    西湖有一道真正属于它的招牌美食:“Banh Tom Ho Tay”(西湖炸虾饼)。这种将虾和红薯丝裹在一起炸至酥脆的美味,至少从20世纪50年代起就出现在了西湖湖畔。制作配方很简单——米粉和姜黄调成的面糊,上面压上一整只淡水虾,再拌入橙色的红薯丝——但不同厨房做出来的味道却天差地别。油的新鲜度至关重要,虾的品质也是如此。以下是一份诚实的指南,告诉你去哪里吃、花多少钱,以及哪些地方可以直接路过。

    为什么西湖版本的炸虾饼如此独特

    你可以在河内的其他地方找到炸虾饼,但西湖风格有几个显著的标志:虾是带壳整只炸的(炸酥后可以直接连壳吃),红薯丝带来一种微妙的甜味,可以中和油腻感。炸虾饼通常搭配“bun”(细米粉)、青木瓜丝、香草,以及一碗略带甜味的鱼露蘸汁。整盘菜是在餐桌上组合而成的。一定要趁热吃——出锅后大约四分钟,口感就会变软。

    Banh Tom Co Am — 标杆之选

    地址: 1 Thanh Nien, Tay Ho 营业时间: 每天 09:00–22:00 价格: 每份 65,000–90,000 VND

    Co Am 自20世纪80年代起就坐落在 Thanh Nien 路,是当地人首推的店。这里的炸虾饼出餐很快,因为翻台率高,这意味着大部分时间油都是真正新鲜的。如果你在中午之前到达,可以要求坐在面对湖水的桌子;到了11:30,带顶棚的露台就会坐满。这里的蘸汁偏酸爽而非甜腻,与面糊的浓郁口感搭配得更好。跳过瓶装软饮,直接点柜台上保温瓶里的 tra da(冰茶)——这是免费的。

    Banh Tom 33 Hang Than — 当地人的捷径

    地址: 33 Hang Than, Ba Dinh 营业时间: 10:30–20:30,周一休息 价格: 55,000–75,000 VND

    Hang Than 不在湖边,但住在 Ba Dinh 区的常客会选择在这里吃,而不必去 Thanh Nien 挤交通。店面较小,没有景观,服务更快,每份价格便宜约 15,000 VND。虾稍微小一点,但面糊比例更好——每一口都能吃到更多的虾肉,而不是面粉。如果你已经在老城区,又不想为了吃个虾饼骑行3公里,这是一个不错的选择。

    Bun Oc — Tran Vu 路的炸虾饼组合店

    地址: Tran Vu 街,靠近 Truc Bach 湖的多家摊位 营业时间: 07:00–13:00(仅限上午) 价格: 40,000–55,000 VND

    沿着 Truc Bach 湖延伸的 Tran Vu 路有一群非正式摊位,它们将炸虾饼作为早餐或上午的小吃,搭配“bun oc”(螺蛳粉)一起供应。这些不是专门的打卡点,但如果你一大早就在这附近闲逛——值得注意的是,这里的炸虾饼更小、更酥脆,且分批炸制。虽然不够上镜,但味道更地道。

    Quan Banh Tom Phuong Loan

    地址: 5B Thanh Nien, Tay Ho 营业时间: 10:00–21:30 价格: 70,000–95,000 VND

    距离 Co Am 只有几步之遥,Phuong Loan 是那些在隔壁没抢到座位的团体的选择。炸虾饼做得中规中矩——面糊调味不错,虾也还可以——但蘸汁明显更甜,米粉分量也更少。作为应急选择还可以。楼上的露台比 Co Am 的一楼拥有更好的湖景,这是它最大的卖点。

    Xuan Dieu 夜市摊位的炸虾饼

    地址: Xuan Dieu 路,Tay Ho(在 Dang Thai Mai 路口和湖滨路之间) 营业时间: 18:00–23:00 价格: 45,000–60,000 VND

    晚上,Xuan Dieu 路沿线会出现一些移动炸锅摊位,专门面向在湖边散步的外国游客和当地人。质量不稳定——有时油显然从午餐时间就没换过——但在状态好的夜晚,这是最便宜、最有氛围的选择,坐着塑料凳,没有任何矫揉造作。点餐前确认一下油看起来清澈即可。

    避雷指南

    Thanh Nien 和 Quan Thanh 路口附近那家大型湖畔餐厅——就是那种挂着全英文招牌、门外立着带照片菜单的店——最好避开。炸虾饼是提前炸好再加热的,价格高达每份 120,000–140,000 VND,鱼露蘸汁有一种奇怪的甜味,像是瓶装调料。它专门坑那些刚走过 Long Bien Bridge 路线的游客。再往前走200米吧。

    搭配建议

    如果你是结伴出行,想在等待炸虾饼时吃点别的,Thanh Nien 大多数店也提供还不错的“cha gio”(炸春卷)。在这条街上找越南咖啡比你想象的要难——大多数店只卖茶和软饮。如果你之后想喝一杯正宗的“ca phe sua da(越南冰咖啡)”,建议回到老城区或 Xuan Dieu 咖啡街。

    交通指南

    Thanh Nien 路位于西湖和 Truc Bach 湖之间的狭长地带,距离还剑湖以北约3公里。从老城区打 Grab 大约需要10–15分钟,费用为 35,000–50,000 VND。大多数餐厅门前提供摩托车停车位,费用为 5,000–10,000 VND。

    实用贴士

    炸虾饼在11:00到14:00之间口感最佳,此时的高翻台率能保证油质清澈。周末中午左右,Thanh Nien 路会有大量人潮——请在11:30之前或14:00之后到达,以避免排队。大多数店铺只收现金;请准备好零钱。
