干货、布料和家居用品。户外区域则是最混乱也最有活力的地方——摩托车在蔬菜摊贩间穿梭,妇女们挑着“don ganh”扁担,偶尔还能看到游客站在原地不知所措地试图辨认手写招牌。

    最简单的攻略:从Tran Hung Dao街一侧进入,径直朝江边走,跟着香味走。如果你闻到了香茅和虾酱的味道,你就离早餐不远了。

    顺化的饮食文化底蕴深厚——这座城市的皇室历史塑造了一种对摆盘和对比度极其讲究的烹饪风格,这是你在越南其他任何地方都找不到的。而Dong Ba正是这一传统中朴实无华、充满烟火气的一面。

    实用贴士

    准备好小额钞票——10,000和20,000 VND的纸币——因为摊贩很少有零钱找零200,000 VND的钞票。工作日的早晨市场会非常拥挤;周末摊贩更多,人流也更多。在拥挤的室内区域,请务必将包背在身前。
