    问题在于,大多数来到Sapa的游客只是在市场买上一小袋,边走边吃,然后就继续赶路了。这并不是它正确的食用方式。Xoi ngu sac是一顿正餐的组成部分,而不是零食。以下是如何围绕它构建一顿丰盛餐点的方法。

    从糯米饭本身开始

    寻找新鲜制作的xoi ngu sac的最佳地点是Cau May街的Sapa市场,尤其是在周末早晨,山区的摊贩会从周围的村庄赶来。寻找室内湿货市场区域附近的摊贩,而不是外围的游客摊位。一份完整的份量——足够一人作为正餐食用——价格在20,000至30,000 VND左右。市场从早上6:30左右开始繁忙,大部分新鲜的xoi在9:00之前就会卖完。平日早晨人较少,但品种会更快卖光。

    如果你错过了市场的时间,Thach Son街的Baguette & Chocolat有时会在清晨供应xoi ngu sac,作为其早餐的一部分,尽管他们的版本比市场版的口感更软、层次感稍逊。

    搭配炖肉或焖肉

    越南北部(베트남 / 越南 / ベトナム)传统的搭配是肥肉——特别是“thit lon kho”(炖五花肉)或切成薄片的清蒸猪肉。油脂以一种特殊的方式包裹住糯米,使每一口吃起来都更浓郁,且不会粘牙。在Sapa,Muong Hoa路上的一些com binh dan(平民快餐)餐馆在早晨和午餐时段提供单份的炖肉。点餐时可以要一份半份的thit kho搭配你的xoi。猪肉的预算在35,000至50,000 VND之间。

    如果你想吃得清淡一点,来自西北高地的“cha”(烤猪肉肠)——与Hanoi风格的版本不同——与斑兰叶和姜黄部分的糯米搭配得很好。烟熏味与糯米天然的泥土气息形成了清爽的对比。

    加一个溏心蛋或炒蛋

    这是最简单、最便宜的搭配,而且效果很好。将一个溏心蛋戳破在温热的糯米饭上,是越南北部早餐的标准做法,原因就在于此。蛋黄让糯米变得顺滑,并增加了蛋白质,且不会掩盖植物带来的微妙风味。大多数com binh dan小店可以为你现做一个,价格为5,000至8,000 VND。用葱花炒的鸡蛋也很常见,作为正餐的主食搭配会更令人满足。

    不要错过芝麻盐

    “Muoi vung”——烘焙芝麻盐——是越南北部吃xoi的传统调味品。对于xoi ngu sac来说,它比搭配普通糯米饭更重要,因为不同的颜色有不同的风味,而芝麻盐能将它们统一起来。Sapa市场的好摊贩会在糯米饭旁边附送一小包芝麻盐。如果你的没有附带,记得索要。这通常是免费的,或者最多只需2,000 VND。建议的比例是每吃三到四口糯米饭,配一小撮芝麻盐。

    用腌菜来平衡口感

    糯米饭的颜色和淀粉含量使得这一盘食物如果缺少酸味来解腻会显得过于厚重。“Dua cai”(腌芥菜)或简单的腌白萝卜是Sapa大多数com binh dan餐桌上的常客。它们并不总是写在菜单上——通常就直接放在桌上的碗里。如果没有,记得询问。酸味能重置你的味蕾,让你在品尝不同颜色的糯米饭时保持清爽,使整顿饭吃起来不会感到沉重。

    在哪里坐下来好好享用

    想要享用一顿完整的餐点,位于Sapa镇中心和山谷边缘之间Muong Hoa路上的com binh dan小店是最实际的选择。它们大约在早上6:30开门,一直营业到下午。这些店都没有英文菜单。直接指着你想要的菜,或者出示照片即可。一顿完整的餐点——xoi ngu sac、炖肉、一个鸡蛋、腌菜和茶——总共花费约60,000至80,000 VND。

    避免在Cau May街的游客餐厅点xoi ngu sac。那里的糯米饭通常是预先做好、冷藏后再重新蒸热的,这会破坏口感,颜色也会褪去。新鲜的xoi ngu sac口感略带嚼劲,富有弹性。重新蒸过的糯米饭会变得软烂且平淡。

    实用提示

    Xoi ngu sac在Sapa的周末最容易买到,那时市场满负荷运转,村里的摊贩会进城售卖。如果你在周中访问,请提前致电或在前一天晚上询问你的民宿——一些家庭经营的场所可以应要求为你准备早餐。如果你打算去梯田徒步,这种糯米饭可以保存几个小时,只要把调料分开包装,它就是一份非常实用的野外午餐。
