    Da Lat 出产着越南大部分的温带蔬菜——草莓、洋蓟、苤蓝、香菇,以及十几种在 Hai Van Pass 以南很难存活的绿叶蔬菜。这种农业优势,加上该市寺庙中悠久的佛教素食传统,意味着这里的植物基饮食并非从 Saigon 的外籍人士咖啡馆中引入的潮流,而是当地人习以为常的饮食方式。

    佛教素食基准

    在“纯素”(vegan)这个词出现在 Da Lat 的任何黑板上之前,佛教的“com chay”(素食米饭)就已经在滋养这座城市了。在农历初一和十五,城里几十家小型的 com chay 店里挤满了当地人,他们享用着豆腐、炖菠萝蜜、用面筋和大豆制成的素肉,以及当周从农场运来的各种蔬菜。

    位于 Phan Dinh Phung 的 Com Chay Nhu Y 是一家可靠的常驻餐厅,每天营业,不仅限于农历斋日。一份包含米饭、两到三种配菜和汤的套餐价格约为 35,000–50,000 VND。不要指望有英文菜单;直接指向入口处展示柜里看起来不错的菜品即可。如果蘑菇豆腐煲有供应,绝对值得等待。

    植物基火锅

    “Lau chay”(素食火锅)是 Da Lat 名副其实的招牌,绝非群体中不吃肉者的退而求其次之选。这里的高地蘑菇品种是关键:杏鲍菇、木耳、金针菇和干香菇共同熬制出汤底,无需猪肉或鸡肉高汤,味道依然层次丰富。

    位于 Truong Cong Dinh 的 Quan Chay Thien Tam 是大多数当地人推荐的 lau chay 去处。汤底以香茅和淡淡的辣椒调味,蔬菜拼盘——小油菜、空心菜、切片苤蓝——反映了当天早晨在 Cho Da Lat 最便宜且最新鲜的食材。每人预算约 120,000–160,000 VND 即可享用丰盛的一餐,如果两人用餐且点餐简单,费用会更低。

    拥有出色素食菜单的山间咖啡馆

    Da Lat 的咖啡馆场景倾向于戏剧化——带有秋千的园林咖啡馆、建在松树覆盖山坡上的云端咖啡馆,以及设计得像图书馆或欧洲火车站的室内空间。大多数咖啡馆在提供好咖啡的同时,食物却平平无奇。但有几家确实值得一试。

    位于 Ho Xuan Huong 湖附近的 An Nhien Garden Cafe 拥有一个对蔬菜采购非常讲究的小厨房。菜单会不定期更换,但像芝麻烤茄子、吐司配炒高地蘑菇和蔬菜粥等轮换菜品经常出现。他们的“ca phe sua da”——越南冰奶咖啡——使用的是来自市区外 25 公里处 Cau Dat 农场的自烘焙咖啡豆。主菜价格在 65,000 到 95,000 VND 之间。

    位于 Hoang Dieu 的 Goc Ha Thanh 经营风格更安静——没有那么多网红打卡布置,但食物更好。厨房制作的“banh mi”非常扎实,配有烤豆腐、腌萝卜以及用腰果和烤大蒜自制的素肉酱。售价 45,000 VND,且口感融合得恰到好处,这比大多数仿制品要好得多。

    如果你想尝试“egg coffee”——河内那种浓郁、带有蛋奶冻顶层的咖啡——请注意它显然不是纯素的。大多数列出此项的 Da Lat 咖啡馆使用的是真正的蛋黄。目前有少数几家提供椰奶版本,口感接近;如果这对你很重要,请专门询问“ca phe kem dua”。

    农产品市场也是一大亮点

    Da Lat 的 Cho Da Lat——位于 Nguyen Thi Minh Khai 的中央市场——即使你不打算做饭,也值得慢慢逛逛。地下一层出售的农产品价格低得惊人:一大袋新鲜草莓仅需 20,000 VND,成捆的莳萝和越南香菜几乎不花钱,成筐的小洋蓟按重量出售。

    楼上有熟食摊位,你可以吃到“banh trang nuong”(烤米纸),如果要求的话,可以点纯素版本,上面撒上葱油,并用碎花生代替干虾米。根据大小,价格为 15,000–25,000 VND。

    如果你住的地方有厨房,位于 Le Hong Phong 的早市(一个规模较小、较少针对游客的市场)是餐厅采购员在早上 7 点前购物的地方。早点去,蘑菇摊主通常会让你先尝后买。

    没有菜单时如何点餐

    Da Lat 并非每家餐厅都有英文菜单或“纯素”标签——但掌握几句 越南语短语 会很有帮助。“Toi an chay”(我吃素)在任何地方都通用。加上“khong trung, khong sua”(不要蛋,不要奶)可以进一步明确要求。大多数 com chay 店默认是全植物基的;唯一的问题是它们是否在配菜酱汁中使用了鱼露,有些店会用。如果这对你很重要,可以询问“co nuoc mam khong?”。

    实用提示

    Da Lat 海拔 1,500 米,即使在旱季(11 月至次年 4 月),夜晚也非常寒冷,晚餐来一碗 lau chay 再合适不过了。这座城市很紧凑——大多数这些地方都在中央湖泊 2–3 公里范围内,步行或乘坐短途 xe om 即可到达。在这里,素食选择通常比沿海城市更容易找到,主要是因为高地的生长季节提供了大量无需任何动物产品即可烹饪的优质食材。
