    发酵虾酱总是能将人们清晰地划分为两个阵营。在 Hanoi,它是“bun dau mam tom”的灵魂——这道由米粉、炸豆腐和白切肉组成的共享美食,是当地人午餐时的首选。如果你能克服它的气味,你一定会大饱口福。

    餐桌上究竟有些什么

    标准的餐点通常用大塑料托盘或芭蕉叶盛放,绝不会分开装盘。其组成部分包括:

    • Bun — 粗圆的米粉,通常成团摆放
    • Dau ran — 油炸豆腐块,外酥里嫩,通常上桌时还热气腾腾
    • Gio lua — 切成圆片的越南扎肉
    • Lon luoc — 切成薄片的白切五花肉或猪肩肉
    • Mam tom — 发酵虾酱,装在小碗里,通常会加入柠檬汁、糖、辣椒和少许食用油,搅拌至颜色变浅、呈现淡紫色并带有轻微的泡沫

    有些摊位会添加“cha com”(猪油炸绿豆糕/青米饼)或“long lon”(白灼猪杂)。在一些传统老店,你可能还会得到一盘新鲜香草——如紫苏叶、黄瓜片或青香蕉片,用来中和油腻感。

    如何享用

    虽然没有官方规定的吃法,但当地的节奏通常是这样的:撕下一小块豆腐,上面堆一点米粉,加一片猪肉,然后将整块食材在 mam tom 里蘸一下。虾酱的味道非常浓郁——咸鲜、独特,并带有柠檬和糖带来的淡淡甜味。你不需要蘸太多。

    豆腐是这道菜的精髓。它应该在刚上桌、外皮还酥脆的时候吃掉。在 bun dau 摊位吃到冷豆腐是一件令人遗憾的事。

    如果虾酱的味道对你来说太冲,可以先蘸豆腐,再加猪肉。猪肉和豆腐皮的油脂会大大缓解虾酱的刺激感。初次尝试的人如果直接用勺子舀虾酱吃,只会让自己感到难以接受。

    在 Hanoi 去哪吃

    Bun Dau Co Lan — Hang Khay

    位于市中心,是一家非常可靠的老字号。摊位设在 Hang Khay 的一栋狭窄店屋里,靠近还剑湖(Hoan Kiem Lake)。仅供应午餐,大约 10:30 到 14:00,豆腐卖完即止。一人份的套餐价格在 50,000 至 70,000 VND 之间,具体取决于你加了多少猪肉和 gio lua。这里的 mam tom 口味平衡——不像老城区某些店那样尖锐。

    Bun Dau Ngoc Son — Dinh Liet Street

    就在老城区的 Hang Bac 街附近。这家店吸引了更多年轻人,营业时间稍微长一点,直到 15:00 左右。价格区间相同。这里的五花肉品质始终如一——既不会煮得过老,也不会太瘦。店面非常小;做好与人拼桌的准备。

    Co Hoa — Nguyen Huu Huan

    环境更有餐厅的感觉,有正式的店面。深受午休的上班族欢迎。他们提供一种加入了 nem chua(发酵猪肉卷)的版本,非常值得一试。每人约 60,000–80,000 VND。营业时间 10:00–14:30。

    配什么饮料

    冰镇“bia hoi”是经典搭配——这种清淡、新鲜酿造的生啤能直接化解虾酱的咸味。步行范围内任何一家 Hanoi 的 bia hoi 街角店都可以。如果你是上午吃,甘蔗汁(nuoc mia)也能起到同样的作用,且不含酒精。避免饮用任何甜味碳酸饮料;它们会与 mam tom 的味道冲突,而不是平衡它。

    餐后喝“越南咖啡”,而不是餐前。Ca phe 适合在饭后作为清口饮品,而不是虾酱的伴侣。

    人们常犯的错误

    点餐太保守。因为 mam tom 的气味具有冲击性,初次尝试的人往往会退缩——只点一小份、不要猪杂、只点基础款。结果就是吃了一顿平淡的午餐,没能体会到这道菜的精髓。一定要点五花肉,点 gio lua,如果摊位有的话,一定要点 cha com。这道菜的意义就在于托盘上的丰盛感。

    另外:这是一道午餐菜肴。Hanoi 的大多数 bun dau 摊位在 10:00 开门,15:00 前就收摊了。如果你 18:00 才跑去想吃 bun dau,是吃不到的。

    实用贴士

    带上现金——每人 50,000 到 100,000 VND 就足以享用一顿包含饮料的丰盛午餐。大多数摊位都是路边摊,配有矮小的塑料凳;请穿着合适的服装。mam tom 的气味会残留在衣服上,在去博物馆参观前最好留意这一点。
