    新鲜生啤每日酿造,以每杯8,000至15,000越南盾的价格出售,入夜即售罄——“bia hoi”是东南亚最平民化的饮酒传统之一。Hanoi是它的核心地带,但游客版与当地版之间的差距,远比大多数旅游指南所承认的要大。

    什么是真正的Bia Hoi

    Bia hoi(鲜啤)是一种未经巴氏杀菌、酒花味清淡的每日新鲜酿造生啤,酒精含量通常在3%至4%左右。它无法久存。啤酒桶通常在傍晚时分送到摊位,到晚上10点或11点剩下的酒就会被倒掉。这种每日循环正是其精髓所在——没有防腐剂,没有仓储溢价,也没有酒吧的运营成本。只有啤酒、冰块和路边的一张塑料小凳。

    这种啤酒本身口感清淡,略带甜味。它或许不会赢得什么奖项,但在当地小巷里,花8,000越南盾买的不是酒,而是那种仪式感。

    Ta Hien街角:你一定听说过的那家

    Ta Hien和Luong Ngoc Quyen的交汇处位于老城区,是Hanoi(河内)最上镜的Bia Hoi聚集地。这里有几十个摊位,数百张塑料凳延伸到马路上,挤满了背包客、旅游团,以及一些从这里出名之前就开始在此饮酒的当地老客。这里喧闹、混乱,但氛围尚可。

    这里的价格根据摊位不同,每杯在15,000至25,000越南盾之间。啤酒和你多走两条街就能买到的那种是一样的,价格却贵了一倍。去一次,喝上一杯,感受一下老城区的混乱氛围就够了。然后,去找个安静点的地方吧。

    营业时间: 大多数摊位从下午4点营业至晚上11点。

    当地人真正去哪喝

    Bia Hoi Ha Noi — 2 Dinh Liet

    这是Hoan Kiem湖以南较老牌的当地摊位之一,这里结合了室内塑料桌、运转的吊扇以及没有英文菜单的纯正体验。这里的Bia Hoi每杯10,000越南盾,老板会在你开口前就为你续杯。点一份“bap cai xao toi”(蒜蓉炒卷心菜)或黑板上写的任何菜品——食物简单而地道。下午5点后,这里会挤满下班的职员。晚上10点左右打烊。

    Bia Hoi Corner — 10 Bat Dan, Hoan Kiem

    从老城区步行一小段路,进入一条车流较少的街道,这个没有招牌的街角摊位已经经营了二十多年。塑料凳、靠墙堆叠的酒桶,还有一位动作娴熟、倒酒递酒一气呵成的老板娘。每杯8,000越南盾。这里不卖食物,但傍晚时分停在附近的banh mi餐车可以解决你的需求。下午4:30左右出摊,大多数夜晚9:30前就会卖光。

    Bia Hoi 35 — 35 Hang Than, Ba Dinh

    从老城区向西北骑行十分钟,Hang Than是你想要和那些“不纠结去哪喝”的人一起喝酒时的好去处。这里是典型的居民区配置:长条公共桌、电视里放着足球赛,还有各种廉价的北方下酒菜——“nem chua”(发酵猪肉卷)、花生、炸豆腐配虾酱。啤酒每杯10,000越南盾。这里没有人是为了表演而喝酒。营业时间大约在下午4点至晚上10:30。

    Quan Bia Goc Pho — Nguyen Huu Huan街的一条小巷

    从街上看不到任何标识。沿着Nguyen Huu Huan街靠近Hang Bac路口的巷子走进去,寻找蓝色的塑料凳和角落里冒着冷气的酒桶。这是一家常客都有自己专属座位的店。每杯8,000越南盾,老板心情好时偶尔会赠送腌菜。下午5点左右开始营业,通常9:30左右收摊。如果找不到,问问摩的司机(xe om)——他们都知道。

    Bia Hoi Lang — Yen Lang Street, Dong Da

    想要体验地道的社区氛围,可以打车前往Dong Da区的Yen Lang。这并不是单一的摊位,而是三四个相邻摊位组成的松散集群,多年来它们一直在争夺同一批常客。价格在8,000至10,000越南盾之间。人群几乎全是越南人,隔壁的bun cha店营业到很晚,这里的噪音水平适合聊天,而不是像节日庆典那样吵闹。工作日的晚上去最好,那时下班回家的人们会填满这里。

    避雷指南:Bia Hoi Junction的“豪华”摊位

    Ta Hien周围和Ma May沿街的一些摊位开始标榜自己为Bia Hoi,但每杯收费40,000至60,000越南盾,且以Bia Hoi的装潢提供进口或瓶装啤酒。凳子依然是塑料的,但产品却不是新鲜生啤——它们只是普通的商业拉格啤酒,之所以溢价,是因为地理位置方便了那些懒得再多走两条路的游客。如果菜单是塑封的且印有照片,那你就不是在喝真正的Bia Hoi。

    实用小贴士

    带上小额钞票——10,000和20,000越南盾的纸币会让结账更方便。大多数Bia Hoi摊位不记账,你可以按杯付费,或者在晚上离开时根据纸条上的记录一次性结清。如果一家店在晚上11点后还在倒酒,说明他们在处理陈酒,这虽然没问题,但已经不是Bia Hoi的精髓了。最佳前往时间是下午6点到8点,此时酒桶里的酒最新鲜,当地氛围也最浓厚。
