    芹苴(Can Tho) 作为美食之都常被低估。大多数游客只是为了去丐冷(Cai Rang)水上市场打个卡就离开,但如果你在这里过夜,当地的一碗“hu tieu My Tho”绝对值得你留下来吃顿早餐。

    芹苴版有何不同

    Hu Tieu My Tho 起源于东北约 100 公里外的美萩市(My Tho),但湄公河三角洲(Mekong Delta)有一种将美食吸收并悄然改良的本领。芹苴版的口味比南部更受金边风格影响的口味要甜一些,猪骨汤底熬制时间更长,呈现出微微浑浊的浓郁感。配料通常很丰富:薄切猪肉片、整只鲜虾、半个鹌鹑蛋,有时还会加入一点干鱿鱼来增加风味层次。面条本身是细且微透明的米粉——不是那种“bun”面——你可以选择带汤的,或者干拌(kho)并配上一碗清汤。

    如果你想品尝食材的原味,建议点干拌(kho)。汤会装在一个小碗里供你啜饮,吃之前先将面条与一勺猪油和鱼露拌匀。味道比听起来要好得多。

    Quan Hu Tieu Ba Lua

    当你问当地人他们平时去哪吃时,他们指的通常就是这家。Ba Lua 在同一间狭窄的店面里已经经营了二十多年。汤底偏甜——有些人可能会觉得太甜,但这种甜味被白胡椒的辛辣和自己添加的生豆芽平衡得恰到好处。鹌鹑蛋总是煮得刚刚好:蛋白凝固,蛋黄流心。尽量在早上 8 点前到达,否则剩下的食材可能就不多了。

    Hu Tieu Kho Co Tam

    地址: 47 Tran Phu, Ninh Kieu District 营业时间: 早上 6:00 – 12:00 价格: 30,000–40,000 VND

    Co Tam 是这份名单上的干拌面专家。她在这个街角经营多年,这里的干拌面是衡量其他店的标准。面条端上来时是不加调料的——你需要自己加入猪油和调味品,然后边吃边喝汤。虾虽小但很新鲜,猪肉片薄而嫩。只收现金,塑料凳,没有英文菜单。直接指着旁边人吃的东西点单即可。

    丐冷(Cai Rang)水上市场摊位

    交通: 位于芹苴市中心以南 6 公里处,经由 Cai Rang 大桥 营业时间: 早上 5:00 – 8:00(此后提供食物的船只迅速减少) 价格: 40,000–55,000 VND

    没错,这是游客市场,价格也确实反映了这一点。但那些 hu tieu 船——通常有两三艘,很容易通过汤锅辨认出来——卖的正是附近批发商们早餐吃的那种面。在宁桥(Ninh Kieu)码头租一艘小划船(90 分钟约 150,000–200,000 VND),让船夫把你带到面条船旁边。清晨 6 点在河上吃面,薄雾笼罩在河面上,这种体验才真正配得上它的名气。这里的汤底往往比店面里的要清淡——水上市场的厨师似乎知道游客更喜欢清淡的口味。

    Hu Tieu My Tho Thanh Xuan

    地址: 119 Ly Tu Trong, An Hoa Ward 营业时间: 早上 6:00 – 1:00 价格: 35,000–50,000 VND

    这家店离河滨稍远,这意味着食客几乎全是当地人。如果你想吃一碗配料更齐全的面,Thanh Xuan 是首选——他们在标准配料的基础上增加了炸葱、一勺猪油渣和细干鱿鱼丝。汤底有一种更深沉、略带烟熏的味道,我猜是因为汤底里加了烤洋葱。老板的儿子负责早上的忙碌时段,动作非常快。如果需要咖啡提神,隔壁摊位有不错的“ca phe sua da”。

    Quan Hoa – Hu Tieu Chay (素食选择)

    地址: 88 De Tham, Binh Thuy District 营业时间: 早上 6:30 – 11:00 价格: 25,000–35,000 VND

    并不是每个人早上 6 点都想吃猪肉,Quan Hoa 提供的素食 hu tieu 并不会让你觉得是在将就。以蘑菇为底的汤头,配上豆腐、炸葱和同样的细米粉。味道清淡但层次丰富——他们用了干香菇和昆布来熬汤。对于素食旅行者或在佛教斋戒日(农历初一和十五,许多当地人会吃素)出行的游客来说,这家店非常值得推荐。

    避雷指南

    夜市附近 Hai Ba Trung 街角的那家大型 hu tieu 店——很容易找到,因为菜单上有照片,还有人站在外面招揽客人。汤底尝起来像是调料包冲出来的,虾是冷冻的,价格(65,000–75,000 VND)几乎是你在两条街外吃到更好品质面条的两倍。这家店的位置专门针对刚到达、还没熟悉环境的游客。

    实用贴士

    除了水上市场,所有这些地方都在午后关门——在湄公河三角洲,hu tieu 绝对是早餐和早午餐。请准备好小额钞票(10,000 和 20,000 VND 面额);路边摊很少有零钱找补 500,000 的大钞。如果你打算顺便逛逛芹苴中心市场,宁桥河滨附近的店铺距离该区大多数旅馆都在步行范围内。
