    在 Mai Chau,白泰族人到底吃什么?

    在距离 Hanoi 以西约 135 公里的地方,Mai Chau 山谷是白泰族(越南主要少数民族之一)的聚居地,他们的饮食与低地地区截然不同。在这里,坐在吊脚楼的编织草垫上,你将享用到一顿以竹子、火和当天从溪流中捕获的食材为核心的餐点。

    Com Lam — 定义山谷的招牌菜

    “Com lam”(竹筒饭)是将糯米装入新鲜的绿色竹筒中,在炭火上慢烤而成。竹筒外表烤至焦黑,里面的米饭则吸收了淡淡的草本清香与甜味。在 Ban Lac 村附近,你可以从当地妇女手中买到这种竹筒饭,价格约为每筒 10,000–15,000 VND。食用时,像剥包装纸一样剥开竹皮,直接用手抓着吃即可。

    这里使用的米是“khau tan”——一种在山谷梯田中种植的短粒糯米。它比你在 Hanoi (河内) 吃到的糯米口感更扎实,且经过竹火熏烤,拥有普通蒸糯米无法复制的独特风味。Ban Lac 和 Pom Coong 的大多数民宿都会将它作为每餐的标配。

    Ga Nuong Mat Ong — 蜂蜜腌制烤鸡

    “Ga nuong mat ong”——蜂蜜烤鸡——听起来很简单,做法也确实如此:选用当地散养的山鸡,用土蜂蜜、香茅、高良姜和干辣椒酱腌制,然后在木火上低温慢烤。成品皮焦肉嫩,带有淡淡的烟熏味,肉质比低地农场鸡更精瘦、更具风味。

    在吊脚楼餐厅里,你通常会看到鸡肉挂在入口处的陶制火盆上烤制。根据餐厅不同,半只鸡的价格约为 80,000–120,000 VND。所用的蜂蜜通常来自周围森林里的蜂箱——它比商业蜂蜜颜色更深,甜度较低,并带有一丝淡淡的苦味。

    Ca Suoi — 简单的溪鱼料理

    “Ca suoi”字面意思是溪鱼,在 Mai Chau,这通常指从流入山谷的溪流中捕获的小型鱼类,如山鳅或类似鳟鱼的品种。你会看到它们被串在竹签上,撒上盐和辣椒整条烤制,或者像越南北部少数民族常见的做法那样,用姜黄和莳萝在陶罐中炖煮。

    如果你看到姜黄炖鱼,一定要点一份。它的味道清爽明亮,毫不油腻,与 Com lam 是绝配。根据分量不同,一陶罐的价格约为 60,000–100,000 VND。由于鱼体型较小且多刺,食用时请务必小心。

    吊脚楼的宴席形式

    在 Ban Lac 周边的成熟民宿(这是游客最多的村庄,距离 Mai Chau 镇约 2 公里)里,晚餐通常是集体用餐。客人们盘腿坐在低矮的藤桌旁的草垫上。菜肴会陆续上桌:Com lam、烤鸡、Ca suoi、自家菜园采摘的炒蔬菜,通常还有一盘“nam”——蒜蓉炒森林蘑菇。

    此外还有“ruou can”——一种通过长竹管从放在草垫中央的陶罐中饮用的集体米酒。按加强型葡萄酒的标准来看,它的酒精度较低(约 15–20%),经过轻微发酵,带有淡淡的酸味。饮用过程中会不断往罐中加水。这既是一种社交活动,也是一种仪式——拒绝第一口酒会被视为非常不礼貌的行为。

    这些宴席通常包含在民宿套餐中(晚餐和早餐每人约 150,000–250,000 VND),你也可以在村里的几家独立餐厅单点。

    餐桌上还有什么?

    两道值得尝试的配菜:

    “Canh chua rau rung” — 一种用野生采集的野菜制成的酸汤。配料随季节和供应情况而变,但它几乎总是出现在餐桌上,味道非常棒。酸味适中,口感清淡,正好可以中和烤肉的油腻感。

    蒸“xoi ngu sac” — 五色糯米饭,使用天然植物染料着色(紫色来自紫甘蓝,黄色来自姜黄,绿色来自斑兰叶)。这道菜比日常饮食更具节日气氛,但民宿有时会在早餐时供应,配上芝麻盐和炸花生。

    什么时候来吃?

    Mai Chau 的美食在凉爽的月份(11 月至次年 2 月)最为出色,此时山谷已完成收割,溪水清澈见底。米饭更新鲜,在寒冷天气里吃火烤料理格外有感觉,香蕉花和森林野菜也正处于风味最佳期。话虽如此,其实在任何季节来都不会失望,毕竟这种烹饪方式并不太依赖食材的季节性。

    实用小贴士

    Ban Lac 的大多数民宿都将餐饮包含在住宿中,无需专门寻找餐厅。如果你是从 Hanoi 当日往返,村口附近的 Com lam 小贩可以让你无需坐下就能填饱肚子。这里仅收现金,没有英文菜单,直接指着隔壁桌点的菜下单即可。
