    "Bun quay" 大致可以翻译为“搅拌面”——你会得到一碗粗而略带嚼劲的米粉,配上一堆虾、鱼饼和鱿鱼,旁边还有一小碗浓郁、微甜的汤底。吃法是将汤底亲自淋在面上,加入一勺特制的虾酱辣椒酱("mam ruoc"),挤入一点青柠汁,搅拌均匀直到面条挂满汤汁。这是 Phu Quoc 特有的美食,你在越南其他任何地方都找不到这种吃法。大多数游客都是偶然发现它的,之后便会立刻疑惑为什么没人早点告诉他们。

    这里的面条是现做的,比普通的细米粉更粗、更有弹性。汤底以干虾和猪骨为基础,比牛肉汤更清淡,带有一丝淡淡的海鲜甜味。一碗好面与平庸之作的区别在于 mam ruoc 酱和海鲜的品质。Phu Quoc 的渔船至今仍能捕捞到新鲜的鱿鱼和虾,因此最好的摊位每天都会采购新鲜食材,口感自然不同。

    这是岛上最老字号的 Bun quay 摊位,可以说是该菜品的标杆。Co Phuong 经营这家店已经超过 20 年了。这里的汤底比大多数竞争对手颜色更深,虾味也更浓郁——她在熬制汤底前会先将干虾烤香。请在 9:00 前到达,否则一半的配料可能就卖完了。这里的鱿鱼始终保持新鲜,完全不会有橡胶般的口感。只收现金,不会说英语,提供塑料凳和纸巾——这才是地道的样子。

    Bun Quay Thanh Hai

    营业时间: 6:30–12:00
    价格: 45,000–60,000 VND

    这里的环境比 Co Phuong 稍微正式一点——有真正的椅子,有带图片的印刷菜单,员工也能通过手势与不会说越南语的顾客沟通。这里的 mam ruoc 酱味道更浓烈,发酵味更重,有些人非常喜欢,有些人则觉得太刺激。鱼饼切得较厚,上桌前经过煎制,增加了口感。即使在周末排长队时,品质依然稳定可靠。

    Quan 60 (Bun Quay 60 Nguyen Trai)

    地址: 60 Nguyen Trai, Duong Dong
    营业时间: 7:00–13:00
    价格: 40,000–50,000 VND

    这是一家规模较小的家庭经营店,大约有八张桌子。分量对得起价格,辣椒酱有三种辣度可选——微辣、中辣,还有一种真的能让你通鼻塞的超辣。值得一提的是:他们会额外提供一小份新鲜香草(rau ram、豆芽、香蕉花丝),这是大多数其他 Bun quay 摊位所没有的,让整碗面吃起来更完整。9:30 左右当地工人来吃“二顿早餐”时会非常忙碌。

    一碗令人垂涎的亚洲海鲜汤面,配有虾和蔬菜。非常适合美食爱好者。

    Bun Quay Anh Dung

    地址: Ham Ninh 渔村,位于 Duong Dong 以东约 12 公里处
    营业时间: 7:00–11:00(售完即止,通常 10:00 前就卖光了)
    价格: 35,000–45,000 VND

    如果你本来就要开车去 Ham Ninh 吃螃蟹和海鲜,一定要先在这里停一下。店面是村边一个带顶棚的木屋,可以欣赏水景。这里的汤底比 Duong Dong 版本的更清淡、更纯净——酱料味没那么重,口感更细腻。虾是直接从 200 米外的渔船上现捕的。这是岛上最“原始”的版本,这正是它的优点。一定要早点去:Anh Dung 卖完就会直接关门,毫不客气。

    Bun Quay Huong Bien

    地址: 22 Bach Dang, Duong Dong
    营业时间: 6:00–14:00
    价格: 50,000–70,000 VND

    Huong Bien 开业于 2021 年左右,口碑一直很好。他们增加了 70,000 VND 的高级版,配有更大的大虾和额外的鱼饼,非常值得尝试。这里的 mam ruoc 是自制的,咸度明显低于竞争对手,如果你担心发酵虾酱太咸,这是一个很好的入门选择。服务很贴心。位于 Bach Dang 的位置离夜市很近,非常适合在开启漫长的海滩日之前,先来这里吃一碗早饭。

    避雷指南

    Duong Dong 夜市摊位的 Bun quay(特别警告)

    Duong Dong 主夜市内的那些带顶棚的摊位——那些贴着韩语、俄语和英语层压标志的摊位——卖的所谓 Bun quay 其实名不副实。汤底稀薄且调味不足,面条看起来像是普通的干米粉泡发后重新加热的,而所谓的“mam ruoc”酱只是瓶装辣椒酱。海鲜也是冷冻的。价格却要 60,000–80,000 VND 一碗,比你在 Co Phuong 吃正宗的还要贵。完全避开它们。如果你在夜市感到饿了,可以去吃烤肉串或西侧的“banh mi”摊位——那两家才是正宗的。

    为什么 Phu Quoc 的版本如此独特

    Bun quay 在 Hanoi 或 Saigon 并没有真正的版本。DIY 的组装过程是精髓所在——你可以控制汤底比例和酱料辣度,这意味着两个人坐在同一张桌子上,可以从同一个厨房里吃到完全不同的风味。由于配料表很短,海鲜的新鲜度在这里比内陆的面食更为重要。坏虾是无处遁形的。

    大多数当地人把它当作早餐或早午餐。到了下午,好的摊位就关门了,面条也就卖光了。

    实用提示

    以上推荐的所有摊位只收现金;请准备好小面额钞票(20,000–50,000 VND)。大多数摊位最晚 7:00 开门,中午前就会关门,请提前安排行程。如果你住在 Long Beach 的度假区,到 Duong Dong 镇大约需要 10–15 分钟车程——非常值得一去。
