    “Banh khot”——这种边缘酥脆、顶部放有一只蒸虾的小巧椰浆米饼——起源于Vung Tau,当地摊贩几代人以来一直使用铸铁模具在木炭火上烹制。几十年前,Saigon引进了这道美食,如今它以两种截然不同的形式存在:一种是坐着塑料小凳的路边摊,吃完即走;另一种是正规餐厅,将同样的美味变成一场悠闲的共享餐食。两者并无优劣之分,只是体验不同。

    你吃到的究竟是什么

    每个米饼直径约5厘米。面糊由米粉、椰浆和姜黄制成——姜黄正是它们呈现金黄色的原因。模具使底部形成酥脆的外壳,而中心保持微软且充满蒸汽的口感。顶部放有一只虾,有时在余温下半熟,有时则完全煮透,色泽红润紧实。吃的时候,通常用芥菜(rau cai xanh)或紫苏叶包裹,有时配上米纸,然后蘸上“nuoc cham”——即标准的酸甜咸鱼露调料,在讲究的店里,还会加入青芒果丝或木瓜丝。

    好吃的Banh Khot与平庸之作的区别,几乎完全在于椰浆的比例和火候。椰浆太少,米饼会干瘪无味;火候不够,则会失去最精髓的酥脆底座。

    路边摊:快捷、便宜、不拘小节

    路边摊版本通常是早餐或下午茶,很少作为正餐。你坐在矮凳上,按盘(dia)点餐,摊主使用一次可容纳7-12个模具的黑色铁锅现点现做。每锅大约需要四分钟。

    位于第一郡Dinh Cong Trang街的Banh Khot Co Ba Vung Tau,是当地居民中最受推荐的路边摊选择。一盘八个米饼的价格约为40,000–50,000 VND。这里的椰香味浓郁,虾肉虽小但新鲜,nuoc cham调料预先放在桌上的公用碗里——这足以说明其随性的氛围。营业时间大致为早上7点到11点,下午2点到5点;大多数时候卖完就会提前收摊。

    路边摊牺牲的是多样性。你只能吃到Banh Khot、香草和蘸料,菜单仅此而已。没有绿豆馅,没有虾米配料,也没有其他肉类选择。这种极简的形式正是其魅力所在——摊主已经将这道菜重复烹制了上万次。

    餐厅:缓慢、完整、仪式感

    餐厅版本的Banh Khot将这道菜视为正餐而非零食。餐桌上会摆放整齐的香草拼盘——芥菜、紫苏,有时还有香蕉花——以及用于包裹的米纸,蘸料中也已预先拌入了青芒果丝。你可以分批点餐,米饼会从厨房热腾腾地端上来。

    位于第一郡Nguyen Sieu街的Banh Khot Goc Vu Sua经营多年,非常擅长这种餐厅模式。一盘十个米饼的价格在80,000–110,000 VND之间,取决于配料。他们提供一种在虾下铺有绿豆泥的版本,增加了厚实、微甜的口感,非常搭。营业时间为上午10点至晚上9点。午餐时间可能需要排队。

    第三郡Vo Thi Sau街有Quan Banh Khot 46——这是一个游客较少、价格相近的选择,虾的品质通常更好,环境也更嘈杂、更接地气。如果你想对比一下,他们还提供Ninh Thuan风格的蛋顶米饼“banh can”。

    在餐厅用餐,还可以自然地搭配一杯冰凉的“bia hoi”或“ca phe sua da”。用餐节奏慢了下来,桌子摆满了菜肴,这顿饭不再仅仅是零食。

    如何选择

    如果你有30分钟时间,想以最直接的方式了解这道菜,请在上午找一家路边摊。这种不加修饰的真实感是Banh Khot的精髓——它不需要任何包装。

    如果你是和朋友聚餐,想要完整的香草、米纸和蘸料,或者打算悠闲地度过下午,那就去餐厅。这是一种完全不同的体验,而不仅仅是铺了桌布的同一道菜。

    有一点是不变的:一定要趁热吃。放置五分钟后的Banh Khot会失去酥脆的底座,变成一个又软又油的圆饼。摊主们深知这一点,所以好的摊位总是小批量烹制,并时刻关注客人的进度。

    实用贴士

    Saigon的大多数Banh Khot店不接受刷卡——请准备好小额现金。路边摊通常根据售罄速度开门和关门,因此公布的营业时间仅供参考。如果你计划去Vung Tau,那里的Banh Khot也值得一试,那里的分量更大,且木炭烹制的版本更容易找到。
