    Hanoi 从不缺乏用香蕉叶包裹的美食,但 "banh gio"(蒸米糕)绝对独树一帜。这种口感顺滑、略带半透明感的金字塔形米浆团,包裹着猪肉和木耳馅料,介于饺子和咸味糕点之间。你可以在上班路上从街头推车买来站着吃,也可以在正规店铺坐下来,配上各种小菜慢慢享用。两者都是正宗的吃法,但体验截然不同。

    街头推车版

    移动推车是 Banh Gio 最原始的售卖方式。摊主通常在清晨(约早上 6 点至 9 点或 9 点半)和深夜(有时从晚上 9 点一直到午夜)出摊。这两个时段几乎没有交集;同一道美食,在不同时间呈现出完全不同的氛围。

    早餐时段,推车通常聚集在校门口、市场入口和公交车站附近。在 Pho Hue 街的 Cho Hom 市场周边,以及通往老城区 Dong Xuan Market 的小巷里,你会看到摊主骑着自行车,车后绑着带盖的蒸笼,或者直接摆在低矮的塑料凳旁。这里的 Banh Gio 每个售价在 10,000 到 15,000 VND 之间。你需要自己剥开香蕉叶,用木签或小塑料叉将米糕拨开,站着吃,或者蹲在书本大小的塑料凳上享用。

    推车版的米浆口感丝滑紧实,不会过于粘牙。馅料比较简单——一勺调味猪肉末、几条“moc nhi”(木耳),有时还会加一片被称为“cha”的 Vietnamese pork sausage。香蕉叶赋予了米糕一种塑料包装绝对无法模拟的清香,这一点至关重要。

    到了晚上,同样的售卖方式再次出现,但客群变了。这里聚集了酒后的人群、刚结束学习的学生以及刚下晚班的人。晚上 9 点半之后,Hoan Kiem Lake 周围路口——特别是 Dinh Tien Hoang 沿线以及 St. Joseph's Cathedral 后面的小巷——很容易找到这些推车,跟着人群走就行了。

    店面版

    河内有一些专门的 Banh Gio 店,将这种米糕视为正餐的主角,而非匆忙的零食。当地人最推崇的是位于老城区 Duong Thanh 街的 Banh Gio Co Lan,营业时间大致为早上 6 点至 10 点,以及晚上 6 点至 9 点。价格为每个 20,000 到 25,000 VND。

    在店里,Banh Gio 会剥好放在盘子里端上来,通常还会切开以展示馅料。体验的不同之处在于配菜:有“nuoc cham”(由鱼露、青柠、辣椒和糖组成的标准蘸酱)、“cha que”(肉桂猪肉卷)、腌青葱,有时还会配一小碗热汤。你是在享受多种风味的融合,而不仅仅是吃掉一个米糕。

    专门店的米浆质地通常更精致——更顺滑、更均匀——因为他们是分批蒸制,而不是像推车那样把蒸笼一直保温数小时。这是否值得多花一点钱并坐下来慢慢吃,取决于你的个人喜好。

    该怎么点餐

    如果你是在早上 9 点前用餐,且只需要一份温暖饱腹的食物,街头推车是正确的选择。买两个,总共花费 25,000 到 30,000 VND 就足够了。趁热快吃;Banh Gio 冷却后会变得又硬又沉。

    如果你想真正了解这道菜——感受米浆、馅料、蘸酱和配菜之间的微妙平衡——至少要坐下来吃一次。点两个,加一份 cha que,慢慢品尝。

    两种版本有一个共同点:Banh Gio 不适合外带。它不是那种适合长途携带的食物。香蕉叶包装只能保温约二十分钟,之后口感会明显变差。在哪里买的,就在哪里吃掉。

    实用贴士

    街头推车只收现金,建议准备小面额钞票——准备好 20,000 VND 的纸币。大多数店面也只收现金。如果推车前排起了长队,请加入其中;翻台很快,排队通常意味着米糕是刚出锅的,而不是放了很久的。
