    每天下午2点到5点之间,Saigon校门口的人行道上总会弥漫着同样的气味:那是从铝制破旧大锅中升腾而起的白胡椒与蟹汤香气。“Sup Cua”——一种用玉米淀粉勾芡,加入蟹肉和鹌鹑蛋,最后撒上香菜并猛撒黑胡椒的浓汤,是这座城市不成文的放学仪式,而且价格极其亲民。

    如果你带着孩子,或者只是自己想来一碗,以下这些地方绝对值得一试。

    你吃到的究竟是什么?

    Sup Cua看似简单,实则讲究。汤底是清淡的蟹肉高汤,用玉米淀粉勾芡至丝滑、近乎晶莹的质地。蟹肉丝(好的摊位会用真蟹肉,而非鱼糜)和整颗煮鹌鹑蛋漂浮其中。上桌时,碗里会点缀新鲜香菜,淋上一丝芝麻油,再撒上足量的黑胡椒,让你的喉咙深处感到阵阵暖意。有些摊位还会配上“cha tom”(炸虾饼)或一块用来蘸汤的软式“Banh Mi”法棍。

    它对孩子来说足够清淡,对没吃午饭的大人来说也足够饱腹,价格在25,000至50,000 VND之间,具体取决于分量和地段。它没有什么精致的包装,但这正是它的魅力所在。

    Saigon去哪儿吃?

    Quan Sup Cua Co Lien — 第5郡

    这是第5郡当地人首推的一家。Co Lien在这条Nguyen Trai街(靠近Su Van Hanh路口)经营她的摊位,后来改成了店面,至今已有二十多年。这里的汤底比一般的更深,蟹味浓郁,回味带有一丝甜味,常客们推测是因为汤底里加了少许干虾仁。

    中碗30,000 VND,大碗40,000 VND。鹌鹑蛋被切成两半,蛋黄呈半凝固状——她是分开煮好后现点现加的。营业时间大约在下午2点到6点半,周日休息。塑料凳、无空调,店里总是挤满了穿着校服的学生。这正是你想要的氛围。

    Sup Cua Hang Xanh — 平盛郡 (Binh Thanh District)

    在靠近Hang Xanh环岛的Xo Viet Nghe Tinh街上,这个街角摊位是往返于第1郡和平盛郡的人们的固定补给站。这里的汤比第5郡的版本更稀、甜味更淡——更接近清汤,勾芡较轻——而且蟹肉给得非常大方。

    他们还提供“bap xao”(黄油炒玉米配虾米),对于胃口较大的孩子来说,这是个不错的“双重小吃”组合。Sup Cua标准碗售价25,000 VND。工作日营业时间约为下午1点半至5点半,周末如果卖光了会提前收摊。

    Sup Cua 199 — 富润郡 (Phu Nhuan District)

    相比路边摊,位于Phan Xich Long街的199店面稍显讲究,店内有真正的桌椅和电风扇。汤品严格遵循经典配方——玉米淀粉勾芡、整颗鹌鹑蛋、大量香菜——但厨房加入了一丝“hat tieu xanh”(青胡椒)油,让胡椒的香气呈现出一种有趣的层次感。

    每碗35,000 VND起。他们从中午一直营业到晚上7点左右,是城中极少数能横跨午餐到放学后时段的Sup Cua店。Phan Xich Long本身就是一条不错的美食街,所以这里很适合作为富润郡下午觅食路线的一站。

    正在越南街头烧烤架上烹饪的鹌鹑蛋,是美食爱好者的最爱。

    几件值得知道的事

    Sup Cua是那种趁热吃才最美味的食物——汤放凉了会变稠,所以请立即享用。如果你的碗在拍照时放了五分钟,搅拌一下再喝。

    对于觉得黑胡椒太辣的孩子,大多数摊主如果你提前说明,他们会减少用量。说“it tieu”(少胡椒),他们就会为你调整。鹌鹑蛋对没吃过它的孩子来说普遍很受欢迎;如果蛋被先吃光了,别感到惊讶。

    由于以玉米淀粉为基础,Sup Cua天然属于低麸质,不过在小摊位上仍存在交叉污染的可能。如果你带的孩子有过敏史,配餐的Banh Mi法棍可能是更需要注意的因素。

    实用贴士

    文中列出的三家店均只收现金,且下午的营业时间较为灵活——为了保险起见,请在下午4点前到达,因为食材确实会卖光。以上价格截至2025年中期准确,但小摊位会根据季节调整。Sup Cua最好作为下午茶小吃,而非正餐,当然,没人会阻止你点两碗。
