    是什么让Hanoi的bun cha与众不同

    Bun Cha Hang Manh(老城区)

    Loc Bun Cha Hang Manh坐落于Hang Manh和Hang Dieu交汇处的一个狭窄角落,挤在一个仅比门框稍宽的空间里。没有招牌。只有当地人和炭火的香气。一碗带猪肉和汤汁的米粉价格为35,000–40,000 VND。这里没有菜单。你可以通过指点或不断重复“bun cha”来点餐,直到有人点头示意。

    Bun Cha O Tong(Cau Giay区)

    Bun Cha O Tong不在老城区。向南步行20分钟或乘坐短途出租车即可到达Cau Giay。店面很不起眼,隐藏在Dien Bien Phu路旁的一条小巷里。这里是Hanoi(하노이 / 河内 / ハノイ)上班族吃午饭的地方,而不是游客的打卡地。

    这里的猪肉偏甜——不腻,但烤制时焦糖味更明显。“cha”(肉丸)质地细腻,几乎像慕斯一样。一碗价格在40,000–45,000 VND之间。点一份“bun cha tui go”以获得完整体验(配有额外的烤猪肉和汤汁,供混合食用)。他们还供应配菜“banh cuon”(猪肉鲜虾卷),酥脆轻盈。

    Bun Cha De(Hoan Kiem湖附近)

    这家店只供应早餐和午餐(早上6点至下午1点)。请尽早前往。到了下午12:30,他们的新鲜猪肉就快卖光了。

    Bun Cha Huong Lien(对游客友好,但味道地道)

    位于Dinh Liet街的Bun Cha Huong Lien是最出名的一家,部分原因是2016年美国总统Barack Obama和电视主持人Anthony Bourdain曾在这里共进晚餐。它已成为游客的打卡地标。但它的味道确实很好,午餐时间依然有很多当地人光顾。

    这里一碗的价格为50,000–60,000 VND(由于外国人的关注和地理位置,价格比其他地方高)。猪肉品质稳定,汤汁正宗,而且因为员工经常接待游客,服务速度更快。你可以用英语点餐,省去了靠手语猜测的麻烦。

    如果你想吃一顿有故事可讲的饭,并且想要个舒适的座位,那就去吧。尽量避开晚餐——到了下午5点,这里就全是游客了。午餐时间(上午11点至下午2点)则是当地人和游客混杂。这里依然值得一试,特别是如果你第一次品尝这道菜。

    如何点餐以及有哪些期待

    走上前说“Mot bun cha”(来一份bun cha)。如果他们问“Lon hay nho?”(大份还是小份),请回答“Lon”来点大份。

    你会得到:一碗新鲜的米粉,一盘烤猪肉(肉丸、肉条,可能还有五花肉),一小碟汤汁,腌菜和香草(薄荷、香菜、莳萝)。有些地方还会加上一份“nem chua”或“cha gio”(炸春卷)。

    在碗里将米粉和汤汁混合。加入猪肉。边吃边蘸香草。你需要自己搭配每一口的食材。这绝不是一股脑儿拌在一起吃的东西。这就是为什么每一桌的bun cha吃起来味道都不同——加多少汤汁、多少香草,以及你如何搭配,都会改变整个用餐体验。

    水是免费的。冰茶(“nuoc chanh”)可供选择,价格在5,000–10,000 VND左右。店里备有软饮料,但这并不传统。

    时间与季节

    Bun cha全年皆可食用,但当地人更喜欢在温暖的月份(5月至9月)享用。猪肉是在露天炭火上烤制的,因此餐馆往往设在室外或半室外,这在冬天就不那么惬意了。

    在这里,把它当早餐(早上6点至9点)是很正常的——有些地方开门很早。午餐(上午11点至下午1:30)是高峰期。晚餐情况各异。有些店在午餐后就关门了。其他店在下午5点重新营业,但烤猪肉的质量会有所下降,因为他们使用的是当天的第二批或第三批肉。如果你想品尝最正宗的味道,请在午餐时间前往。

    雨季(5月至8月)可能会使炭烤味稍微变淡,因为烟雾无法像平时那样萦绕。但由于需求量大,猪肉会更新鲜。这是一种权衡。

    成本与性价比

    在Hanoi,正宗的bun cha每碗价格在35,000–60,000 VND之间,具体取决于地点和包含的配菜。大约相当于1.50–2.50美元。游客常去的餐馆(如Huong Lien)价格较高。老城区的苍蝇馆子价格较低。买一瓶软饮料大概也需要花费差不多的钱。单人一顿饭的总花费:40,000–70,000 VND。

    这是便宜且地道的美食。没有推销。你不是在为环境或服务买单——你是在为猪肉和烤肉师傅的手艺买单。

    实用提示

    当地人在午餐时吃bun cha,而不是晚餐,更不会把它当成宵夜。在上午11:30至下午1点去,你会看到家庭聚餐、建筑工人和上班族。如果在晚上7点去,你可能只会看到游客或者空荡荡的店面。许多地方只收现金;请带上零钱。如果你正在计划一次Hanoi美食之旅,bun cha应该作为早晨或午餐的重头戏,而不是与晚餐计划相冲突。
