    一碗“com hen”——由米饭铺上小河蛤、切碎的香蕉花、花生、炸猪皮,再淋上一大勺“mam ruoc”(发酵虾酱)制成——是越南最重口味的早餐之一。这道菜源自顺化市中心以东香江上的一个小岛——Hen Island (Con Hen),自 19 世纪以来,当地妇女便一直在那里捕捞小蛤蜊。这道菜在顺化随处可见,但价格决定了你所获得的体验,而且往往并不总是你预想的那样。

    平价之选:20,000–35,000 VND

    最正宗的 com hen 体验是坐在低矮的塑料凳上,看着一位大姐从锅里盛出蛤蜊汤,那碗菜组装的速度比你找到座位还要快。这些摊位开门很早——最晚到上午 10:00——而且很快就会卖光。如果你 9:30 才到,可能只会看到一个擦得干干净净的空推车。

    位于 Vy Da 街区 Truong Dinh 路 11 号的 Quan Com Hen Ba Tuyet 是当地人最常推荐的店。一碗售价 25,000 VND。你会得到一份米饭(如果你喜欢面条,也可以选“bun hen”)、一堆用香茅和辣椒油炒过的蛤蜊肉、切碎的香草、烤花生、芝麻脆饼,以及旁边的一小杯蛤蜊汤。Mam ruoc 是单独提供的,这样你可以根据自己的口味调整咸鲜度。这里的座位是共享式的,略显混乱。但这正是它的精髓所在。

    沿着 Nguyen Phuoc Nguyen 街,靠近 Hen Island 的地方,有几家无名摊位从早上 6:30 左右开始营业。价格在 20,000–25,000 VND 之间。蛤蜊是当天早上从河里捞上来的——这在顺化(Hue)已是极致的新鲜。没有英文菜单,没有招牌,没有 Wi-Fi。带上现金,点餐,然后快速吃完。

    在这个价位,你得不到的是:空调、有靠背的椅子,或者每次用餐的一致性。如果那一周蛤蜊收成不好,你的分量也会相应减少。

    中端之选:50,000–80,000 VND

    一些坐式餐厅凭借更用心的制作方式赢得了声誉,同时又没有将价格抬高到游客价位。

    位于 Pho Duc Chinh 路 11 号的 Hanh Restaurant,营业时间从早上 7:00 左右到中午,吸引了当地上班族和做过攻略的游客。这里的一碗售价为 55,000–65,000 VND。与路边摊的区别在于:蛤蜊肉的分量更稳定,脆饼是自家制作的,吃起来非常酥脆,而汤——你应该在吃的时候喝一点来清口——更清澈、更香。Mam ruoc 依然是主角,本该如此。

    Hanh 的菜单上也提供“bun bo Hue”,如果你和不习惯早上吃蛤蜊的人同行,这里是一个可靠的选择。

    高端之选:100,000–150,000 VND

    顺化有几家餐厅——大多针对住在 Imperial Citadel 附近或 Le Loi 沿线的、对美食好奇的游客——将 com hen 重新包装成了一种精致的用餐体验。你可以期待桌布、介绍菜肴历史的菜单,以及英语流利、能为你讲解调味品的员工。

    位于 Le Thanh Ton 路 7 号的 Tinh Gia Vien 坐落在一座修复后的花园别墅内,将 com hen 作为顺化皇家菜肴的一部分供应。单份价格在 120,000–140,000 VND 左右。摆盘非常讲究:配料分开摆放,脆饼更厚且略带甜味,蛤蜊肉的烹饪也更考究。汤经过过滤和调味,其水准是路边摊无法比拟的。

    它更好吃吗?这取决于你的需求。这里的 mam ruoc 味道更温和,有些人会喜欢,而另一些人则会觉得失去了灵魂。餐厅环境非常优美——一座 19 世纪的木屋,带有一个花园——这也是你支付溢价的一部分原因。如果你在顺化待上两三天,想了解这道菜的文化背景,那么在这里吃一次,同时在其他地方尝试一次平价版,是一个合理的方案。

    究竟有什么变化(以及什么没变)

    在所有三个价格区间,这道菜的核心并没有太大变化:蛤蜊、米饭、花生、脆饼、香草、mam ruoc、汤。无论你在哪里吃,蛤蜊都来自同一条河流。变化的是制作工艺——蛤蜊的烹饪方式、脆饼的制作、汤的收尾——以及用餐环境。

    Mam ruoc 是关键。在路边摊,它味道浓郁且未经修饰。在高端餐厅,它被调得更柔和。如果你是第一次尝试发酵虾酱,餐厅版本更容易接受。如果你已经在顺化吃了几天的饭,味蕾已经适应了,那么路边摊的版本会带给你完全不同的冲击力。

    一个实用的建议:com hen 是一道早餐。到了中午,大多数正经的摊位要么关门,要么已经卖光了。请提前规划,不要试图把它当作午餐。

    实用信息

    所有价格均以越南盾为单位,截至 2025 年年中准确;路边摊的价格可能会在没有通知的情况下略有上涨。Hen Island 本身可以通过 Nguyen Sinh Cung 街的一座小桥进入——即使你在城里的其他地方吃 com hen,也值得去那里走走,看看蛤蜊究竟来自哪里。
