    什么是“bun mam nem”?

    “Bun mam nem”是一碗铺满烤鱼饼、猪皮丝和新鲜蔬菜的软糯米粉,浇上用发酵鱼露熬制的汤底——味道极其鲜美,带着一种让初尝者猝不及防的独特发酵气味。它并非人见人爱,但一旦你接受了这个味道,就会对它欲罢不能。Da Nang 是这道菜最后的重镇之一;在越南中部以外,你很难找到做得地道的。

    它的名字本身就说明了一切:“mam”是发酵鱼酱,而“nem”指的是烤鱼饼。汤底是这道菜的灵魂——由鱼露、大蒜和虾酱熬煮浓缩而成,有时还会加一点青柠和糖。当地人会对正确的配比争论不休;大多数人认为,好的汤底应该能包裹住你的味蕾,余味悠长。

    Da Nang 的与众不同之处

    当地人去哪儿吃

    Bun Mam Nem Nhat — Hang Luoc 坊

    这是这道菜的标杆。Bun Mam Nem Nhat 位于老市场附近的一条狭窄小巷里,自 1990 年代初以来一直由同一个家族经营。汤底每天早上用凌晨 4 点买来的鲜鱼新鲜熬制;你能真切地品尝出这份新鲜。一碗价格为 35,000–40,000 VND,只供应到上午 10:30——之后汤底就卖光了。如果你想不排队就有座位,请在早上 7 点前到达。如果你用越南语礼貌真诚地提出请求,老板娘 Linh 女士会给你多加一勺汤。

    Bun Mam Nem Hoa — Hai Chau 郡

    游客比 Nhat 少,但汤底可以说是更胜一筹。老板的虾酱全部来自 Phan Rang 的一家独家供应商,绝不偷工减料。标准碗的价格是 40,000 VND。营业时间仅为早上 5:30 到 9:30。当地人从早上 6 点就开始排队,周末尤其如此。鱼饼是现点现烤的,所以需要等上 5 分钟——这可是个好兆头。

    Ngu Hanh Son 市场的 Bun Mam(五行山脚下)

    市场里有三个 bun mam 摊位;西北角的那个(找蓝色塑料凳子)是当地人极力推荐的。店面没有名字,只有一块手绘招牌。价格是 30,000–35,000 VND。营业时间为早上 6 点到 9 点。从最不加修饰的意义上来说,这是最“正宗”的一家——塑料碗、公用饮水机、完全不通英语——但汤底纯净且层次丰富。摊主是一位 70 多岁的老奶奶,已经在这里摆摊 35 年以上了。

    Bun Mam Nem An Hai — 靠近 Tran Phu 市场

    如果你住在中心海滩区或 Han 市场附近,可以步行前往这个摊位。价格稍贵,为 45,000 VND,但汤底带有一丝螃蟹的鲜味,一些当地人对此赞不绝口。营业时间为早上 5:30 到上午 11 点。他们接待的游客比其他店多,所以用英语点餐不会觉得尴尬,尽管老板只会说极少的英语。这里的烤鱼饼特别嫩。

    Con 市场的 Bun Mam(Bach Dang 坊)

    这是最不讲究环境的选择,也是最便宜的,只需 28,000 VND。这里是建筑工人和骑行者就餐的地方。汤底的味道比其他家更浓烈——有人说稍微有些冲,但如果你想品尝 Da Nang 最原汁原味的 bun mam,来这里就对了。营业时间为早上 5:30 到 8:30。没有游客。请带上现金;他们不接受刷卡。

    如何点餐

    只需说“một bun mam nem”(一碗 bun mam nem)或者指着别人的碗就行。如果你想多加点汤,可以说“them nuoc”(多加汤)。有些摊位会问你是否需要配菜——通常是空心菜、香草把或黄瓜——回答“co”(要)或“khong”(不要)。大多数面条都会附带一小碟辣椒和青柠;你可以根据自己的口味随意添加。

    如果汤底味道太重,可以挤些青柠汁在上面,然后慢慢品尝。如果你和当地人一起吃,他们很可能会用米饭来收尾(要白米饭可以说“com trang”)——将剩下的汤底与米饭混合,像吃浓粥一样吃掉。这是很地道的吃法。

    什么时候去

    Bun mam nem 是一道适合早餐和早午餐的美食。在早上 6 点到 9 点之间去,能品尝到最棒的汤底,当然人也最多。到了上午 10 点,大多数摊位要么已经关门,要么供应的是昨天的汤底。如果你习惯晚起,最好的选择是 Bun Mam Nem An Hai 或 Bun Mam Nem Hoa,它们会营业到上午 9:30 或 11 点,但即便如此,早高峰过后的品质也会有所下降。

    别指望在 Da Nang 的午餐或晚餐时间能找到 bun mam nem——它绝对是一道晨间美食。少数摊位可能会在午餐时供应,但汤底会变淡,鱼饼也不够新鲜。

    请携带小额现金(VND);只有 Bun Mam Nem An Hai 稳定接受刷卡。大多数摊位都位于狭窄的小巷或市场内——请使用谷歌地图或向酒店询问摊位名称的路线。它的气味令人难忘且两极分化;如果你原则上讨厌发酵鱼露,这道菜也无法改变你的想法。如果你不确定自己是否喜欢,可以先去市场摊位尝试(试错成本最低,也最便宜),然后再决定是否要去专门的店里坐下来好好吃一顿。
