    Le Mat 坐落于 Hanoi 老城区东北约 7 公里处,穿过 Long Bien Bridge,进入红河下游的一片低地,大多数游客从不涉足此地。从路边看,这里并不起眼——低矮的房屋、几块手绘招牌,摩托车停在看似普通家庭餐馆的门前。但 Le Mat 至少在 500 年来一直是越南最有名的养蛇和食蛇村,每逢周末傍晚,这里便挤满了从小吃到大的河内人。

    如果你是素食主义者,这里不适合你。但如果你对越南北部农村的真实饮食文化感到好奇,那么花 25 分钟坐个摩托车(xe om)前往是非常值得的。

    Le Mat 是什么,不是什么

    Le Mat 并不是一个伪装成村庄体验的旅游陷阱。这里没有门票,没有摆拍的表演,也没有英文菜单。这些餐馆大多由家庭经营,许多直接在自家前厅营业,主要服务于越南本地顾客。你会听到河内(Hanoi)的老年人们一轮接一轮地推杯换盏,也会看到大家庭在荧光灯下的长条塑料桌旁庆祝生日。

    这里供应的蛇是人工养殖的,而非野外捕获。眼镜蛇("ho mang")和鼠蛇最为常见,饲养在村内各家各户的混凝土坑中。对于关心野生动物贸易的人来说,这一点很重要——Le Mat 的产业是传统且受监管的,而非盗猎。

    用餐体验

    在 Le Mat 的餐馆点餐,需要挑选一条活蛇,厨房会将其制作成七到八道菜。整套流程——从当地人称为“ruou ran”的开胃蛇酒,到最后的汤品——旨在利用蛇的每一个部位。

    在 Le Mat 的中档餐馆,典型的菜品顺序如下:

    • 蛇血兑米酒 — 第一道上桌,温热,装在小杯子里。仪式感大于口感。
    • 烤蛇皮 — 口感酥脆,味道清淡,搭配盐、胡椒和青柠蘸料食用。
    • 姜丝蒸蛇肉 — 最能体现蛇肉本身味道的做法,肉质精瘦,略带野味,口感比鸡肉更接近青蛙。
    • 炸蛇骨 — 比你想象的更酥脆,如果你点了一桶 bia hoi,这是绝佳的下酒菜。
    • 蛇肉粥 ("chao ran") — 这顿饭温和的收尾,用蛇骨熬制的米粥,撒上炸红葱头。

    价格取决于蛇的种类和大小。两到四人的全蛇宴价格约为 600,000–1,200,000 VND,具体取决于蛇的重量。鼠蛇餐的价格较低,约 350,000 VND 起。没人会强迫你点最贵的选项。

    周边的农村饮食文化

    严格来说,Le Mat 现在属于河内的龙边区(Long Bien District),但更广阔的永福省(Vinh Phuc)和河内东北郊区的饮食文化自成一派——与市中心更精致的 "pho" 和 "bun cha" 快餐店截然不同。

    如果你打算在这一带觅食,有几件事值得了解:

    田蟹料理

    这一带北部的 "Bun rieu" 仍然使用传统的淡水田蟹酱制作,保留了该菜肴在城市标准化之前的风味。东英(Dong Anh)和朔山(Soc Son)附近的路边小店供应的版本比河内环路内的口味更粗犷、更酸,番茄味也更浓郁。如果你从一日游返回途中经过这里,非常值得一试。

    瓦煲饭 (Com nieu)

    "Com nieu"——将米饭放在瓦煲中焖煮,直到锅底形成焦脆的锅巴——在这一地区的农村午餐点很常见。锅巴会被敲碎并单独油炸,搭配腌菜和红烧肉食用。这种食物没有华丽的摆盘,每人仅需 50,000–80,000 VND。

    现做肠粉 (Banh cuon)

    北部的 "banh cuon"——包裹着猪肉碎和木耳的蒸米粉卷——在永福省周边的集市村庄里格外美味。米浆比河内旅游区的更薄,而且是当着你的面直接从蒸布上卷下来的。寻找那些早上 6 点开门、9 点就卖光的摊位吧。

    交通指南与实用建议

    从河内老城区出发,骑摩托车前往 Le Mat 很方便:穿过龙边桥(Long Bien Bridge),沿 1 号国道向北行驶穿过嘉林(Gia Lam),然后跟随指示牌前往 Viet Hung 和 Le Mat 村。Google 地图导航非常可靠。Grab 或 Be 的司机也能顺利送你到达,不过如果司机对村子不熟悉,你可能需要确认越南语名称:Lang Le Mat, Long Bien。

    餐馆每天营业,但周五至周日傍晚 5 点左右最繁忙。如果你想安静地用餐并与厨房工作人员交流,建议在工作日的午餐时间前往。

    如果你不是为了吃蛇而来,村子本身也值得短暂停留——村里的公共会馆(dinh lang)可以追溯到黎朝,周围的小巷与大多数游客眼中的河内截然不同。

    实用建议

    请携带现金;Le Mat 的餐馆不接受刷卡。人均预算 150,000–300,000 VND 即可享用包含饮品的蛇肉大餐。如果你是自驾,请注意龙边区的道路在天黑后会变得非常狭窄——请预留充足的返程时间。
