    稻草烤黑鱼——即“ca loc nuong trui”——是一道听起来简单,但只有吃对了才懂其精髓的菜肴:整条鱼埋在燃烧的稻草中,鱼皮被烤得焦黑,鱼肉在内部被焖熟,上桌后现剥开,配上米纸、新鲜香草、青芒果丝和浓郁的“nuoc cham”(蘸水)一起卷着吃。在Can Tho,这道菜做得比任何地方都好,而最地道的版本往往不在Ninh Kieu码头旁的游客街上。

    你到底在吃什么

    Ca loc就是黑鱼,一种在湄公河三角洲各地养殖和野生的厚身淡水鱼。“Nuong trui”指的是稻草火烤法:整条鱼不剖肚、不去鳞,直接放入燃烧的稻草堆中。鱼鳞会被烧焦,起到保护壳的作用。上桌后,你用手剥掉鱼鳞,露出里面鲜嫩、带有烟熏味的鱼肉。如果你胆子够大,鱼的内脏——尤其是鱼肝——非常值得一尝;它们吸收了最浓郁的烟熏味。

    整个用餐的精髓在于“卷”。你会得到一篮“banh trang”(米纸)、一盘混合香草(紫苏、鱼腥草、黄瓜、豆芽)、青芒果丝,有时还有切片的杨桃或香蕉花。将所有食材卷在一起,用力蘸上nuoc cham。好的店里,蘸水的味道平衡感极佳——不会太甜,且带有充足的蒜末和新鲜辣椒。

    巷弄美食清单

    Quan Ca Loc Ba Sau — Hung Loi区

    当你认真打听时,当地人一定会推荐这家。Ba Sau在Tran Phu街的一条窄巷里烤鱼已经超过十年了。稻草火就在店门前燃烧——你还没看到招牌,就会先闻到香味。一条完整的ca loc(约600–800克)价格在120,000–150,000 VND之间,取决于重量。他们会将带着鱼鳞、还在冒烟的鱼放在香蕉叶上端上桌。这里的香草盘非常丰盛,还包括了大多数面向游客的餐厅会省去的鱼腥草(“rau diep ca”)。营业时间大致为10:00–14:00及16:30–20:30。周一休息。

    Quan Muoi — Le Loi街31巷

    这家店更小、环境更粗犷,价格也稍便宜些。这里的ca loc价格在100,000–130,000 VND左右。老板现点现烤,所以忙碌时请预留10–15分钟的等待时间——利用这段时间从门口的冷藏柜里点一瓶冰镇的“bia hoi”。这里的nuoc cham非常出色:他们使用新鲜辣椒和大蒜现场调制,而不是使用预先装瓶的成品。寻找巷口手绘的鱼形招牌;店里没有英文标识。每天11:00–21:00营业。

    Co Tam's Place — Cai Rang区,靠近水上市场

    如果你早上打算去Cai Rang水上市场(距离市中心以南约6公里),Co Tam's是享用早午餐的理想停靠点。她在自家前院摆了四张桌子,鱼是从步行距离内停靠的船上直接采购的,因此新鲜度非常有保障。每条鱼价格为110,000–140,000 VND。营业时间比较随性——她通常在08:30开始烤鱼,中午左右就卖完了。如果可以的话,建议提前打电话预订;可以请你住的旅馆帮忙。

    关于点餐的几点实用建议

    大多数这类店是按重量而非按条计价。当鱼端上来时,你会看到鱼皮完全是黑色的——这是正常的。不要要求他们在厨房里剥皮;剥皮是体验的一部分,而且鱼鳞剥掉后鱼肉很快就会变凉。如果你想要额外的青芒果(“xoai xanh”),请尽早提出——有些店续加会额外收取15,000–20,000 VND。

    素食主义者在这里也能吃得很开心。香草和芒果卷本身就很扎实。鱼是主角,但卷食的仪式感让你能自由控制摄入量。

    饮品方面,这些都是啤酒和冰茶店。不要指望有鸡尾酒单。如果你是在午餐时段用餐,从外面的小摊买一杯“ca phe sua da”作为收尾是不错的选择。

    如何前往

    Can Tho的巷弄美食场景最适合通过xe om(摩托车出租车)或租用自己的摩托车来探索——从Ninh Kieu附近的旅馆租车每天大约100,000–120,000 VND。如果你直接搜索越南语名称,Google地图可以定位到大多数这些地点。至于Co Tam's,直接在Cai Rang市场询问即可;那里的摊贩会为你指路。

    实用须知

    Ca loc nuong trui是一道午餐和晚餐早段的菜肴——大多数店在21:00前就关门了,而稻草烤鱼店往往会提前卖完。去的时候要带着饥饿感,尽早出发,千万别错过nuoc cham。
