    Saigon 的饮食灵魂在于“hu tieu”,正如 Hanoi 的灵魂在于 pho 一样——它既是默认的早餐,也是宿醉后的救星,还是晚上 11 点的宵夜,一碗即可满足所有需求。如果你曾路过那些摆满猪骨、干鱿鱼和虾片的摊位,却不知如何下手,那么这篇文章就是你的入门指南。

    让新手感到困惑的是,Hu tieu 并非只有一种。你在 Saigon (사이공 / 西贡 / サイゴン) 最常遇到的三种版本是:

    My Tho 风格

    源自前江省的 My Tho。汤底更清淡、更甜,通常会淋上一勺猪油。米粉更细。这是大多数游客心目中的经典款。

    Nam Vang 风格

    “Hu tieu Nam Vang”(金边风格,由柬埔寨华裔社区引入)口味稍浓郁,通常配有猪杂、整虾,有时还会现场打入一颗生鸡蛋。由于使用了干比目鱼,汤底带有一种更深邃、圆润的鲜甜味。

    Kho — 干拌版

    如果你在菜单或招牌上看到“kho”,或者写着 hu tieu kho,这意味着米粉会拌上猪油和调料,并附赠一小碗汤供你搭配饮用。配料相同,但体验截然不同。口感更突出,略带粘稠感,非常适合在炎热天气里觉得喝热汤太沉重的人。

    如何点餐

    Saigon 的大多数 Hu tieu 店都是只卖这一种食物的摊位或小型店面。如果有菜单,通常是一张塑封卡片或写在墙上。你需要了解以下几点:

    1. 决定:nuoc(汤面)还是 kho(干拌)。 指着菜单说 nuoc 或 kho,店员就能听懂。

    2. 决定:lon(大份)还是 nho(小份)。 小份通常足够作为早餐,如果作为正餐,建议点大份。

    3. 说明你不想要什么。 不吃猪肝?说 khong gan(不要肝)。不吃虾?说 khong tom。大多数摊位都习惯了这种要求。

    4. 在桌上进行调味。 每张桌子上都有调料架:tuong den(甜面酱)、tuong ot(辣椒酱)、鱼露、糖、新鲜辣椒、白胡椒粉。在添加任何调料前先尝一口——好的店,汤底本身就已经足够美味。

    5. 先吃配菜。 把豆芽和韭菜放入碗中,挤入青柠汁,然后尽快食用。Hu tieu 的米粉比 pho (쌀국수 / 越南河粉 / フォー) 的米粉更容易变软。

    Saigon 推荐去处

    Hu Tieu Nam Vang Ly Canh Hoa — 96 Vinh Khanh, District 4。城中最受推崇的 Nam Vang 店之一。早上 6 点左右开门,通常 10 点就卖光了。根据配料不同,每碗价格在 50,000–70,000 VND 之间。从 Bui Vien 打车到第 4 区只需 10 分钟。

    Quan Ky — 167B To Hien Thanh, District 10。老派店面,营业时间大致为早上 6 点到下午 1 点。以清澈的汤底和足量的猪肉配料闻名。价格约 45,000–55,000 VND。

    Hu Tieu My Tho Thanh Xuan — 159 Nguyen Trai, District 1。如果你住在背包客聚集区,这里非常方便。My Tho 风格,汤底清淡,品质稳定。营业时间为早上 6 点至中午,价格 40,000–60,000 VND。

    至于干拌版,任何在 Nguyen Thi Minh Khai 沿线或 Cho Lon (第 5-6 区) 挂着 hu tieu kho 招牌的摊位都值得一试——那一带是城中华裔 Hu tieu 摊贩最集中的区域。

    一些值得了解的事

    在大多数摊位,Hu tieu 主要是早晨到中午的食物。如果你下午 2 点才到,很多店可能已经关门或者汤底卖光了。晚上出现在 Ben Thanh Market 附近或 Nguyen Chi Thanh 沿线的摊位通常是另一种更简单的经营模式——虽然也不错,但汤底深度不及早市。

    有些摊位免费提供的虾片 (banh phong tom) 不是装饰品——将其掰成两半放入汤中。它们会变软,口感介于油炸面包丁和饺子皮之间。

    如果你已经在探索 Saigon 更广阔的面食世界,“bun rieu”和“banh canh (반깐 / 粗米粉汤 / バインカイン)”是自然的下一站——两者都是南方特色,与 Hu tieu 有很大不同,且都可以在早餐时段吃到。

    实用小贴士

    上述大多数店每碗预算在 40,000–70,000 VND 之间。建议在早上 9 点前到达,以获得最好的汤底和最丰富的配料选择。请准备好小面额现金——大多数 Hu tieu 摊位不接受刷卡。
