    富国岛的东海岸没有度假村的喧嚣,这正是 Ham Ninh 村依然保持原汁原味的原因。每天清晨,木船从浅滩归来,载着“ghe”(小蓝蟹),它们在登陆后的几小时内就会被蒸熟。仪式很简单:盐、青柠、现磨胡椒。没有花哨的酱汁,没有黄油,全靠螃蟹本身的鲜甜。

    Ham Ninh 螃蟹有何不同

    Ham Ninh 的 ghe 并非你在 Duong Dong 海鲜餐厅见到的那种大肉泥蟹。它们只有手掌大小,壳薄,如果在 3 月到 8 月之间前往,蟹黄饱满。蟹肉清甜,带着一丝源自浅海滩的咸鲜。摊贩们将螃蟹整只放入穿孔金属盘中,在沸水中蒸熟——水中不加任何调料,只靠高温。你坐在塑料桌旁剥开蟹壳,蘸上 muoi tieu chanh(瓶盖里混合的盐、胡椒和青柠汁),一口接一口,直到手指酸痛。

    价格参考:中小型螃蟹每公斤 150,000–200,000 VND,大型多黄母蟹每公斤 220,000–280,000 VND。两人份的完整餐点——螃蟹加上一盘烤鱿鱼——在村里的任何摊位通常都不会超过 500,000 VND。

    推荐据点

    Quan Ghe Ba Lua

    距离 Ham Ninh 码头最近的摊位,由一位从 21 世纪初就开始蒸蟹的老板娘经营。她直接从两三艘相熟的船只处进货,这意味着周转极快,螃蟹新鲜度有保障。餐桌延伸至水上的狭窄木甲板。每天约 6:30am–12:30pm 营业。卖完即止,没有第二批。普通 ghe 价格约为 170,000 VND/kg。

    Quan Hai San Thanh Trung

    位于滨水区后方,从码头沿村主路向北走约 80 米。座位更多,节奏较慢,如果你想换换口味,这里还卖蒸皮皮虾(tom tich)。这里的 ghe 平均个头稍大。营业时间 7am–2pm。根据大小,价格在 180,000–210,000 VND/kg 不等。如果 Ba Lua 已经坐满,这里是一个稳妥的选择。

    Quan Ghe Co Lan

    规模较小——最多四张桌子——由一位老妇人和她的女儿经营。当地人特别推荐在旺季来这里吃蟹黄蟹(ghe gach)。诀窍是 8 点前到达;到了 9:30am,蟹黄蟹通常就卖光了。位于鱼类卸货区后方,寻找绿松石色墙壁上的手绘招牌。没有固定营业时间——她随船捕捞情况开张,卖完即关门。ghe gach 价格约为 200,000–250,000 VND/kg。

    Nha Hang Ham Ninh

    Ham Ninh 规模最大的餐厅,有正规菜单、冷藏展示柜,能接待旅游团。味道不错,螃蟹新鲜,服务更快,还会提供洗手碗。但价格较高——250,000–300,000 VND/kg——体验更像是一家普通海鲜餐厅,而非渔村风味。如果你和需要空调和英文菜单的同伴一起,这里值得考虑。如果没这个需求,不建议放弃那些小摊位。

    避雷指南: 任何在 Duong Dong 夜市附近打着“Ham Ninh 螃蟹”招牌的海鲜餐厅。螃蟹是否来自 Ham Ninh 很难说——你多付了 30–40% 的溢价,买的只是名号和游客区位置,且无法核实产地。如果你想吃正宗的,请从 Duong Dong 向东开车 12 公里。

    Quan Ghe Anh Tuan

    2021 年左右开业的新摊位,由一对年轻夫妇经营,他们同时也经营船游业务。他们开始提供海鲜套餐(ghe + 烤鱼 + 蒜蓉炒空心菜),每人 350,000 VND,如果你想吃一顿完整的餐点而不仅仅是螃蟹,这性价比不错。ghe 的质量很稳定,他们和大家一样从当地渔民处进货。每天 7am–1pm 营业。

    令人垂涎的蒸蟹摆盘精美,突显其鲜艳的色泽和绝佳的口感。

    交通方式

    Ham Ninh 村位于富国岛(Phu Quoc)东海岸,距离 Duong Dong 约 12 公里,距离 An Thoi 以北 8 公里。最简单的方式是租一辆摩托车(在 Duong Dong 租金约为 120,000–150,000 VND/天),沿着穿过胡椒农场的路向东行驶。Google Maps 导航很准确。Grab 和当地出租车也可以到达——从 Duong Dong 出发单程预算 100,000–130,000 VND。

    一定要早去。Ham Ninh 的早晨非常惬意——船只陆续归来,村子里弥漫着海水和炭火的味道,螃蟹也处于最鲜美的状态。中午才到的话,运气好能吃到当天的最后几只,运气不好就只能感受残余的氛围了。

    实用贴士

    上述所有摊位仅收现金;请准备小额钞票。村里没有 ATM 机——出发前请在 Duong Dong 取好现金。螃蟹旺季是 3 月至 8 月,此时蟹黄饱满,但 Ham Ninh 全年都有 ghe 供应;在旺季之外,你吃到的螃蟹肉质会稍微瘦一点,但依然美味。
