    顺化以其精致、考究的宫廷菜肴而闻名——那是曾经在御膳房中历经多年打磨出的美味。而“Com Am Phu”则是这座城市的另一面:喧闹、廉价,且在午夜时分站着就能吃完。

    什么是 Com Am Phu

    这个名字直译过来就是“地狱饭”或“阴间饭”——“am phu”是越南语中“地狱”的意思。这道菜起源于20世纪20年代,当时在东巴市场附近工作的街头小贩,为了向黄包车夫、搬运工以及其他在城市入睡后仍需热食的人们售卖食物而创制。这个名字之所以流传下来,部分是因为营业时间,也因为这道菜在盘中呈现出的戏剧性外观:白米饭上堆满了色彩斑斓、质感各异的食材,在某些光线下,看起来就像是一场来自另一个世界的混乱盛宴。

    各摊位的配料大同小异:蒸白米饭上铺着烤猪肉或炖猪肉片、半个水煮蛋、几只蒸虾或烤虾、腌芥菜、切碎的香蕉花,最后淋上一勺浓郁的猪肉汤,并撒上炸红葱头。每位摊主都有自己的独门配方——有的会加入 cha lua(越南猪肉卷),有的则更注重汤头的浓郁度——但其视觉逻辑始终如一:在同一个盘子里呈现出极致的色彩。

    这绝非一道精致细腻的菜肴。但当你沿着顺化河边散步三小时后,在晚上11点,这绝对是你最想吃的东西。

    去哪里吃

    Quan Com Am Phu Ba Do

    这是大多数顺化当地人首先会推荐给你的摊位。Ba Do(这是她的昵称,而非品牌名)在 Nguyen Binh Khiem Street 上摆放着几张塑料桌,距离东巴市场仅几步之遥。她大约在 晚上8点开张,直到米饭卖完为止,通常在午夜到凌晨1点之间。一份完整的套餐——包含米饭、猪肉、鸡蛋、虾和汤——价格在 35,000–45,000 VND 之间。如果有猪皮的话,一定要点一份;它增加了一种胶质的嚼劲,能让米饭更好地吸收汤汁。

    这里完全是露天环境。塑料凳、荧光灯,偶尔还有半停在桌边的摩托车。这非常有顺化特色。

    Hem 12, Nguyen Du Street

    这条位于 Nguyen Du 街的小巷距离东巴市场约1.2公里,有三四家 Com Am Phu 摊位从 晚上9点左右 开始并排营业。竞争使得价格非常实惠——每盘大约 30,000–40,000 VND。小巷尽头的摊位除了汤汁外,还会提供一种稀释的鱼露和辣椒蘸酱,非常值得专门要求尝试。这些摊位在周末通常会营业到凌晨2点。

    Truong Tien 桥附近(南岸)

    晚上9点后,在 Truong Tien 桥南岸的引桥处,会聚集一小群摊位。这里吸引了更年轻的群体——顺化科学大学的学生和在河边散步的情侣。这里的份量往往稍微小一点,价格也更便宜(约 28,000–35,000 VND),但米饭与配料的比例稍显单薄。不过,如果你正好在那边,依然值得一试。

    越南槟椥省为庆祝特节(Tet)展示传统菜肴的色彩斑斓且地道的越南餐。

    如何点餐

    大多数 Com Am Phu 摊位没有菜单。你坐下后,他们会端上米饭,你只需要指着你想加的配料即可。说一句“mot dia day du”(一份全套)通常就能让你尝到所有配料。如果你想要额外的汤——你确实会想要额外的汤——就说“them nuoc”,大多数地方都会免费为你多加一勺。

    饮料选择通常只有冰茶(tra da,几乎总是免费或5,000 VND)或者一瓶 Huda(当地的顺化啤酒),价格在15,000–20,000 VND左右。Huda 搭配 Com Am Phu 是绝配。

    时间建议与实用贴士

    Com Am Phu 不是午餐。摊主通常不会在晚上7:30之前开张,而最好的体验时间是在晚上9点到11点之间,那时食材最新鲜,汤头也已经熬制了数小时。去太早的话,猪肉可能还是冷的;去太晚的话,虾可能就卖光了。

    顺化的美食之旅需要耐心和漫步。如果你在傍晚吃过一碗“bun bo hue”,或者在深夜散步经过顺化皇城,那么 Com Am Phu 是结束一天的完美方式——既饱腹、便宜,又极具这座城市的独特风情。

    实用贴士: 大多数摊位只收现金。请准备小额钞票;50,000 VND的纸币还可以,更大面额的纸币可能会引起找零麻烦。Nguyen Binh Khiem 和 Nguyen Du 的摊位都在顺化中心区大多数旅馆的步行范围内。
