    什么是“banh ba mac”?

    Ha Giang 的版本有何不同

    在红河三角洲和 Hanoi 中心,“banh ba mac”往往更厚重,更像面包。它通常全天都有售。而在 Ha Giang (하장 / 河江 / ハーザン),山区气候和当地对食材的偏好(多用木薯粉,少用粘米粉)制作出的饼更接近于酥脆的油饼。馅料也更简单——较少有甜味或甜咸口味的变化。Ha Giang 的版本坚持咸鲜和辛辣口味。

    此外,Ha Giang 的摊贩很少使用 Hanoi (하노이 / 河内 / ハノイ) 版本中常见的浓稠“nuoc cham”(蘸酱)。这里的酱汁更稀,醋味更重,甜度更低。

    如何点餐

    大多数摊贩不会说英语。你可以指着馅料选项,或者说“mot cai”(一个饼)或“hai cai”(两个饼)。如果你想多加点辣,可以说“co cay”(辣)。“Khong cay”表示不辣。你可以要求把酱汁分开放,或者直接拌在饼里(这种情况很少见,但也是可以的)。

    请使用现金支付。这些手推车都不接受刷卡或移动支付。

    永远是早上。“Banh ba mac”是一种早餐和早午餐食品。面糊在早上 6 点到 9 点左右最新鲜。上午 10 点以后,大多数摊贩都会收摊,而那些还在营业的摊贩要么卖的是昨天的存货,要么饼已经凉了。

    如果你在下午抵达 Ha Giang,就别指望能找到它了。计划好在那里的第一个早晨去这些地方中的一个打卡吧。
