    为什么河内的 Nem Ran 与众不同

    南方的“cha gio”通常更长、更厚,且使用的米纸更容易变软。Nem ran 使用的是更薄的麦米混合粉皮,卷得紧实并经过两次油炸——第一次炸熟,第二次炸出酥脆感。馅料的比例也很重要:河内版本非常依赖蟹膏("gach cua")和粉丝,这赋予了它一种更纯净、略带海鲜咸鲜的口感,而不是南方那种偏甜、猪肉味浓郁的风格。

    它们通常搭配“bun”(米粉)、新鲜香草、黄瓜片,以及蘸酱——蘸酱的含糖量比 Saigon (西贡) 的鱼露蘸水(nuoc cham)要低。有些店将炸春卷作为独立菜品供应,有些则将其放入“bun nem”米粉碗中。

    Quan Bun Nem Co Ba Gia — 老城区的老字号

    这家位于 Hang Dieu 街(靠近老城区南缘)的店多年来一直深受家庭食客欢迎。这里的 nem ran 个头很小——大约只有食指长——通常按五根或十根一份供应。蟹肉馅料给得很足,你能真切地尝到蟹味,这在其他店并不总是能做到。

    Nem Ran Hang Chieu — 市场旁,简约地道

    从 Dong Xuan Market 步行不远,Hang Chieu 街上有一家小店长期保持着相同的经营模式:炸春卷、米粉、香草,没有太多花哨的菜品。菜单很短,这是一个好迹象。孩子们通常会喜欢这里,因为炸春卷口味温和,蘸酱也不会过于刺激。

    价格比老城区的平均水平略低——八根一份大约 50,000 VND。这家店只收现金。营业时间大致在早上 9 点到下午 2 点;当天份卖完即止。别指望有空调——这里是风扇加开放式门面的环境。

    Bun Nem Ba Duc — 西湖畔

    如果你在西湖(West Lake)区域活动,Ba Duc 是当地公认的 nem ran 地标。店面比大多数店大——有真正的桌椅,有可用的卫生间,员工也习惯了接待家庭食客。虽然环境不算特别有氛围,但非常实用。

    这里的 nem ran 外皮比其他一些地方稍厚,如果你带着孩子吃饭比较慢,这种外皮能保持更久的酥脆。蟹香味存在但很微妙。一份包含炸春卷、扎肉(cha)和香草的完整 bun nem 碗大约 65,000–75,000 VND。营业时间为早上 7 点到晚上 8:30。

    关于点餐的实用建议

    大多数 nem ran 店会问你是否需要“chien them”(现点现炸)——一定要说“是”。放了一会儿的炸春卷和刚出锅的炸春卷,口感差异巨大。如果你和年幼的孩子一起用餐,可以要求将蘸酱分开装,这样你可以控制蘸取的量。

    米粉碗是标准的供应方式,但如果同行的人不想吃整碗米粉,通常也可以单独点一份炸春卷。指着春卷并伸出手指比划数量即可。

    如果大人们想喝点凉的,nem ran 与“bia hoi”是绝配,其他人则可以点新鲜柠檬汁("nuoc chanh")。大多数适合家庭的餐厅都会提供这两样。

    实用须知

    上述三家店均只收现金或非常倾向于现金支付——请准备好零钱。文中价格为 2024 年预估值,可能会有小幅波动。河内的老城区午餐时间非常拥堵;如果你带着婴儿车,西湖边的 Ba Duc 在交通和空间上是最方便的选择。
