    "Xoi xeo" 是那种看起来简单,但一旦吃到不正宗的就会发现“坑”很多的 Hanoi 早餐。米饭必须软糯而不粘牙,绿豆泥应该细腻且带有淡淡的甜味,不能有粉感。炸葱酥必须保持酥脆。而切成薄片的 "gio lua"——越南猪肉香肠——必须给得大方,而不是点缀。以下是值得你跨越半个城市去品尝的摊位和店铺,以及一个避雷指南。

    为什么 Hanoi 的 Xoi Xeo 与众不同

    Xoi xeo 是一道北方菜,而 Hanoi 的版本尤为独特。糯米是用姜黄烹制的,这赋予了它深琥珀黄色和淡淡的泥土芬芳。顶部铺上一层绿豆泥,淋上少许鸡油或猪油,最后撒上慢火炸至金黄的葱酥。它通常趁热食用,用香蕉叶包裹或装在纸袋里。一份正宗的份量价格在 20,000–35,000 VND 之间。如果你在街头小摊付出的价格超过这个数,那说明有人在收游客的“智商税”。

    Xoi Yen — 35B Nguyen Huu Huan, Hoan Kiem

    这是大多数 Hanoi 人会首先推荐的名字,名副其实。Xoi Yen 自 1960 年代就开始营业,占据了距离 Hoan Kiem Lake 一个街区的一间狭窄店面。营业时间约为 06:00 至 13:00,如果卖完了会提前关门。一份标准的 gio lua xoi xeo 价格为 30,000–35,000 VND。这里的绿豆泥层明显比大多数竞争对手厚,葱酥也做得恰到好处——没有发白或焦糊的碎屑。座位是挤在一起的低矮塑料凳。如果你想避开排队,请在 08:30 之前到达。只收现金。

    Ba Thin — Hang Gai, Hoan Kiem

    这是一个位于 Hang Gai 街顶端固定位置的小摊,大致在 Thang Long 丝绸店的对面。Ba Thin 没有堂食座位——你拿上香蕉叶包好的糯米饭,找个路边坐下就行。营业时间大致为 06:30–10:00,卖完即止。根据配料不同,价格在 20,000–25,000 VND 之间。这里的特色是淋上的鸡油,比一般摊位给得更慷慨。gio 是手工切片的,而不是预先切好的,这在口感上有很大区别。没有招牌;只要找那位带着大蒸笼、周围围着一圈摩托车的女士即可。

    Xoi Bui — 14 Hang Da, Hoan Kiem

    这是一个距离 Dong Xuan Market 步行不远、相对安静的选择。Xoi Bui 在 06:00 开门,通常中午前就关门了。一份加了 gio 和绿豆的完整份量售价为 28,000 VND。如果你想加个煎蛋,这里是首选——他们会当场在小锅里现煎,然后滑到饭上。这里的糯米口感比 Xoi Yen 稍微硬一点,有些人更喜欢这种口感。店面很小,最多四张桌子,老板动作麻利,但不算不友好。

    Co Lan — Pho Co 区,靠近 67 Dinh Liet

    Co Lan 是一位流动摊主,每天早上 06:00 到 08:30 大多会把车停在 Dinh Liet 街。她在这条路线上经营了十多年。价格是这份清单里最便宜的:标准份统一 20,000 VND,加蛋 25,000 VND。这里的 xoi xeo 绿豆泥层偏甜,口味见仁见智,但拥有很多忠实的老顾客。如果 Dinh Liet 街上没看到她的摊位,记得看看后面的巷子——为了避雨,她有时会把摊位摆在里面。

    Xoi Que Viet — 107 Hang Bong, Hoan Kiem

    这是一家小型固定店铺,服务对象包括当地人和附近旅馆的工作人员。营业时间为 06:30–11:00。这里的 xoi xeo 售价 30,000 VND,gio 的份量比大多数地方都足。他们还提供 "xoi ngo"(玉米糯米饭)和 "xoi dau den"(黑豆糯米饭),供想尝试不同口味的人选择。店里有几个遮风挡雨的座位,这在雨季很重要。值得一提的是:他们还通过一个小窗口经营 "banh cuon",所以如果你来的时候 xoi 卖完了,也不至于没东西吃。

    避雷:Hoan Kiem Lake 南端附近的游客向 Xoi 摊位

    坦白说,位于湖边步道靠近 Ngoc Son Temple 入口处的摊位不值得去。一份比你往回走两个街区买到的还要小的份量,价格却高达 45,000–60,000 VND,绿豆泥很薄,葱酥通常是预先炸好再加热的。这完全是溢价在地理位置上。往北走 400 米,你就能找到这份清单上的所有摊位。

    实用贴士

    Xoi xeo 是早晨的食物——大多数认真的摊主在中午前就会收摊,很多 10:00 前就卖完了。请准备好小额钞票(10,000 和 20,000 VND 面额);摊主很少有零钱找给你 200,000 VND 的大钞。如果你想开启一个地道的 Hanoi 早餐早晨,可以将 xoi xeo 与 Hang Gai 街边巷子里咖啡店的 越南咖啡 搭配——糯米饭配浓郁的咖啡,这绝对是当地人开启一天的最佳方式。
