    Da Nang 有一种属于早晨 7 点的味道。“Bun cha ca”——即细米粉配上清爽的番茄菠萝汤底,加入炸鱼饼并撒上一把莳萝——是当地半数劳动者的早餐首选。但摊位并不总是全天营业,因此在饥肠辘辘地赶到店门口却发现摊位已关门之前,了解用餐时间非常有必要。

    碗里有什么

    汤底是灵魂所在。它比你想象中以鱼为主题的汤要清淡得多——番茄带来淡淡的酸味,菠萝增添了一丝圆润的甜味,而莳萝(在这里比越南中部任何地方都更常见)则平衡了这两者的口感。鱼饼根据摊位的不同,有炸制或蒸制之分;大多数 Da Nang 店铺两者皆有,你可以混搭。在某些地方,你还会看到凝固的猪血块(煮熟的“tiet canh”),如果不习惯可以请店家不要放。一碗标准的分量价格在 35,000–50,000 VND 之间。

    早晨:最佳时机

    如果你在 Da Nang 想体验当地人吃 bun cha ca 的方式——坐在塑料凳上,听着摩托车呼啸而过——那么请在早上 6:30 到 9:00 之间前往。此时汤底最新鲜,鱼饼刚出锅,香草也保持着冰箱里的清脆。

    穿过 Son Tra 区的 Nguyen Chi Thanh 一带聚集了许多只在早晨营业的摊位。位于 Nguyen Chi Thanh 109 号的 Bun Cha Ca Viet 大约早上 6 点开门,通常 10 点前就会售罄。这里一碗面 40,000 VND,配有一盘生豆芽、切丝的香蕉花和额外的莳萝——你可以根据口味自行添加。

    另一个可靠的地址是位于 Tran Binh Trong 的 Bun Cha Ca 109,尽管名字相似,但它是另一家店。他们营业到上午 11:30 左右,如果你起得晚一点也能赶上,但到 10:30 时,由于汤底不断加水稀释,味道会明显变淡。

    早晨用餐建议:尽早去,不要过多改变汤底的味道,并向附近卖咖啡的人点一杯“ca phe sua da”搭配享用。

    午餐:可行,但要有心理准备

    少数餐厅(区别于街头摊位)会在午餐时段(大约上午 11:00 到下午 1:30)供应 bun cha ca。位于 Hoang Dieu 的 Bun Cha Ca O Bung 是比较靠谱的午餐选择之一,他们的汤底稍浓,能经得起时间的考验。标准碗价格为 45,000 VND。

    诚实地说:午餐时的 bun cha ca 体验不如早晨。汤底已经熬了很久,鱼饼可能是早些时候炸好后重新加热的。虽然依然好吃,但更像是“精心处理的剩菜”而非新鲜出锅。如果午餐是你唯一的选择,尽管去尝试,但请降低预期。

    Da Nang 在午餐时段表现更好的是“mi quang”,这种姜黄面食对时间的要求没那么苛刻,在城市各处的午间摊位通常更新鲜。如果你到得晚,这一点值得了解。

    晚餐:基本不推荐

    在 Da Nang,bun cha ca 不是晚餐食物。当地人并不把它当作晚餐,你也不应该这样做。极少数例外是一些面向游客的 Han River 沿岸餐厅,它们会将这道菜列入全天菜单,但质量明显较低——汤底通常调味不足,鱼饼口感发硬,显然是早上做好后冷藏至今的。

    如果你晚上在 Da Nang 想吃点汤面类的食物,当地人的选择是 Bach Dang 夜市附近的“banh canh”,或者任何在晚上 8 点后营业的 com tam(碎米饭)店里的烤肉饭。

    实用贴士

    Da Nang 的大多数 bun cha ca 摊位不接受刷卡——带上 50,000–100,000 VND 的现金就足够了。Nguyen Chi Thanh 的早间摊位距离 My Khe 海滩仅 10 分钟车程,非常适合安排在晨泳前后。不用费心预订,直接去就行。
