    Tra Vinh 的 Khmer 社区每年只制作一次“com dep”,如果错过了这个季节,就得再等十二个月。这是一种极难保存和运输的食物——它软化得很快,会吸收周围的一切味道,而且在制作完成后的几个小时内口感最佳。

    Com Dep 究竟是什么

    它的名字意为“扁米”。人们将尚未完全变硬的嫩糯米收割下来,在陶罐中干炒,然后在石头或木制臼中捣碎,直到每粒米都变成薄薄的、略带嚼劲的薄片。它的绿色来自谷物本身:未成熟的稻米仍含有叶绿素,上乘的 com dep 呈现出淡淡的玉色,随着干燥会逐渐褪成黄绿色。

    这与北方的“com”不同。Hanoi 的 com——在西湖周围用荷叶包裹着出售——同样源于嫩糯米的概念,但加工方法有所不同。北方的 com 更软、更香,通常直接食用或压成糯米糕。而 Tra Vinh 的 com dep 则更干、更扁,略带烘烤味,适合与湿润、富含油脂的配料一起食用,使其重新变软。

    与 Ok Om Bok 节的渊源

    “Ok Om Bok”——Khmer 人的拜月节——落在 Khmer 农历十月十五,通常是公历的 11 月。这是集中在 Tra Vinh 和 Soc Trang 省的 Khmer Krom 社区的主要丰收节日。

    Com dep 是 Ok Om Bok 节的核心祭祀食品。家家户户在家里准备好,带到寺庙作为供品献给月亮。长辈们祈求风调雨顺、五谷丰登和社区平安时,孩子们便在一旁享用它。到了早晨,祭祀用的部分已经吃完,剩下的则在接下来的一两天内留在家里慢慢吃。

    在这个节日窗口期(大约在 11 月满月前后的两到三周)之外,新鲜的 com dep 真的很难找到。有些家庭会在 4 月的 Khmer 新年(“Chol Chnam Thmay”)制作小批量,但 11 月的秋收批次才是重头戏。

    如何食用

    标准的搭配是新鲜刨丝的椰肉和熟透的香蕉。椰子增添了这种朴素谷物所需的油脂和甜味;而香蕉——通常是南方常见的短小、富含淀粉的“chuoi su”品种——赋予了它醇厚的口感。抓一小把 com dep,拌上一匙椰丝,再压上一片香蕉,一口吃下。

    有些家庭会淋上一点加了少许盐熬煮过的椰奶。还有些人会使用“nuoc duong thot not”——来自 Tra Vinh 道路两旁糖棕树的棕榈糖浆——它带有一种温和的焦糖味,与蔗糖截然不同。

    别指望这是一道复杂的菜肴。Com dep 是一种质朴的食物:三四种食材,无需加热,围坐在矮桌旁即可享用。它的乐趣在于口感——被压扁的谷物带来的微微嚼劲,在椰子的油脂中逐渐化开。

    在 Tra Vinh 哪里可以找到它

    在 Ok Om Bok 期间,Tra Vinh 市 Ang Pagoda (Chua Hang) 周围以及 Nguyen Thi Minh Khai 街沿线的市场摊位会按袋出售新鲜的 com dep。价格约为每 200g 袋装 30,000–50,000 VND,具体取决于质量以及你到达的时间。刚捣碎、还带着余温的头道鲜品卖得最快。

    位于 Chau Thanh 和 Tieu Can 区的 Khmer 村庄(距离 Tra Vinh 市均在 20–30 km 以内)才是大部分 com dep 的实际产地。如果你有摩托车并在节日周到达,顺着村里烤米的香味去寻找是个不错的策略。在家里出售的农户通常比镇上的市场拥有更新鲜的存货。

    在节日季之外,真空包装的 com dep 会出现在 Tra Vinh 的一些特产店里,偶尔也会在 Saigon 的 Ben Thanh Market 区域看到,但口感会大打折扣。而那些全年作为零食出售的膨化谷物包装版则完全是另一种产品——更脆、更干,更像米饼。

    如何前往 Tra Vinh

    Tra Vinh 距离 Saigon(사이공 / 西贡 / サイゴン)约 130 km。最直接的路线是途经 Vinh Long——可以从 Saigon 的 Mien Tay Bus Station 乘坐巴士(约 3.5 小时,100,000–130,000 VND),也可以乘坐私家车。这里没有火车。在 Ok Om Bok 期间,该省会涌入大量国内游客,变得非常繁忙,因此提前几天预订 Tra Vinh 市的住宿是明智之举。节日活动本身集中在 Co Chien River 的 Binh Long 和 Cung Hau 河段,那里会举行为期两天的赛船活动。

    实用提示

    Com dep 不易保存——最好在制作当天吃完,最迟不要超过第二天早上。如果你打算买回家,特产店的真空包装袋可以保存几周,但口感远不及正宗的新鲜货。如果你想体验节日的氛围,请在 11 月前往;如果你想体验 Chol Chnam Thmay 并享受一个更宁静的省份,4 月也是个不错的选择。
