    Banh gio 呈金字塔状,用芭蕉叶包裹,口感浓郁鲜美,是河内最棒的街头早餐之一,但大多数游客往往与之擦肩而过。它在 Instagram 上看起来并不“上镜”,没有英文招牌,价格也仅需 15,000 VND 左右。而这正是它值得你去寻觅的原因。

    你吃到的究竟是什么?

    Banh gio 是一种蒸米粉团,被塑造成三棱金字塔状,用芭蕉叶紧紧包裹。制作得当时,面团呈现出丝滑且半透明的质感——比起面包,它更像是一层米粉皮。内馅包括猪肉末、木耳,有时还会加入一片瘦肉或一颗鹌鹑蛋。它通常趁热端上桌,当场拆开,通常会淋上一勺鱼露(nuoc cham),有时还会配上一片 cha lua(越南猪肉香肠)。

    面向游客的版本——常见于还剑湖附近或针对背包客的 banh mi 店——往往口感厚重。面团太厚,内馅调味不足,而且整块食物一直放在保温灯下。真正的 Banh gio 口感更轻盈,猪肉散发着干葱和胡椒的香气,而且是直接从移动蒸笼或从凌晨五点就开始熬煮的锅中新鲜出炉的。

    去哪里寻找正宗美味

    Banh Gio Ba Thin — 30 Hang Giay

    这是老城区当地人真正会去吃的一家。Ba Thin 在 Hang Giay 街的一个狭窄店面经营着一个推车摊位,大约从早上 6 点开始营业,直到卖完为止——工作日通常在上午 9:30 左右,周末则更早。面皮与内馅的比例恰到好处:薄如蝉翼的表皮包裹着足量的猪肉和木耳馅。一份 15,000 VND;大多数人会吃两份。只收现金,除了人行道上的几张塑料凳外,没有其他座位。

    Hang Than 街头推车 — 近 Quan Thanh 路口

    Hang Than 是河内事实上的“糕点街”,Banh gio 是清晨轮番供应的美味之一。每天早上 6 点到 10 点之间,会有两三位女性在靠近 Quan Thanh 的街道尽头摆出蒸笼推车。没有固定的摊位名称——跟着蒸汽走就行。这里的价格在每份 12,000–15,000 VND 之间。这里卖的版本比 Ba Thin 的稍微小一点,但价格明显更便宜,制作水准同样出色。如果你还想继续吃,这一带也卖“banh cuon”和“banh duc”。

    Cho Dong Xuan 市场 — 室内摊位,底层

    Dong Xuan 市场有一个大多数游客从未涉足的食品区。穿过布料和日用品摊位,前往北端附近的室内底层摊位。这里有两三个摊位在卖 Banh gio,旁边还有热豆浆和糯米饭。营业时间约为早上 5:30 至上午 11 点。这里的 Banh gio 口感明显更扎实——有些当地人喜欢这种口感,有些则不然。值得为了体验不同风味去尝试一下。价格:13,000–15,000 VND。

    Banh Gio 96 Tue Tinh

    这家店位于 Hai Ba Trung 区,完全避开了老城区的游客路线。经营摊位的女士在这个地址已经摆摊十多年了;推车通常在早上 6 点左右出现,大多数日子里 8:30 左右就卖完了。这里的不同之处在于:她在每个面团里都加了一小块 cha lua,这大大提升了内馅的口感。每份 18,000 VND,虽然是街头 Banh gio 的价格上限,但绝对物有所值。

    深夜选择 — Pho Co 区,26 Hang Buom 附近

    在河内,Banh gio 不仅仅是早餐——它也会作为宵夜在晚上 9 点到午夜之间出现。天黑后,一辆推车通常会停在 Hang Buom 和 Luong Ngoc Quyen 的交叉口附近,供应一种口感稍显厚实、更顶饱的版本,专门满足那些刚结束 bia hoi 聚会的人们。晚上的面团稍微厚一点(有人说这是没卖完的库存,也有人反驳这种说法),但 15,000 VND 的价格和氛围让它值得一试。

    避坑指南

    避开还剑湖附近任何面向游客的咖啡馆,如果它们的塑料菜单上同时写着“banh mi”、春卷和 pho。这些只是为了方便游客购买的商品,并不能代表这道菜的真谛。它们的面团总是太厚,内馅平淡无奇,而且你要花 25,000–35,000 VND 买到一份更差的产品。这不算欺诈,只是妥协之作——如果可以,请避开它们。

    为什么河内版本与众不同

    Banh gio 在越南的其他地区也存在,但河内的版本是标杆。这里的米粉面团采用了特定的比例,使其在冷却后依然保持柔软,而不会变得黏糊。内馅更多使用白胡椒和干葱,而不是大蒜,这赋予了它一种更内敛、更芳香的风味。在南方,你会发现更甜、更厚重的版本。河内的 Banh gio 更干爽、更精致,切开时会干净利落地散开——这是面粉比例和蒸煮时间精准的标志。

    如果你正在探索河内更广泛的早餐文化,Banh gio 可以与清晨的一碗“pho”或早上 8 点左右的“egg coffee”完美搭配。大多数 Banh gio 摊位在上午中旬就会收摊,所以请务必早起规划你的行程。
