    一道菜往往难以道尽其背后的故事。“Banh Dap”——字面意思是“拍碎的米纸”——就是最好的证明:只需两秒钟就能描述完,十分钟就能吃完一盘,而且你还没吃完就想再点一份。以下是正确的吃法以及餐桌上最完美的搭配。

    Banh Dap 究竟是什么

    它的构造很简单。将一张柔软、蒸熟的薄米纸折叠在另一张烤得酥脆的米纸上——那种一压就会碎的米纸。你用力按压(“dap”),酥脆的内层在柔软的外皮中碎裂,然后将整块蘸入一碗“mam nem”中:这是一种用凤梨汁、少许辣椒和柠檬汁稀释的发酵凤尾鱼酱。蘸料既有独特的发酵风味,又兼具酸甜与辛辣。没有它,Banh Dap 只是个小吃;有了它,它就成了餐桌上的主角。

    这道菜源自 Hoi An 周边的村庄,特别是 Thu Bon 河沿岸,那里路边随处可见晾晒米纸的架子。它并非会安古镇的发明,而是被古镇所采纳。在选择用餐地点时,这种区别很重要。

    去哪里吃

    Banh Dap Ba Duong

    这是当地人最先推荐的名字。Ba Duong 位于 Nguyen Phuc Chu,这是一条距离古镇西北约 1.5 公里的居民区街道,不在任何旅游商业街上。店里摆着塑料桌和金属凳,下午 3 点左右开始生火烤制,直到米纸卖完为止,通常在晚上 8 点前就关门了。这里的一份 Banh Dap 价格在 5,000–8,000 VND 之间。建议先点四到五份。

    Ba Duong 的 mam nem 比大多数地方更浓稠——更像酱而非汁——而且他们不会为了迎合外国游客而稀释它。如果觉得太咸,可以要求加点凤梨。

    Com Ga Ba Buoi(辅助选择)

    如果你午餐时已经在古镇,Phan Chu Trinh 沿街的一些鸡肉饭(com ga)店也会把 Banh Dap 作为鸡肉饭的配菜出售。虽然不是那里的主打,但如果你之前没吃过,可以先在这里尝试一下。

    搭配建议

    只吃 Banh Dap 只能算零食,不能算正餐。口感的对比是这道菜的精髓——脆与软、咸与酸的交织——但它几乎没有蛋白质,也没有蔬菜。你需要搭配其他菜肴。

    白玫瑰饺子 (Banh Bao Vac)

    “Banh bao vac”,在会安(Hoi An)被称为白玫瑰饺子,是 Banh Dap 的绝佳搭档。半透明的米皮包裹着虾仁馅,蒸熟后撒上炸干葱。柔软精致的皮与 Banh Dap 的米纸口感呼应,却又不显重复。点上一盘(八个约 35,000–45,000 VND),交替着吃非常完美。

    烤猪肉串

    Ba Duong 附近的街头摊贩通常会用同样的炭火烤制 nem lui——柠檬草猪肉串。你可以用剩下的软米纸包裹肉串,加入桌上的草本香料,再蘸入同一碗 mam nem 中。蘸料一物多用,这正是这种饮食方式的精髓。每串价格约 10,000–15,000 VND。

    蒜蓉炒空心菜

    Rau muong xao toi——蒜蓉炒空心菜——比任何沙拉都更能化解 mam nem 的浓郁感。Thu Bon 河岸附近的大多数休闲餐厅都有这道菜,价格在 30,000–40,000 VND 左右。这是餐桌上必不可少的蔬菜平衡。

    饮品建议

    冰镇“bia hoi”——生啤,通常每杯 10,000–15,000 VND——是像 Ba Duong 这样户外小店的标配。如果不喝酒,可以点 tra da(冰茶);通常免费或仅需 5,000 VND,它能平衡 mam nem 的咸味,且不会喧宾夺主。在这里尽量避免喝甘蔗汁等甜味饮料,它会让发酵凤尾鱼的味道变得很奇怪。

    时间与交通

    Banh Dap 是一道下午到傍晚享用的美食。大多数专门店在下午 2 点到 3 点之间开门,卖完即止——Ba Duong 周末通常在晚上 8 点前就卖光了,有时甚至更早。不要把它当作深夜宵夜的备选。

    从古镇出发,骑摩托车 10 分钟或步行约 25 分钟,沿 Nguyen Duy Hieu 向西北方向前往 Nguyen Phuc Chu 即可到达。Grab 摩托车单程费用应在 20,000 VND 以下。

    如果你还在会安的其他美食点打卡——比如午餐吃“cao lau”,或者逛逛 Bach Dang 附近的市场摊位——建议将 Banh Dap 安排在晚餐前的下午时段,以免与更厚重的正餐冲突。

    实用贴士

    准备好小额钞票:5,000 和 10,000 VND 的纸币会让按件点餐更方便。mam nem 蘸料味道确实很冲——如果你之后要和别人共乘嘟嘟车或旅游巴士,请提前考虑这一点。两人用餐,每人一份 Banh Dap 加上两份共享配菜,总花费约 80,000–120,000 VND。
